Ingredients

Substitute for Sugar Free Jam

  • 1/4 cup water
  • 1/4 cup fruit
  • 1 tbsp granular sweetner
  • 1/2 tsp xanthan gum

Instructions

  • Preheat oven to 350 degrees.
  • In a small saucepan, add butter, water, sweetener, vanilla, and oatmeal flavor and start cooking on medium heat. Stir intermittently until it boils.
  • While that’s heating, in a separate bowl,  add together the keto chow, almond flour, and baking powder and mix together well with a fork making sure there are no clumps.
  • Once the butter sweet liquid mixture is boiling remove from heat and add in the dry mixture and stir together until well combined. It should form into a ball. Let cool for five minutes and then add the egg. Beat mixture until the egg is completely incorporated.
  • Add batter to a piping bag with a wide, flat tip. Add jelly to a piping bag.
  • Prepare 8x4 pan with parchment paper leaving flaps on two sides for easy removal. Pipe in half of batter in the bottom of the pan. Pipe in jam. Pipe in the rest of the batter on top. Bake on 350 for 25-30 minutes, until golden brown. Once cooled, slice into 5.

SUBSTITUE FOR SUGAR FREE JAM

  • Heat water, fruit and sweetener to boiling. Remove from heat and cook. Blend until smooth. You can strain seeds if desired. Add xanthan gum and blend again until thick.

Notes

Keto Chow used blackberries for the sugar free jam substitute. 
Instead of a bread pan, a silicone mini loaf pan was used, each slot lined with tin foil and then greased well. This will create a more cooked bottom. 
You can also line a bread pan with foil and grease that vs the parchment paper.

Ingredients

  • 2 large egg whites
  • 1/3 cup confections erythritol

Instructions

  • Preheat the oven to 300 degrees.
  • Using an electric/stand mixer, beat egg whites on high speed until stiff peaks. Add in erythritol a little at a time while still whipping
  • Spoon onto a cookie sheet lined with parchment paper and make a little indent in the middle of each one. Bake for 15 minutes.
  • Let cool, they will harden as they cool. Use a metal knife or spatula under each one to remove from paper, be careful they are fragile.
  • You can store these at room temperature with a towel over them until you are ready to add the custard.
  • Keep the custard refrigerated until you are ready to eat cookies and pipe custard into each meringue cookie. Can also top with whipped cream if desired. 

Notes

****any little bit of yolk will keep your whites from getting to stiff peaks so be careful separating eggs.

Instructions

The Cookies

  • Preheat oven to 350 degrees.
  • Cream together butter and sweetener.  Add egg and mix thoroughly.
  • Mix in the the black cocoa, baking powder, and Keto Chow, mixing very slow at first so as not to make a mess.
  • With a silicone spatula, scoop all the batter onto parchment paper and make a uniform shape with your hands; dough will be thick and sticky. Put parchment on top and roll out until it’s about 1/16 inch thick everywhere.
  • Leave parchment on top and chill in fridge for at least 1 hour, but preferably longer. The longer you chill it, the easier it will be to cut out.
  • Right out of the fridge, take off the top parchment paper and use a 2-inch round cutter and cut as many circle cookies as close together as you can. Place each cookie on parchment paper on a sheet pan. These do not spread much so you can put them close together if needed.
  • Work with dough right after taking it from the fridge otherwise it will start to stick. If dough sticks too much, cut all the circles and place dough in freezer for 20-30 minutes and then it should come off the parchment much easier. Please note that the dough will be too sticky if it is not chilled properly.
  • With the remaining dough, push into the cutter to create remaining cookies as best you can or you could make into cookie crumbles.
  • Bake at 350 degrees for 15 minutes. Add 2-5 minutes for high altitude. The cookie will firm as they cool.

The Filling

  • Cream together all ingredients. For double stuff style cookies, double the filling!
  • Pipe a circle of filling right in the middle of the cookie and leave room around the edge. Press another cookie on top.
  • Let the cookies set in the fridge for at least 30 minutes. You don't have to do this but it sets the frosting so it doesn't all smoosh out when you bite it.

Notes

The thicker the cookie, the more time is needed to bake. For higher altitude, add 2-5 minutes for bake time.

Instructions

  • Preheat oven to 350 degrees.
  • With an electric mixer, cream together all cake ingredients on medium speed for about 2-4 minutes until creamy and well combined. 
  • Add batter to a standard cupcake tin with papers or well greased pan. You can also use a 10-inch round cake pan that has been lined with parchment and greased.
  • For cupcakes, bake for 25 minutes. For round cake pan, bake for 30 minutes. Let cake or cupcakes cool completely before frosting. 
  • While your cake is baking, you can prepare the frosting. Add together all ingredients and mix on low. After 30 seconds, once there is no loose powder, whip on high for one minute, scrape sides and then whip another minute. 
  • Frost cakes as desired.

Notes

Mini cupcakes yield approx 45 pieces.

  • Line an 8x8 pan with foil and set aside.
  • Over medium heat, whisk together heavy cream, swerve, Orange Cream, and butter. Whisk continuously until it boils. This takes about 10 minutes.
  • Remove from heat and add the chocolate chips. Mix together (wooden spoon works best) for about 1 minute.
  • Add to prepared pan and place in fridge overnight. Remove from pan and remove foil and cut with a sharp knife.
  • This keeps at room temperature or in the fridge. For a softer fudge, keep at room temperature; refrigerate for a harder fudge. Keep in a sealed container.

Instructions

  • Mix together eggs, oil, vanilla and erythritol.
  • Add remaining ingredients and mix for 1-2 minutes until it’s nice and creamy, it will be thick.
  • Spread mixture into a 9x13 greased baking dish.
  • Preheat the oven to 350 and let the batter sit for 10 minutes (it makes it raise better). Place cake in oven and bake for 20 minutes.
  • Cool cake for roughly 10-15 minutes. While the cake cools you can make your pudding by blending the cream, water, and Keto Chow with an immersion blender.
  • Use the bottom of a wooden spoon and poke holes evenly through the cake. Pour pudding into the holes first and then spread the remaining pudding over the top.
  • Cover and refrigerate for at least two hours.
  • Right before pulling it out of the fridge you can make the topping by whipping together the cream and sweetener on high speed until stiff peaks form. Spread topping and serve!

NOTES: Can also be made in an 8x8 pan and cooked for a little longer.

Instructions

  • Turn your Instant Pot to sauté. Add butter and once melted add the optional carrots and celery and sauté for 5 minutes.
  • Add 3.5 cups of chicken broth, and the broccoli. Put on Instant Pot lid and put valve on seal.
  • Set Instant Pot on manual for 8 minutes at medium pressure.
  • Mix chicken soup Keto Chow to the remaining 1/2 cup broth and mix with an immersion blender to make a thick mixture/slurry.
  • Once Instant Pot finishes do quick release and open lid once the valve drops.
  • Add the Keto Chow mixture and mix until nice and creamy. Add shredded cheese and stir.
  • Serve with more cheese and bacon if desired!

Notes

Notes: For a thicker soup you can blend the whole thing with immersion blender. Also thickens as it sits.

  • Mix 1/2 cup water and gelatin in the stand mixer bowl and allow to "bloom" or soften, just make sure there are no dry spots.
  • Use a paper towel to smear a small amount of butter on the sides of a 9x13 glass baking dish.
  • Whisk 3/4 cup water, allulose, and Keto Chow together until smooth, then heat until it’s bubbling, stirring continuously. Be careful: the allulose will caramelize if you heat it too much.

  • Add heated mixture to gelatin and start mixing using whisk attachment on low for 5 minutes. Be careful! It's very hot at this stage.

  • After 5 minutes, increase speed to high and mix until fluffy and doubled in size, about 10 minutes. You're adding air to the mix and giving it the marshmallow texture.
  • Use a spatula to transfer the mix into the buttered baking dish. Put dish in refrigerator to let cool before cutting.

Notes

The full recipe has 0.43g of net carbs with 199g total carbs, 192g of that is the sweetener. Allulose works the best, though you can use powdered erythritol. Granulated swerve or erythritol will stay granular and so will not work very well in this recipe.

Instructions

  • Mix together cream cheese, Pumpkin Spice Caramel Keto Chow, cinnamon, and Swerve until well combined.
  • Make uniform sized balls. Put the balls in the freezer while you melt the chocolate.
  • Put white chocolate in microwaveable bowl and melt in 15-30 second intervals. Stir after every 30 seconds, do not overheat because it will seize.
  • Stir the unmelted chocolate chips until they are silky smooth. If your chocolate doesn’t melt in 1 minute, switch to 15 second intervals.
  • Take the formed balls from the freezer and dip each one in the chocolate.
  • Let set in the fridge for 15-30 minutes and enjoy!

Create your own version of blondies using Keto Chow and top it off with a delicious White Chocolate Drizzle.

Equipment

  • 8" x 8" pan

Ingredients

Blondies

Drizzle

  • 2 Tbsp unsalted butter
  • 2 Tbsp sugar free white chocolate chips

Instructions

Blondies

  • Cream together butter, eggs, vanilla and erythritol.
  • Add your chosen flavor of Keto Chow and mix well.
  • Add to an 8x8 pan lined with parchment and grease.
  • Bake at 350 for 20 minutes.

Drizzle

  • While blondies are baking, melt butter over medium high heat.
  • Once boiling stir frequently until it turns amber (brown butter)
  • Remove from the heat and add white chocolate chips.
  • Stir until the chips melt completely.
  • Cool white chocolate sauce in the fridge for 5 to 10 minutes and then drizzle over blondies and let it set for about 30 minutes. You can refrigerate to set the chocolate faster if you wish.

Notes

*This is very sweet so start with ⅛ cup erythritol and taste, then add more if desired. 
For a more custard taste, use ¼ cup brown erythritol in place of granulated erythritol.
