Sesame Tea Cakes

Ingredients

Instructions

  • Preheat the oven to 350℉ and line two baking sheets with parchment paper.
  • Place the sesame seeds in a small pie plate or shallow bowl.
  • In a large mixing bowl, combine the almond flour, Keto Chow, baking powder, and sea salt.
  • In a separate bowl, whisk together the sesame tahini and sugar-free syrup. Mix in the egg.
  • Add the wet ingredients into the dry ingredients and mix well. The dough will be soft and slightly sticky.
  • Scoop about two Tbsp. of dough (a #40 ice cream scoop works perfectly) and roll it into a ball.
  • Roll the ball of dough in the sesame seed dish to coat it. Set it on the prepared baking sheet and flatten slightly with the bottom of a glass or the palm of your hand.
  • Continue with the rest of the dough, spacing the balls at least an inch apart on the cookie sheets.
  • Bake for ten minutes, or until they are slightly puffed and golden on the bottom. Transfer to a cooling rack. Store in an airtight container in the refrigerator for up to a week.

Notes

*Mix well before measuring if the oil has separated.

I was absolutely stunned upon receiving my order. I was surprised that the team (Heather) took the time to read the notes / my special requests and did what they could to accommodate. I really appreciated it. I’ve tried a few flavors now and they’ve all been not bad. I did not particularly like the natural strawberry flavor. I’ve tried mocha and chocolate so far and both are yummy. I like chocolate better actually. Additionally, I had to stop drinking keto chow after 4 drinks because it caused me to bloat. Delicious shakes!!

This sample bundle was great for tasting the different flavors, but be careful, next thing you know everyone in your family (including the kids) will be stealing your shakes. Two weeks in, and I am cleaning out cupboard space to store ridiculous quantities of keto chow.

Easy way to Keto

I can have two of these a day with 1/3 cup heavy whipping cream and a regular dinner and stay on track easily. Love the Salted Caramel mixed with 1/3 c. HWC and coffee. Great way to start the day. I usually have chocolate or chocolate peanut butter for lunch. I’ve ended up losing 15 lbs in my first two weeks of the Keto diet and ai think keto chow really helps.

No aftertaste

These are so good: no sweetener aftertaste, no graininess, mixes really well and quickly (gosh I hate it when things clump up, and these guys totally don’t), great texture (really important to me, because I have texture sensory issues with foods) and of course an amazing taste.   • Preheat the oven to 350 degrees.
  • In a food processor, pulse pecans and walnuts until they are still a little chunky.
  • Add erythritol, Keto Chow, and cinnamon and pulse again.
  • Take the blade out of the bowl and add in the rest of the ingredients and mix together with a fork.
  • Dump mixture onto a 9x13 pan or baking dish and mix together again with your hands. Press into the pan evenly. It helps to put wax paper over the top so it doesn’t stick to your hands.
  • Bake at 350 degrees for 20-25 minutes.
  • Let cool completely, it will harden more as it cools. Once it’s completely cooled, break it up with metal spatula or hands. If it’s still too soft after breaking up you can put it back in the oven for extra time. Remember not to bake it too long as it will crisp up more as it cools.

Snickerdoodle No-Bake Granola Bars

A delicious protein style granola bar that is easy to make. They are great to have on hand for quick, convenient meals, or snacks when you want something with a little crunch or just enough sweetness. They can be made completely nut-free by substituting seed butter for the almond butter and more seeds for the cashews. Once you’ve made them, you will want to experiment with different combinations of your favorite nuts, seeds and Keto Chow flavors.

Ingredients

  • 1/4 cup unsweetened, shredded coconut
  • 1/4 cup pumpkin seeds, chopped
  • 1/4 cup sunflower seeds, chopped
  • 1/4 cup cashews, chopped
  • 1/4 cup chia seeds
  • 1/2 cup unsweetened almond butter
  • 1/4 cup sugar-free syrup or honey substitute
  • 2 tablespoons coconut oil
  • 1 teaspoon vanilla extract
  • 1 serving Snickerdoodle Keto Chow (or 1 scoop)

Instructions

  • Line an 8x8 square pan with two pieces of plastic wrap long enough to hang over the edges of the pan by a few inches. Lay one piece in the pan, then lay the second piece in the opposite direction so you have plastic wrap hanging over all four edges. Oil lightly and set aside.
  • In a medium mixing bowl combine coconut, pumpkin seeds, sunflower seeds, cashews, and chia seeds. Set aside.
  • In a large microwave safe bowl, combine the almond butter, syrup, and coconut oil.
  • Microwave on high for one minute, then carefully stir until everything is fully mixed.
  • Mix in the vanilla extract and the Keto Chow, the mixture will thicken as you stir.
  • Pour the dry seed mixture into the warm nut butter mixture and stir until the nuts and seeds are distributed evenly and everything is mixed. If the mixture is cool enough you can knead it by hand.
  • Press the mixture firmly into the prepared pan, using the bottom of a glass to smooth it into an even layer if necessary.
  • Take the plastic wrap hanging over the edges of the pan and fold it over the mixture. You can press down on the plastic wrap to even the bars more.
  • Place the pan in the refrigerator to chill for at least two hours.
  • When the bars have set, remove them from the pan by lifting the plastic wrap. Transfer them to a cutting board and remove the plastic wrap.
  • Cut them across into six pieces, then cut those six pieces in half vertically, so you have 12 bars.
  • To store them lay them flat in an airtight container with parchment or wax paper between the layers to keep them from sticking together. Store in the fridge or the freezer.

Ingredients

  • 4 cups fresh blueberries 1 1/2 pints
  • 1/2 cup granulated brown-sugar style sweetener, divided
  • 1/8 teaspoon ground cinnamon
  • 1 teaspoon lemon juice
  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1 serving Snickerdoodle Keto Chow (or 1 scoop)
  • 1 teaspoon baking powder
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon salt
  • 2 large eggs
  • 1/4 cup sour cream
  • 1/4 cup melted butter

Instructions

  • Butter a 9” deep-dish, glass pie plate or oven safe skillet. Preheat oven to 350 degrees Fahrenheit.
  • Mix the blueberries, 1/4 cup of the sweetener, lemon juice, and cinnamon and pour into the prepared pie pan or skillet. Put the fruit in the preheated oven and bake 25 - 30 minutes until the blueberries are beginning to boil and bubble up around the edges of the pan.
  • While the blueberries are baking, mix the almond flour, coconut flour, Keto Chow, baking powder, cinnamon, nutmeg and salt and set aside.
  • In a separate bowl mix the eggs, sour cream, butter, and the remaining 1/4 cup sweetener.
  • When the blueberries are almost ready, mix the wet ingredients into the dry ingredients.
  • Carefully remove the pie pan from the oven and place dollops of the topping on the hot blueberry filling, like drop biscuits, starting from the center and working around. Gently smooth the tops so they are all the same height.
  • Return the pan to the oven. For best results, place the pie pan on a cookie tray to catch any spills if it boils over.
  • Bake for about 20 minutes more, until the topping is beginning to brown around the edges and springs back when touched in the center.
  • Remove cobbler from the oven and allow it to cool for at least 10 minutes.
  • Serve warm or at room temperature with whipped cream or a scoop of sugar-free, vanilla ice cream.

Ingredients

Instructions

  • Preheat oven to 350 F.
  • Line a cookie sheet with parchment paper or tin foil.
  • In the work bowl of the food processor, pulse the walnuts until they are coarsely ground.
  • Add the Keto Chow and pulse again until mixed.
  • Add the coconut oil and syrup and blend on low until it starts to form a dough.
  • Allow the dough to sit for 5 minutes to firm up and hold its shape.
  • Using a tablespoon divide the dough into 12 pieces. Roll each piece into a ball and place on the prepared cookie sheet.
  • Flatten the balls into rounds and make an indentation in the center of each one with your thumb.
  • Place ½ teaspoon of jam in each indentation.
  • Bake at 350 degrees for 15 minutes, or until they are beginning to brown on the bottom.
  • Allow to cool completely, store in an airtight container in the fridge for up to a week.

Notes

Each food processor will grind the walnuts to a different level of powder. The cookies still taste the same but may be a little harder to handle with not as smooth edges if the walnuts are not ground as small. 
I flattened the cookie dough balls with a cup bottom.
