Cookies and Cream Coconut Egg Cream

The good old-fashioned fountain drink goes keto with plenty of healthy fat from coconut milk.

Instructions

  • Place coconut milk, keto chow and 4-ounces water in a mason jar or sports shaker. For best results use an immersion blender to mix the coconut milk and keto chow with 4 ounces water cover and chill overnight.
  • To make the egg cream, mix an ounce or two of the seltzer water into the chilled keto chow and stir to lighten the mix, before pouring in the rest of the seltzer water and stirring gently. Drizzle a teaspoon of chocolate sauce over the top if desired.

FANTASTIC! Started Keto Chow 7 day challenge for myself today!

I loved all the flavors in the sample pack. Chocolate Toffee was not included in the pack I tried, but I was seeing such great comments on it, I decided to grab a 21 serving bag for my challenge. I didn’t think it was nearly as good as the straight chocolate. It wasn’t thick or particularly tasty. Everyone has different tastes. This is such a tasty and filling product, I love the other flavors so much. I try to stick to 1200 calories a day and 3 a day of these shakes exceeds that but I’d hate to see loss of flavor for decreased calories. I mix mine in butter, perhaps not the best calories choice? lol Carb count is very low and that rocks!! Thank you sooooo much for this product. I am now and will be a regular customer!

I purchased a big Snickerdoodle bag and a trial size of the Lemon.
Snickerdoodle is my favorite! And the Lemon? Please make it in a large bag!
I made the Lemon with sugar free lemonade as my liquid, then 2 ounces of cream cheese and 2 ounces of HWC. Amazing! So good.
Did the Snickerdoodle with cream cheese and HWC too. Really fantastic!
I know people balk at the price. I did too. But doing this makes your grocery list shrink tremendously. I promise!
Also, the KC shaker bottles are the best! Buy these over cheap ones elsewhere. You won’t regret it!

Root Beer Cream Sundae Pops

Don’t be intimidated by the lovely appearance of these popsicles. They are easy to make, you just need to spend a little time freezing the layers. The three colors and three flavors are reminiscent of an old-fashioned ice cream parlor sundae. But this is a keto treat you can keep in your freezer for any day.

  • 6 popsicle molds and popsicle sticks

Ingredients

  • Mix 2 ounces of heavy cream, Cookies and Cream Keto Chow, and 10 ounces of water in a shaker cup or large measuring cup with a pour spout.
  • In a separate shaker cup or measuring cup repeat with the remaining 2 ounces of heavy cream, Root Beer Keto Chow, and 10 ounces of water.
  • Starting with the prepared Cookies and Cream Keto Chow fill the popsicle molds one-third full. There may be Keto Chow left over, you can drink it while you wait for your popsicles to freeze.
  • Place the molds in the freezer to set for about 30 minutes. Don’t put the popsicle sticks in the molds yet.
  • After 30 minutes, remove the popsicle molds from the freezer and check to see if the Keto Chow is partially frozen. It should be solid enough to support another layer without mixing. If it isn’t set, return it to the freezer until it is.
  • When the first layer of Keto Chow is set enough, pour the prepared Root Beer Keto Chow in to fill the molds another third of the way. Then return to the freezer to set again.
  • Mix the two teaspoons of cocoa powder, and the cherry flavoring if using it, into the remaining Root Beer Keto Chow.
  • When the second layer has set, use the cocoa flavored Keto Chow to fill the remaining third of the molds. You should have three distinct layers from lightest to darkest.
  • Finally, add the popsicle sticks. Gently pressing them into all three layers. If the bottom is too frozen you can use a knife, to carefully make a space for the stick.
  • Return to the freezer and freeze until set—at least four hours or overnight for best results.
  • When you are ready to serve the popsicles, remove them from the freezer and run the outside of the mold under hot water momentarily to loosen the popsicle before removing.

The Cookies

  • Preheat oven to 350 degrees.
  • Cream together butter and sweetener.  Add egg and mix thoroughly.
  • Mix in the the black cocoa, baking powder, and Keto Chow, mixing very slow at first so as not to make a mess.
  • With a silicone spatula, scoop all the batter onto parchment paper and make a uniform shape with your hands; dough will be thick and sticky. Put parchment on top and roll out until it’s about 1/16 inch thick everywhere.
  • Leave parchment on top and chill in fridge for at least 1 hour, but preferably longer. The longer you chill it, the easier it will be to cut out.
  • Right out of the fridge, take off the top parchment paper and use a 2-inch round cutter and cut as many circle cookies as close together as you can. Place each cookie on parchment paper on a sheet pan. These do not spread much so you can put them close together if needed.
  • Work with dough right after taking it from the fridge otherwise it will start to stick. If dough sticks too much, cut all the circles and place dough in freezer for 20-30 minutes and then it should come off the parchment much easier. Please note that the dough will be too sticky if it is not chilled properly.
  • With the remaining dough, push into the cutter to create remaining cookies as best you can or you could make into cookie crumbles.
  • Bake at 350 degrees for 15 minutes. Add 2-5 minutes for high altitude. The cookie will firm as they cool.

The Filling

  • Cream together all ingredients. For double stuff style cookies, double the filling!
  • Pipe a circle of filling right in the middle of the cookie and leave room around the edge. Press another cookie on top.
  • Let the cookies set in the fridge for at least 30 minutes. You don't have to do this but it sets the frosting so it doesn't all smoosh out when you bite it.

Notes

The thicker the cookie, the more time is needed to bake. For higher altitude, add 2-5 minutes for bake time.

  • 2 Tbsp unsalted butter
  • 2 Tbsp sugar free white chocolate chips

Instructions

Blondies

  • Cream together butter, eggs, vanilla and erythritol.
  • Add your chosen flavor of Keto Chow and mix well.
  • Add to an 8x8 pan lined with parchment and grease.
  • Bake at 350 for 20 minutes.

Drizzle

  • While blondies are baking, melt butter over medium high heat.
  • Once boiling stir frequently until it turns amber (brown butter)
  • Remove from the heat and add white chocolate chips.
  • Stir until the chips melt completely.
  • Cool white chocolate sauce in the fridge for 5 to 10 minutes and then drizzle over blondies and let it set for about 30 minutes. You can refrigerate to set the chocolate faster if you wish.

Notes

*This is very sweet so start with ⅛ cup erythritol and taste, then add more if desired. 
For a more custard taste, use ¼ cup brown erythritol in place of granulated erythritol.

Soft Baked Keto Cookies & Cream Cookies

I am really excited about these cookies! They are the best cookies I have made since going keto. They are soft, tender and lightly sweet. They really behave and taste like traditional cookies and they are so easy to make. Everyone who tried them loved them! Have fun with this recipe and make it your own. Add your favorite sugar-free chocolate chips, chopped nuts, or seeds, or use sugar-free jam to make thumbprint cookies. You can even roll the dough out and use cookie cutters to cut out perfect cookies!

  • Preheat oven to 350 degrees.
  • Whisk together the Keto Chow, coconut flour, and baking powder in a small mixing bowl and set aside.

  • Place the butter in a large mixing bowl and beat with an electric mixer until it is light and fluffy.
  • Beat in the sweetener.
  • When the sweetener is completely mixed with the butter, add the egg and the vanilla extract.
  • Beat the mixture until the egg is completely mixed with the butter and sweetener. The mixture will look grainy and separated.
  • Add half of the dry ingredients to the bowl and blend. When that is fully combined, add the rest of the dry ingredients.
  • Beat on low speed until it is completely combined and creates a stiff dough. It should start to come together into a ball.
  • Scoop balls of dough that are about a tablespoon each onto an oiled cookie sheet, spacing them approximately two inches apart.

  • Bake at 350 degrees for 10-12 minutes until the cookies have puffed slightly and are just beginning to turn golden brown around the edges.

Cut Out Cookies/Cookie Cutter Cookies

  • To make cut-out cookies: chill the dough for approximately 30 minutes, roll it out between two sheets of oiled parchment paper to about 1/4 inch thickness and cut into shapes with your favorite cookie cutters.

  • Reroll the scraps and repeat.
  • Place on an oiled cookie sheet and bake at 350 for 8-10 minutes until the cookies are just beginning to turn golden brown around the edges. Don’t overbake or the cookies will become dry.

  • This will yield approximately 10-12 cookies based on the size of your cookie cutters.

Notes

Please Note: This recipe calls for one measuring cup of Keto Chow powder, not one scoop.
Note about sweeteners: I tested this recipe with both an erythritol blend and with allusose. They both worked and gave good results. They erythritol resulted in a slightly sweeter cookie and is easier to roll out and shape. The allulose yielded a cookie that was a bit more soft and chewy.
