I’m gonna be real honest right now and let you know I HATE spending a ton of money on keto treats for myself but I have an insane sweet tooth. I’ve been wanting the banana peanut butter but I just can’t bring myself to spend over $10 on a jar. I decided to make my own and it did not disappoint!

Ingredients

  • 1 cup dry roasted salted peanuts
  • 1/4 cup Banana Keto Chow
  • 1 Tbsp erythritol or another sweetener like allulose
  • 2 Tbsp softened butter

Instructions

  • Gather ingredients.

  • Pulse peanuts on the highest setting for 45 seconds.

  • Add butter, erythritol and Keto Chow, and pulse until blended.

Notes

You may add more Keto Chow for more banana flavor, but I’m not sure how it will change the consistency. If you like things sweeter add a touch more erythritol. If you don’t like things salty, use unsalted peanuts and unsalted butter.

When it comes to keto foods using almond flour or coconut flour, my kids steer clear, won’t even try things at first glance. But this pizza right here doesn’t look keto at all, and she actually wanted to try it. I was like SCORE! She kept coming back for more too! #momwin? Before I start rambling here’s the recipe.   • Combine all ingredients in a bowl, then spread out on a greased or parchment paper liner baking sheet.
  • Bake for 15-20 minutes.

Instructions

  • Preheat oven to 325 F and prepare a cookie sheet by lining with parchment paper or tin foil.
  • Whisk together the Keto Chow, almond flour, and baking powder in a small mixing bowl and set aside.
  • Place the butter in a large mixing bowl and beat with an electric mixer until it is light and fluffy.
  • Beat in the sweetener, lemon zest and lemon extract.
  • When the sweetener is completely mixed with the butter, add the egg and mix well.
  • Add the dry ingredient mixture and mix on low until everything is completely combined.
  • Scoop balls of dough that are about 0.5 oz. (about two tsp.) each onto the prepared cookie sheet.
  • Bake for 10-12 minutes, or until the cookies have puffed slightly and are just beginning to turn golden around the edges.
  • Cool them completely and store in an airtight container or use them to make low carb lemon snap banana pudding.

Toasted Macadamia Cinnamon Vanilla Keto Chow Cooler

Inspired by a traditional horchata, this drink features toasted macadamia nuts, vanilla bean, and cinnamon stick, in a cool, creamy beverage that will keep you refreshed all summer long. There are a couple of steps to this recipe, but it is easy to make, and it is well worth the effort. This recipe makes two servings to get the most out of your vanilla bean and cinnamon stick.

Ingredients

  • 2 ounces macadamia nuts or blanched almonds
  • 1 vanilla bean
  • 1 large cinnamon stick
  • 28 ounces water
  • 2 servings Vanilla Keto Chow (or 2 scoops)
  • 2-4 ounces heavy cream optional

Instructions

  • Spread the macadamia nuts on an ungreased cookie sheet and bake at 325 for ten minutes or until they begin to turn a golden color and smell fragrant. Remove them from the oven and set aside to cool slightly.
    Toasted Macadamia Cinnamon Vanilla Cooler
  • Split the vanilla bean in half lengthwise with a sharp paring knife. Scrape out the seeds with the edge of the knife.
  • Place the toasted nuts, the vanilla bean and its seeds, and the cinnamon stick in a pitcher or large mason jar.
  • Bring the water to a simmer and carefully pour it over the nuts, vanilla bean and cinnamon stick.
  • Leave the water mixture out on a counter until it has cooled to room temperature.
  • When it has reached room temperature and is no longer hot to the touch stir in the Vanilla Keto Chow, cover the container and refrigerate the whole thing overnight.
  • When the mixture has been refrigerated overnight, remove the split vanilla bean and the cinnamon stick and blend the rest of the ingredients in a blender until the nuts are completely pureed and it looks smooth and creamy.
  • Strain the blended liquid through a very fine strainer set over a pitcher or large jar.
  • Using the back of a spoon or a rubber spatula push the liquid through the strainer until all that’s left in the strainer is the nut meal. You can line the strainer with a couple layers of cheesecloth if you have it.
  • Discard the nut meal or save it to use in keto baked goods or hot cereal.
  • Taste your strained cooler and add heavy cream if desired.
  • Serve well chilled, over ice.

Notes

Note: If you don’t have vanilla beans you can substitute a teaspoon of pure vanilla extract. Add the extract after the hot water has cooled.

Instructions

  • Mix snickerdoodle mixture ingredients together. An immersion blender works best for this.
  • In greased 8x8 or 9x9 pan, add the snickerdoodle mixture except for 1/4 cup.

Ingredients

  • 8 large eggs
  • 1/2 cup melted unsalted butter
  • 1 serving Keto Chow we recommend Chicken Soup Keto Chow for savory, and Eggnog Keto Chow for sweet

Instructions

  • Mix all ingredients with a blender. I use an immersion blender.
  • In a greased nonstick pan (around 10”) over medium heat, pour about 3 Tbsp of mixture into the middle and then pick up the pan and spread mixture to all sides. (See video.)

  • Let it cook until the edges start to lift a bit and it releases from pan when you use a spatula

Notes

Makes about 13-15 crepes. I would grease the pan every 3-4 crepes.
