Ingredients

MEATBALLS

  • 10 oz. 85/15 ground beef
  • 10 oz. pork sausage
  • 1 Tbsp. coconut aminos
  • 1 egg
  • 1/4 cup grated Parmesan
  • 1 tsp. granulated garlic
  • 1 tsp. granulated onion
  • 1/2 tsp. salt
  • 1 tsp. dried chives

GRAVY

  • 4 Tbsp. unsalted butter
  • 1 tsp. minced garlic
  • 1 cup water
  • 1 cup heavy cream
  • 1 serving Beef Soup Base Keto Chow
  • 1/4 cup grated Parmesan

Instructions

  • Preheat oven to 400°F.
  • In a large bowl, add together beef, pork, coconut aminos, Parmesan, egg, and seasonings. Mix together—your hands work best for this!
  • Take 1.5 Tbsp. of the meat mixture at a time, shape into balls and place on a cookie sheet.
  • Bake for 10 minutes.
  • While meatballs are baking, melt butter in a large skillet over medium heat.
  • Add garlic and stir until garlic is browned.
  • Add water and heavy cream and heat over medium-high heat until boiling, stirring occasionally.
  • While whisking, slowly sprinkle in the Keto Chow. Continue whisking for a couple of minutes until the Keto Chow dissolves and the mixture thickens.
  • Add Parmesan and whisk until sauce has thickened to desired consistency.
  • Reduce heat to low. Add the meatballs and let them simmer in the sauce for about 5-10 minutes, or until fully cooked.
  • Serve over your favorite low carb mash or noodle.

Ingredients

  • 1/2 cup unsalted softened butter
  • 1/3 cup brown erythritol
  • 2 large eggs
  • 1 tsp banana extract or flavoring
  • 1 serving Banana Keto Chow
  • 1/3 cup fine almond flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 cup unsweetened coconut flakes (chopped smaller like oatmeal)
  • 1/2 cup Sugar free chocolate chips (optional)

Instructions

  • Preheat oven to 350° and grease cookie sheet
  • With the mixer on low speed, cream the butter. Add the sweetener, extract and the eggs one at a time and mix well.
  • Add Keto Chow, almond flour, baking powder, cinnamon and mix well.
  • Add chopped coconut flakes and mix again.
  • Add chocolate chips if desired.
  • Scoop an inch apart onto a greased cookie sheet and bake on 350° for 15 minutes.

Notes

*Ingredients must be room temperature to make them fluffier.
KETO CHOW NOTES: This made 16 cookies with a #40 cookie scoop

Ingredients

FILLING

  • 4 oz. softened cream cheese
  • 1/4 cup sugar-free peach or apricot jam + 1 Tbsp. for drizzling

Instructions

  • Preheat oven to 350℉ and line an 8x8 baking pan with parchment paper, letting some excess hang over the sides for easy removal.
  • In a food processor, combine the almond flour, baking soda, Keto Chow, and sweetener. Add in the butter and cold cream cheese. Pulse a few times until a large “crumb” forms.
  • Pour the top half of the mixture into a bowl and set aside. Press the other half of the mixture into the prepared pan.
  • Blend together the softened cream cheese and 1/4 cup of the jam. Spread into the pan on top of the crust.
  • Heat the remaining jam until liquid (about 10 seconds in the microwave) and drizzle over the cream cheese mixture.
  • Add the reserved crumb on top. Bake for 35-40 minutes.
  • Let cool completely before removing parchment and cutting into squares.

  • Add water, allulose and Guava Grapefruit Keto Chow to medium saucepan over medium-high heat, whisking occasionally.
  • Once the mixture is boiling, you may reduce heat slightly, but stir more frequently and keep a close eye on it so it doesn’t boil over. Continue boiling for 15 minutes while stirring frequently.
  • While whisking, add in the gelatin and stir for another minute. Remove from heat.
  • In an empty sink, pour the hot mixture through a fine mesh strainer into a glass jar and refrigerate for at least six hours.

Instructions

  • 1/2 cup heavy whipping cream
  • 1 cup sugar-free milk chocolate chips

MARSHMALLOW FLUFF

Instructions

  • Preheat oven to 350°F and line an 8x8 pan with greased parchment paper, leaving extra hanging over the side to act as handles later.
  • To make the cookies, melt butter and add the brown erythritol, baking soda, cinnamon, and Keto Chow. Stir well.
  • Smooth the mixture into the prepared pan and bake for 10-15 minutes, or until golden brown.
  • To make the ganache, heat the heavy cream for one minute in the microwave. Add the chocolate chips and let sit for one minute and then stir until thick, smooth, and creamy.
  • Once the cookies have cooled for five minutes, spread the ganache evenly on top and let set in the refrigerator for 30 minutes.
  • While the ganache is setting, make the marshmallow fluff. Whip the egg whites, cream of tartar, and vanilla on high speed with a mixer until stiff peaks form. Continue to whip the mixture, adding in 1/3 of the allulose at a time, waiting 30 seconds between each addition. After all allulose has been added, whip for another couple of minutes.
  • Top the s’mores with the marshmallow fluff once the ganache has cooled. Broil for one minute in the oven. It browns fast so watch it closely!
  • Refrigerate for at least another 30 minutes before serving.

  • Blend everything together in a food processor except the chocolate chips and marshmallows.
  • Place mixture in your prepared pan. Batter will be thick. Spread evenly with a spoon. Bake for 15 minutes.
  • Add the chocolate chips and marshmallows to the top and bake for another 5 minutes. Let cool before serving.

  • Preheat oven to 350℉. Liberally grease a Bundt pan all over.
  • Over a large bowl, sift together the coconut flour, almond flour, Keto Chow, and baking powder and set aside. There may be a little almond flour that won’t sift; you can discard it.
  • Cream the butter on low speed. Once smooth, add the erythritol and mix on low until well combined.
  • Add the coconut milk very slowly so it doesn’t splash over the bowl. Mix thoroughly.
  • Add the eggs to the coconut milk mixture and mix on low.
  • Add the sifted coconut flour mixture to the wet ingredients and mix on low to medium speed until smooth.
  • Add the batter to the greased Bundt pan. Smooth the top with a spoon and bake for 50-55 minutes.
  • Let cool for 10 minutes. Use your fingers to gently push the cake away from the sides of the pan. Unmold it by flipping it carefully onto your serving plate.
  • Sprinkle with unsweetened shredded coconut.

Chocolate Cookie Truffles

A creamy filling and a crisp chocolate coating make these truffles a little bite of heaven.

Ingredients

Instructions

  • Line a cookie or baking sheet with wax paper.
  • Mix together all ingredients except for the chocolate chips until smooth and creamy.
  • Roll the mixture into Tbsp.-sized balls. Place in the freezer.
  • Melt chocolate chips in 15-second increments in the microwave, stirring in between each interval. It's easiest to melt 1/2 cup of them at a time and it usually only takes 45 seconds.
  • Remove the truffle balls from the freezer and dip each one in the melted chocolate, rolling until coated and place back on the wax paper. You can add sugar-free sprinkles on top of the wet chocolate if desired. Place in the fridge to set for at least 20 minutes. Enjoy! Then be sure to refrigerate any leftovers.

Ingredients

Cookie Bar Ingredients

Toffee Ingredients

  • 1/4 cup unsalted butter
  • 1/2 cup heavy whipping cream
  • 1/4 cup allulose

Chocolate Ganache Ingredients

  • 1/4 cup heavy whipping cream
  • 1/3 cup semi sweet sugar free chocolate chips or chopped chocolate

Instructions

Cookie Bar Instructions

  • Preheat oven to 350°F
  • Line an 8x8 pan or baking dish with parchment paper and grease liner.
  • Add the butter, allulose, eggs, almond flour and Keto Chow to a food processor and pulse until combined. Stop and scrape the sides and pulse again.
  • Spread batter into greased, lined 8x8 and bake on 350°F for 15 minutes.
  • While the cookie bar bakes, use a medium sized sauce pan over medium heat to make the toffee.

Toffee Instructions

  • Add the ¼ cup butter to a medium sauce pan over medium heat. Melt the butter and continue cooking it until it starts to turn brown and fragrant, about 5 minutes.
  • Once the butter is brown add in the heavy cream and allulose.
  • Continue to boil over medium heat for another 5 minutes stirring occasionally. Turn off heat and set aside until cookie is baked.
  • Evenly spread the toffee over the baked cookie bar and refrigerate an hour to set toffee.

Chocolate Ganache Instructions

  • Heat the heavy cream until it’s hot. This takes about 40 seconds in the microwave.
  • Add the chocolate and cream together let it sit for 1 minute and then stir with a fork until the chocolate has melted and it is thick and creamy. It will be chunky and broken at first but just keep stirring!
  • After a couple of minutes of stirring if the chocolate isn’t melting, you can add to microwave for another 10 seconds and stir again.
  • Spread chocolate ganache over the top of the toffee cookie bar and let set in fridge another 30 minutes.
  • Slice and serve!
