Instructions

  • Preheat oven to 235 degrees.
  • Season each side of roast liberally with salt about 1 tsp each side and pepper 1/2 tsp each side, use 1 tsp minced garlic for each side and crush it into the meat with a spoon.
  • In a heavy-bottomed pot or skillet, heat oil over medium-high heat. Once oil and pan are hot, add the beef to pan and sear for a few minutes on each side until it’s nice and brown.
  • While the beef is searing prepare the butter, water, and Keto Chow by mixing together with a blender. (My preference is an immersion blender. )
  • Add tomato basil soup to the pan with the beef once both sides have been browned.
  • Cover and put in the oven for three hours.

  • While brownies are baking, melt butter over medium high heat.
  • Once boiling stir frequently until it turns amber to make brown butter.

  • Remove from the heat and add chocolate chips.
  • Stir until the chips melt completely.

  • Cool chocolate toffee sauce in the fridge for 5 to 10 minutes and then drizzle over brownies and let it set for about 30 minutes, you can refrigerate to set the toffee chocolate sauce faster if you wish.

  • 1 cup dry roasted salted peanuts
  • 1/4 cup Banana Keto Chow
  • 1 Tbsp erythritol or another sweetener like allulose
  • 2 Tbsp softened butter

  • Gather ingredients.

Notes

You may add more Keto Chow for more banana flavor, but I’m not sure how it will change the consistency. If you like things sweeter add a touch more erythritol. If you don’t like things salty, use unsalted peanuts and unsalted butter.

Cream Cheese Frosting

  • 1/2 cup heavy whipping cream
  • 4 oz softened cream cheese
  • 3 tablespoons powdered Swerve

Instructions

  • Preheat oven to 350℉. If making this as a cake, butter a 5-cup Bundt cake pan. If making cupcakes, line two muffin tins.
  • Blend the butter, sweeteners and eggs together. (An immersion blender works great for this.)

  • Add the Keto Chow, almond flour, baking powder, and cinnamon and blend.
  • Add carrots and blend again. Add batter to prepared pan or cupcake tins.

  • Bake until the cake bounces back when you touch it. In a 5-cup Bundt cake pan, this should take 30-35 minutes. In a muffin tin, it should take around 15 minutes.
  • Allow the cake or cupcakes to cool while you make the frosting. Whip together the cream, cream cheese, and powdered erythritol until thick and smooth.
  • Frost the cake or cupcakes and serve. Store in an airtight container in the refrigerator for up to three days.

Ingredients

Instructions

  • Cream coconut oil or butter with mixer.
  • Add erythritol and eggs and mix well.
  • Add baking powder and Keto Chow. Mix until well combined.
  • Roll dough into balls and drop into erythritol/cinnamon mixture and roll until covered.

  • Add to parchment paper and bake at 350 degrees for about 12-15 minutes.
