  • Preheat the oven to 375°F and line the bottom of a 9.5 x 4 inch angel food cake pan with parchment paper.* Do not grease the pan.
  • Sift the almond flour into a medium mixing bowl. Discard any remaining almond flour in the sieve—do not push it through. Then sift in the coconut flour, Keto Chow and confectioner’s erythritol. (You can push these through the sieve if needed.)
  • Using a stand mixer with the whisk attachment, add the egg whites, extracts, and cream of tartar.  Whip on high speed to soft peaks. Leave the mixer running and add in the granulated erythritol a little at a time, waiting 30 seconds after each addition. Whip to stiff peaks.
  • Carefully fold in half of the flour mixture, then add the second half. Fold and stir until fully incorporated.
  • Gently spread into the prepared pan and bake for 40-45 minutes, until golden brown on top.
  • Remove from the oven and turn upside down to cool.
  • Once the cake has completely cooled, run a butter knife around the edges to remove it from the pan and then turn over onto a plate.
  • Serve with whipped cream and berries!

Notes

*A little cheat to do this easily is to cut out a circle and then fold it in half and cut a smaller circle.

Ingredients

  • Preheat oven to 325
  • Butter a small (about 6 ounce) oven proof ramekin or bowl
  • In a small bowl mix the peanut butter, unsalted butter, and confectioner’s sweetener together and set aside
  • In another bowl beat the egg, then mix in the melted butter, and vanilla extract
  • Add the keto chow, sweetener, cocoa powder and baking powder
  • Mix everything together until you have a smooth batter
  • Place about two-thirds of the batter in your prepared ramekin then put the peanut butter mixture in the center of the batter and press it down lightly. Push the square of chocolate chips into the center of the peanut butter.
  • Pour the rest of the batter over the peanut butter and smooth over so that the top is even and the peanut butter is completely covered.
  • Bake in the preheated oven for 20 minutes. The cake should be firm and slightly risen around the edges but still slightly soft in the center.
  • Allow the cake to cool for about five minutes. Gently pull it away from the edges of the ramekin. Top the ramekin with a small plate and turn it over gently shaking it if necessary, to release the cake.
  • Garnish with a sprinkle of confectioner’s sweetener and whipped cream if desired.

Ingredients

  • 1 1/2 cups water, divided
  • 1 1/2 cups unsweetened coconut or almond milk, divided
  • 3 Tbsp. avocado oil, divided
  • 1 serving Orange Cream Keto Chow
  • 1 serving Raspberry Cheesecake Keto Chow
  • 1 serving Key Lime Pie Keto Chow OR Lemon Meringue Keto Chow
  • 1-2 drops orange, green, and red food coloring optional

Instructions

  • Blend 1/2 cup of the water, 1/2 cup of the coconut milk, 1 Tbsp. of the avocado with the serving of Orange Cream Keto Chow until fully mixed and starting to thicken. (A mason jar works well for this.)
  • Repeat the process in two more jars with the Raspberry Cheesecake and Key Lime Keto Chow using 1/2 cup water, 1/2 cup coconut milk, and 1 Tbsp. avocado oil with each flavor. Add a drop or two of food coloring to each flavor for brighter colors, if desired.
  • When all the flavors are prepared, choose the order that you would like your popsicles to be in.
  • Carefully fill the popsicle molds one third of the way with each flavor.
  • Place the sticks in the filled molds and cover.
  • Freeze at least four hours until the popsicles are fully frozen.
  • If the popsicles are hard to remove from the molds, run hot water over the molds just until the popsicles loosen. Store in the freezer for up to three months.

Ingredients

  • 1/2 cup unsalted butter at room temperature
  • 1/2 cup powdered erythritol (2.5 oz)
  • 1/2 tsp. almond extract
  • 1/4 tsp. fine sea salt
  • 1 serving Orange Cream Keto Chow
  • 1/2 cup fine almond flour (2 oz)
  • 1/4 cup sliced almonds

Instructions

  • In a large mixing bowl, beat together the butter, powdered erythritol, almond extract, and salt with an electric mixer until light and fluffy.
  • Add the Keto Chow and almond flour to the bowl and beat on low speed until fully combined.
  • Stir in the sliced almonds with a spoon or spatula.
  • Turn the dough out onto a piece of parchment paper or plastic wrap and shape it into a rectangular log, about 8 inches by 2 inches by 1.5 inches.
  • Wrap the dough tightly and place in the freezer to chill for about 15 minutes, or until it is firm enough to slice.
  • While the cookies chill, preheat the oven to 325℉ and line a 12 X 17 baking tray with parchment paper.
  • Remove the cookie dough from the freezer and slice it into sixteen 1/2-inch-thick cookies.
  • Place the cookies on the tray, leaving space between each cookie as they will spread slightly as they bake.
  • Bake cookies on a rack set to the center of the preheated oven for about 12-15 minutes, or until golden brown around the edges and lightly golden on the top.
  • Allow cookies to cool before moving them from the tray. They will crumble if moved too soon but will become firm as they cool.
  • Store cookies in an airtight container in a cool, dry place for up to three days or in the freezer for up to three months.

  • 1 cup water
  • 1/4 cup Soy Sauce or coconut aminos
  • 2 Tbsp. rice vinegar
  • 1 Tbsp. lemon juice
  • 1 tsp. minced garlic
  • 1/2 tsp. red pepper flakes

Instructions

  • Measure all ingredients into a large lidded jar or a blender bottle.

Ingredients

  • 1 inch piece fresh ginger root
  • 1 inch piece fresh turmeric*
  • 13.5 oz canned coconut cream, chilled
  • 1 serving Orange Mango Keto Chow

Instructions

  • Grate the ginger root and turmeric onto a small plate or dish. Gather the grated roots together in a small piece of cheesecloth or a clean kitchen towel that has been dampened and squeeze as much juice as possible into a large mixing bowl.
  • Add the coconut cream to the ginger and turmeric juice and mix.
  • Add the Keto Chow to the bowl and whip with a whisk or electric mixer until well-mixed, light, and creamy.
  • Cover the mousse and chill in the refrigerator for at least 20 minutes for best flavor.
  • Store in an airtight container in the refrigerator for up to five days.

Notes

*Take care when handling the fresh turmeric; it will stain any cloth or porous surface it touches, including hands and fingernails.

  • 1/2 cup heavy whipping cream
  • 1 cup sugar-free milk chocolate chips

MARSHMALLOW FLUFF

Instructions

  • Preheat oven to 350°F and line an 8x8 pan with greased parchment paper, leaving extra hanging over the side to act as handles later.
  • To make the cookies, melt butter and add the brown erythritol, baking soda, cinnamon, and Keto Chow. Stir well.
  • Smooth the mixture into the prepared pan and bake for 10-15 minutes, or until golden brown.
  • To make the ganache, heat the heavy cream for one minute in the microwave. Add the chocolate chips and let sit for one minute and then stir until thick, smooth, and creamy.
  • Once the cookies have cooled for five minutes, spread the ganache evenly on top and let set in the refrigerator for 30 minutes.
  • While the ganache is setting, make the marshmallow fluff. Whip the egg whites, cream of tartar, and vanilla on high speed with a mixer until stiff peaks form. Continue to whip the mixture, adding in 1/3 of the allulose at a time, waiting 30 seconds between each addition. After all allulose has been added, whip for another couple of minutes.
  • Top the s’mores with the marshmallow fluff once the ganache has cooled. Broil for one minute in the oven. It browns fast so watch it closely!
  • Refrigerate for at least another 30 minutes before serving.

Ingredients

  • 2 large eggs
  • 1/2 cup butter, melted
  • 1/4 cup erythritol
  • 2 Tbsp. brown sugar style sweetener
  • 1 Tbsp. cocoa powder
  • 1 serving S'mores Keto Chow
  • 20 drops Graham cracker flavoring (optional)
  • 2 Tbsp. chocolate chips
  • 20 grams keto marshmallows

Instructions

  • Preheat oven to 350℉ and line an 8”x8” pan with parchment paper.
  • Blend everything together in a food processor except the chocolate chips and marshmallows.
  • Place mixture in your prepared pan. Batter will be thick. Spread evenly with a spoon. Bake for 15 minutes.
  • Add the chocolate chips and marshmallows to the top and bake for another 5 minutes. Let cool before serving.

Ingredients

  • 4 oz butter melted
  • 2 oz coconut oil melted
  • 1 Tbsp heavy whipping cream
  • 2 Tbsp powdered sweetener
  • 1 serving Vanilla Keto Chow (or any flavor of your choice)
  • 1/4 tsp complimentary extract of your choice optional

Instructions

  • Melt the butter and coconut oil, then stir in the cream, powdered sweetener, Keto Chow, and extract if using. Stir until the salt has dissolved or let site 5 minute then stir.
  • Pour into silicone candy molds or ice cube trays. Chill in the freezer until set, then pop them out of the molds.
  • Store in an airtight container in the refrigerator for up to two weeks, or in the freezer for up to the three months.
