Ingredients

Lamb

  • 4 cloves of garlic
  • 2 Tbsp. extra virgin olive oil
  • 1 tsp. salt
  • 2 Tbsp. minced, fresh mint leaves (keep the stems)
  • zest of 1 lemon
  • 1 tsp. dried oregano
  • 1/2 tsp. ground black pepper
  • 1/2 tsp. paprika
  • 2-3 lb. boneless leg of lamb roast, rolled and tied*
  • sprigs fresh rosemary
  • sprigs fresh thyme

Roast

  • 1 Tbsp. olive oil
  • 1 large stalk celery, chopped into large pieces
  • 1 medium parsnip, peeled and chopped into large pieces
  • 1 medium leek, cut in half lengthwised and cut into large pieces
  • 1 cup beef or chicken stock
  • 1 serving Beef Soup Base Keto Chow
  • 1-2 tsp. red wine vinegar
  • salt and pepper to taste

Instructions

  • To make the marinade, crush one clove of garlic and mix it with the olive oil, fresh mint leaves, lemon zest, oregano, salt, black pepper, and paprika in a small bowl.
  • Place the leg of lamb in a dish or container and rub the marinade all over, into the flesh as much as possible.
  • Cut the remaining three garlic cloves in half lengthwise.
  • Using a small paring knife make four to six holes in the roast, twisting the blade if necessary to make a hole large enough.
  • Place a piece of garlic, a sprig of thyme, a sprig of rosemary, and the stems from the mint leaves into the holes.
  • Cover the roast loosely and refrigerate 24-48 hours.
  • When you are ready to cook the roast preheat the oven to 425℉ and allow the roast to come to room temperature for approximately 20 minutes.
  • Oil the bottom of a roasting pan or large skillet with the olive oil and spread the celery, parsnips, and leek to catch the juices of the roasting lamb.
  • Place the lamb on a rack over the vegetables, or place it directly on the vegetables so that it isn’t touching the pan.
  • Place the roast in the oven and lower the temperature to 350℉. Cook for 80-90 minutes, or until the lamb reaches 130℉.
  • When it is cooked, place on a carving board, covered loosely with foil to rest for ten minutes.
  • While the lamb rests, make the sauce. Heat the skillet with the vegetables still in it over medium heat and add the stock, using a wooden spoon to scrape up flavor from the bottom of the pan. Press the vegetables to get any juices out of them as you stir.
  • Mix the Keto Chow into the sauce and allow it to thicken. Taste the sauce and add vinegar, salt, and pepper as needed.
  • Strain through a sieve into a gravy boat. Discard the solids.
  • Cut the string from the lamb roast. Remove any herb stems still in the roast, but leave the garlic. Slice the roast into portions and serve with warm gravy.

Notes

*If your lamb isn’t already rolled and tied, you can ask your butcher to do it for you. Or spread the marinade on the inside of the leg of lamb before you roll it and tie it with butcher’s twine yourself.

Ingredients

FOR THE MEATLOAF

  • 1 large egg
  • 3 tbsp coconut aminos or Worcestershire sauce
  • 1 serving Beef Soup Base Keto Chow (or 1 scoop)
  • 2 tbsp onion flakes
  • 1 tbsp garlic powder
  • 1 tbsp dry parsley
  • 1/2 tsp sea salt
  • 1/2 tsp ground black pepper
  • 1/4 tsp hot sauce
  • 2 pounds ground beef
  • 1 oz ground pork rinds

FOR THE GRAVY

  • 1 cup water
  • 1 serving Beef Soup Base Keto Chow (or 1 scoop)
  • 2 tbsp coconut aminos or Worcestershire sauce
  • 1 tsp beef base
  • 1 tsp garlic powder
  • 1/4 tsp hot sauce
  • 2 tbsp butter
  • 1 large onion sliced
  • 5 oz button mushrooms sliced

Instructions

  • Grease a 9 x 5 loaf pan.
  • Preheat the oven to 350F.
  • In a large mixing bowl whisk together the egg, coconut aminos or Worcestershire sauce, Keto Chow, onion flakes, garlic powder, parsley, salt, pepper, and hot sauce.
  • Add the ground beef and crushed pork rinds and knead them into the egg mixture until everything is fully combined.
  • Press the mixture into the prepared loaf pan.
  • Place in the preheated oven and bake for an hour or until the internal temperature reaches 160F.
  • When the meatloaf has been in the oven for about 40 minutes, make the gravy.
  • Measure the water into a glass or liquid measuring cup and whisk in the Keto Chow, coconut aminos or Worcestershire sauce, beef base, garlic powder, and hot sauce. Set aside.
  • Melt the butter in a large, heavy bottom skillet over medium heat.
  • Add the onions and mushrooms and cook over medium heat, stirring occasionally until the onions start to look golden and the mushrooms have released all their liquid and begin to brown. This should take about 10 minutes. If the vegetables are browning too fast, lower the heat.
  • Take the skillet off the heat and whisk in the water and Keto Chow mixture.
  • Return the skillet to the burner and warm over low heat until the gravy is heated through and thickened. Keep warm until ready to serve.
  • When the meatloaf is done, remove it from the oven and allow it to rest about five minutes before slicing.
  • Serve with gravy and enjoy.

Notes

Yield: 8 servings of meatloaf and 2 cups gravy

Ingredients

  • 1 lb. ground beef
  • Salt and pepper for seasoning
  • 1 tsp. minced garlic
  • 16 oz. sliced mushroom
  • 1/2 cup sour cream
  • 1/2 cup water
  • 1 serving Beef Soup Base Keto Chow (or 1 scoop)

Instructions

  • In a large skillet, season the ground beef with salt and pepper and then brown over medium high heat until cooked through; this should take about 10 minutes.
  • Remove beef with a slotted spoon, leaving grease in the skillet. Add the garlic and let brown for a minute or two. Add the mushrooms and cook for 10 minutes stirring occasionally.
  • While they are cooking, blend together the sour cream, water, and Keto Chow. (An immersion blender makes this easy.)
  • Once mushrooms are tender and have reduced by about half, add in the sour cream mixture and the browned ground beef. Stir until combined and heat until boiling.
  • Serve with your favorite low carb noodles.

Ingredients

  • 4 ounces bacon
  • 4 ounces onion diced
  • 1 pound ground chuck
  • 1/4 cup sugar free ketchup or tomato sauce
  • 1 tbsp deli mustard
  • 1 tbsp garlic powder
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 2 servings Beef Soup Base Keto Chow (or 2 scoops)
  • 4 cups water
  • 8 ounces cheddar cheese grated
  • dill pickle slices for garnish

Instructions

  • In a large soup pot, cook the bacon over low heat until the fat has rendered off and the bacon is crispy. Remove the bacon and set aside. When the bacon is cool enough to touch, crumble it into large pieces.
  • Add the onions to the pan and cook them in the bacon fat over medium heat, until they are translucent.
  • Add the ground beef and cook, stirring to break it up into small pieces. When the beef is browned, add the ketchup, mustard, garlic powder, salt and pepper and cook until the mixture is fragrant and bubbling.
  • Add the water to the pot and bring to a boil, reduce heat and simmer until beef is fully cooked, about 10 minutes.
  • Carefully remove about a cup of the hot cooking liquid and blend the Beef Soup Base Keto Chow into the liquid, then stir it back into the soup. Then stir in the cheese and simmer until the cheese is melted.
  • Serve, garnished with crumbled bacon and dill pickle slices and any other toppings you like.

Ingredients

  • 1 pound flank steak* cut across the grain into 1/4 strips
  • 1/4 cup soy sauce or coconut aminos
  • 3 cloves garlic minced
  • 2 Tbsp ginger minced
  • 1 Tbsp rice wine vinegar or apple cider vinegar
  • Pinch red pepper flakes optional
  • 1/4 cup coconut oil
  • 1 serving Beef Soup Base Keto Chow (or 1 scoop)
  • 2/3 cup warm water
  • 1 pound broccoli cut into florets
  • 1 Tbsp toasted sesame oil
  • 1 green onion sliced
  • 1 Tbsp sesame seeds

Instructions

  • Mix the sliced steak with the soy sauce, garlic, ginger, vinegar and red pepper flakes if using. Set aside to marinate for 15-20 minutes.
  • Mix the Beef Soup Base with the warm water and set aside.
  • Heat a large skillet over high heat and add enough coconut oil to coat the pan well. Remove the steak from the marinade - reserving the marinade - and add the steak carefully to the hot pan. Spread it out into a single layer and cook until it begins to brown, about two minutes, then turn the beef and cook about two minutes on the other side. Remove the beef from the pan and set aside.
  • Add the remaining marinade and the Beef Soup Keto Chow mixture to the pan and heat, stirring to mix in the beefy deliciousness from the bottom of the pan.
  • Add the broccoli and simmer for about 5 minutes, until the broccoli is tender but still firm. Return the beef to the pan and heat through. Stir in the sesame oil. Taste and season with salt and pepper if desired.
  • Garnish with sliced green onions and sesame seeds.

Notes

 You can also try sirloin, flat iron, or hanger steak for this recipe.

You guys!!! Cream of mushroom soup! And it’s SOOOO legit! See other pictures and last nights post to see the possibilities of this! Tonight, I smothered chicken thighs and cauliflower rice with it and it was insanely good, even my caulirice-hating husband really liked it!!

  • Mix everything except mushrooms with immersion blender once thick (after about 1 minute).
  • Fold in finely chopped mushrooms.
