Ingredients

  • 2 lb stew meat of choice roast or pre-cut
  • 4 cup water divided
  • 1/2 medium yellow onion chopped
  • 1/4 cup butter for onion
  • 1/2 medium head cauliflower roughly chopped (approx 3 cups)
  • 2 servings Spicy Taco Base Keto Chow (or 2 scoops)
  • 2 cup water
  • 1/4 cup butter melted
  • 1/2 tsp guar gum
  • salt and pepper to taste

Instructions

  • Add stew meat or roast to pressure cooker. Add 2 c water. Cook meat to desired doneness. The MEAT/STEW button works well for this. When meat has finished cooking, remove from pressure cooker and cut into bite sized pieces if using a roast.
  • While cooking meat, use ¼ c butter and saute chopped onion and cauliflower on low; approx 10 min.
  • Dump water used for cooking into a blender, add remaining 2 c of water, ¼ c melted butter, 2 servings Spicy Taco Keto Chow, and ½ tsp guar gum. Blend well, scraping sides if necessary.
  • Place cut meat and sauteed onions into pressure cooker, add Keto Chow soup mixture. Press SAUTE to heat all together. 
  • Add salt and pepper to taste before serving.
  • TIPS: I used my instant pot on MEAT/STEW for 20 min with quick release, 1 lb frozen venison roast with 2 c water was cooked to medium rare. Make sure guar gum does not touch sides of blender or it will clump. Guar gum can be added in the top pour spout while blending if you are talented.

Notes

Add any other veggies you would like. Make sure they are cooked/softened before heating all together.

Beef soup base keto chow also works well in place of the Spicy taco keto chow!

Ingredients

  • 4 ounces bacon
  • 4 ounces onion diced
  • 1 pound ground chuck
  • 1/4 cup sugar free ketchup or tomato sauce
  • 1 tbsp deli mustard
  • 1 tbsp garlic powder
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 2 servings Beef Soup Base Keto Chow (or 2 scoops)
  • 4 cups water
  • 8 ounces cheddar cheese grated
  • dill pickle slices for garnish

Instructions

  • In a large soup pot, cook the bacon over low heat until the fat has rendered off and the bacon is crispy. Remove the bacon and set aside. When the bacon is cool enough to touch, crumble it into large pieces.
  • Add the onions to the pan and cook them in the bacon fat over medium heat, until they are translucent.
  • Add the ground beef and cook, stirring to break it up into small pieces. When the beef is browned, add the ketchup, mustard, garlic powder, salt and pepper and cook until the mixture is fragrant and bubbling.
  • Add the water to the pot and bring to a boil, reduce heat and simmer until beef is fully cooked, about 10 minutes.
  • Carefully remove about a cup of the hot cooking liquid and blend the Beef Soup Base Keto Chow into the liquid, then stir it back into the soup. Then stir in the cheese and simmer until the cheese is melted.
  • Serve, garnished with crumbled bacon and dill pickle slices and any other toppings you like.

Fairly chilly here today. For taco Tuesday I made taco soup! I kept it mild so my kids would eat it too!

Ingredients

  • 1 lb ground beef
  • 4 oz can of diced chiles
  • 14.5 oz can diced tomatoes
  • 1 serving Spicy Taco Base Keto Chow (or 1 scoop)
  • 4 oz cream cheese
  • 1 tsp salt
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • 1/2 tsp garlic powder
  • your favorite taco toppings

Instructions

  • Brown the beef on medium high heat. (I used my instant pot on sauté.)
  • Add the rest of the ingredients and stir together. Don’t worry about mixing in the cream cheese; it will melt as it cooks.
  • Cook in crockpot or using a crockpot feature on high for 2 hours.
  • Add all of your favorite taco toppings and serve.

Ingredients

  • 1 Tbsp coconut oil
  • 2 Tbsp Thai Green Curry Paste prepared, no sugar
  • 1 clove garlic
  • 1 tsp ginger root minced
  • 2 tsp coconut aminos or soy sauce
  • 1 cup full fat coconut milk
  • 6 ounces water
  • 1 serving Beef Soup Base Keto Chow (or 1 scoop)
  • 1 tsp lime juice or hot sauce
  • 3 ounces leftover, cooked vegetables like cabbage, green beans, bean sprouts, mushrooms or bok choy (optional)
  • 2 ounces leftover, protein like chicken or shrimp

Instructions

  • Heat the coconut oil in a small pan over medium heat.
  •  Mix in the curry paste, garlic and ginger and cook until it smells fragrant.
  • Stir in the coconut aminos or soy sauce, and coconut milk, then stir in the water and keto chow and whisk or blend with an immersion blender.
  • When the soup is fully heated, add the lime juice or hot sauce. Season with salt and pepper if desired.
  • You can leave the soup just like this so you can drink it out of a to-go cup, or you can add leftover vegetables and protein for a more substantial meal.

Ingredients

  • 10 ounces turkey or chicken broth warm
  • 1 serving Savory Chicken Soup Keto Chow (or 1 scoop)
  • 2 ounces unsalted butter 1/2 stick
  • 1/4 cup onion diced
  • 1/4 cup celery thinly sliced
  • 1/4 cup bell peppers mixed, sliced
  • 1 cup mushrooms sliced (about 4 large mushrooms)
  • 1/4 cup sour cream or heavy cream
  • 1/2 tsp dried parsley
  • 8 ounces cooked turkey cubed or shredded

Instructions

  • Blend the broth with the Keto Chow and set aside.
  • Melt the butter in a large skillet, add the onion, celery and bell peppers and cook over medium heat until the vegetables begin to soften, and the onions become translucent.
  • Add the mushrooms and cook for another 2-3 minutes.
  • Stir in the soup mixture, then stir in the sour cream or heavy cream, and then dried parsley.
  • Then stir in the turkey. Heat gently until everything is warmed through.
  • Serve over cauliflower rice, spaghetti squash or low carb biscuits if desired.

Instructions

Conventional Cooking Method

  • Generously coat steak with salt and pepper. Grill steak to desired doneness or a little less.

  • While grilling steak, add Taco Soup Base with 1/4 c butter and warm water to a pot, whisking thoroughly until no longer lumpy. Keep on low heat.

  • Saute onions and peppers in 2 tbsp butter and add garlic.

  • Slice steak into “bite-sized” pieces.

  • Add cooked onions, peppers, garlic, and steak to soup base and let simmer for a few minutes.

  • Add salt and pepper to taste. Serve and top with any toppings you like.

InstantPot Method

  • Generously coat steak with salt and pepper. Using 2 tbsp butter, sear steak using SAUTE function. Remove steak and cut into “bite-sized” pieces.

  • Saute onions and peppers with the garlic for 2 min, adding more butter if necessary. Remove onions and peppers.
  • Add 1/4 c butter and melt. Once melted, add water and turn off saute function.

  • Whisk in Spicy Taco Soup Keto Chow until no longer lumpy.
  • Add steak, onions, peppers and garlic back to InstantPot. Season with more salt and pepper. Cook on low pressure for 10 min. Serve and top with any toppings you like.

Notes

TIPS: For a more liquid soup, do a second serving of Keto Chow Taco Soup mixed with water and butter. This recipe is very mild in the spiciness factor. If you want more spice, add a hotter pepper in the mix, chili powder, or some cumin. You can replace the water with beef broth.

  • 2 capsules Keto Chow fish oil
  • 2 tsp onion powder or granulated onion
  • salt and pepper to taste
  • 5 oz canned whole clams with the liquid
  • 1/2 cup heavy whipping cream
  • 1/2 cup cold water
  • 1 serving Savory Chicken Soup Keto Chow (or 1 scoop)
  • 1 cup warm water

Instructions

  • In water, boil cauliflower broken into about 1” squares until fork soft, but not so soft that they will pulverize. The idea is to be as soft as the potatoes are normally in chowder. Keep cauliflower warm for later.
  • Melt 2 tbsp of butter in a soup pot.
  • Squeeze the contents of two Keto Chow fish oil capsules into the pot and discard the shells.
  • Cut bacon into small pieces, about 1/2” square. Add the sliced bacon to the pot and cook under high heat stirring often. Cook bacon until it is partway finished. The bacon should not be crispy. It should still be soft.
  • Sprinkle with salt and pepper and 2 tsp of granulated or powdered onion. Stir until mixed.
  • Open can of whole clams - DO NOT dispose of the liquid. Drain the liquid from the clams into the bacon, fat, and butter and bring to a boil. Stir to deglaze the pan.
  • Add heavy whipping cream and 1/2 cup of cold water.
  • Mix 1 packet or scoop of Keto Chow Chicken Soup in a different container with warm water until fully mixed by whatever method you prefer.
  • Add the Keto Chow mixture to the pot and warm under medium heat until it almost boils.
  • Add the cauliflower to the chowder and discard the water used for the cauliflower. Add the clams. Bring almost to a boil and remove from heat. Gently stir trying not to break the clams and cauliflower. Salt and pepper to taste.

Notes

This recipe makes a thin milky Maine style chowder. If you prefer a thicker chowder you can add a thickener like xanthan gum powder to the chowder just before the clams and cauliflower are added. Serve immediately or chill and reheat the next day - the flavors blend better overnight. Other variations are to add shrimp, white fish filets, scallops, or lobster in addition to the clams for a mixed seafood chowder.

You guys!!! Cream of mushroom soup! And it’s SOOOO legit! See other pictures and last nights post to see the possibilities of this! Tonight, I smothered chicken thighs and cauliflower rice with it and it was insanely good, even my caulirice-hating husband really liked it!!

Spicy Taco Soup ?? now available!

Spicy Taco Soup; it’s not super spicy, just enough for most people. If you like it spicier you can always add more! Try it with some ground beef, maybe a little onion and some avocado chunks? The Taco Soup works well with just about every fat we’ve tried including: butter, beef tallow, bacon grease, duck fat, heavy cream, avocado oil, and more! We’ve already tested a batch to make sure it mixes up correctly and tastes right, so you can order it RIGHT NOW!

In case you missed it last week, we also received the Beef Soup Base. With the Beef Soup Base, we were experimenting around with different flavors: Clam Chowder, Beef Stew, Hot and Sour Soup, and more. We realized that rather than have it with a flavor, why not just leave it unflavored and let people use whatever they like?! So make soup, use it to bake, throw in some ground beef, go really nuts and mix it like a hot shake =); think of the Beef Soup Base as a blank canvas waiting for you to have fun. Without anything added it still has a nice beef flavor thanks to the beef bone broth protein.
