Ingredients

  • 2 large eggs
  • 1 serving Savory Chicken Soup Keto Chow (or 1 scoop)
  • 1 cup almond milk
  • 1/2 cup heavy cream
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 pinch cayenne pepper
  • 1 lb. cooked and cooled riced cauliflower, as dry as possible (leftover roasted cauliflower works great too)
  • 2 1/4 cups your favorite shredded cheese such as Cheddar or Monterey jack

Instructions

  • Preheat oven to 350℉ and grease a 9 X 13 baking pan.
  • In a large mixing bowl, beat together the eggs, then add the Keto Chow, dry spices, milk, and heavy cream. Mix well until there are no lumps.
  • Stir in the riced cauliflower and 2 cups of the shredded cheese; reserve the remaining 1/4 cup.
  • Spread the mixture into the greased baking pan. Top with the remaining cheese.
  • Bake for approximately 35 minutes, or until the casserole is set and beginning to brown on the top.

Prepare Cookies

  • Prepare a cookie sheet by lining with parchment paper or aluminum foil
  • Place the oil, egg and sweetener in a large mixing bowl and whisk together.
  • Add the Keto Chow, cocoa powder, baking powder, and cinnamon and mix to combine.
  • The dough will should be soft and glossy when its fully mixed.
  • Stir in the chocolate chips.

  • Measure out eight evenly sized cookies onto the prepared cookie sheet. I use a small ice cream scoop for this.

  • Bake at 325 degrees for 10 minutes until the cookies are just beginning to brown around the edges but they are still slightly soft to the touch.

  • When they are done baking, allow then to cool completely. While the are cooling make the cream filling.

Filling and final prep.

  • Beat the butter with an electric mixer until it is light and fluffy. Beat the sweetener in a little at a time, on low speed. Add the vanilla extract and beat until everything is fully mixed and the cream begins to look stiff.
  • Spread a quarter of the filling on one cookie and top with another cookie. Continue until you have four cookie sandwiches.

  • Store the sandwiches in an air tight container in the refrigerator or individually wrapped in plastic.

Cheap and Easy “Simple Scrambles”

You may be familiar with the "Jimmy Dean Simply Scrambles," which are fantastic but rather expensive. The first time I opened one up I thought, "Hey, I can prepare this myself!" Here is our recipe that we like to use, though I typically do 3-5x as much at a time as is called for in the recipe. You can easily store these in the fridge or the freezer (and then the fridge to thaw) for later use.

Ingredients

The meat and cheese mix - prep in bulk for later use.

  • 1 pound bacon ends and pieces
  • 1 pound ground sausage
  • 1 pound grated cheese

Used to actually make the cups

  • 20-30 large eggs
  • 10 each snack size bags
  • 10 12-16 oz paper cups for hot drinks

  • Cut up the bacon into smaller pieces.

  • Add the sausage. (I'm tripling the recipe in these photos FYI.)

  • Cook it all together.

  • If you're a wimp (or rather if your kids can't handle the amount of fat), you can drain the meat.

  • Let the meat cool, best to use the refrigerator so it doesn't get gross. Put about 1/2 cup of the meat mix into snack size bags

  • Add about 1/4 cup of grated cheese to each bag

  • Seal them, you can get out most of the air so they store smaller.

  • Admire your work. You can put the smaller bags into a larger bag and store it in the fridge or even the freezer.

To use the bags to make breakfast

  • Get the eggs, a large paper cup for hot liquids, a fork, and the meat mix.

  • Crack 1-3 eggs into the cup. We typically use two eggs.

  • Add the meat and cheese mixture.

  • Stir it with a fork. Microwave (without the fork) for about 1 minute on high.

  • Stir it again. (You can use the same fork, don't be a sissy.) Microwave again for 30-60 seconds.

  • Check and see if it's done. If it's not: nuke it some more!

Ingredients

Instructions

  • Melt the butter in a small pan over low heat, then stir in the sweetener, vanilla and salt.
  • Stirring constantly, cook the mixture until the sweetener melts and begins to bubble.
  • Allow it to cook for about one minute, while continuing to stir.
  • Carefully add the almonds and stir to coat them in the caramel mixture. Continue to cook over low heat until the almonds are toasted, and the coating looks like it’s beginning to dry.
  • Carefully transfer to a tray lined with parchment paper or aluminum foil and allow to cool completely.
  • When it has cooled completely, break it into small pieces.

  • Prepare an ice cream mold or loaf pan by lining with plastic wrap or waxed paper.

  • With an electric mixer, beat the cream until it starts to thicken. When it begins to look like melted ice cream, slowly add the Keto Chow and sweetener.

  • Continue to whip the cream until it holds stiff peaks.

  • Fold in the candied almonds.

  • In a separate bowl, beat the egg whites until they are stiff but not dry. Be sure the bowl and beaters are very clean and there isn’t even a drop of egg yolk in the whites or the whites will not whip successfully. You can wipe the bowl and the beaters down with white vinegar to ensure they are clean.

  • Gently fold the whipped egg whites into the Keto Chow mixture.

  • Spoon the mixture into the prepared ice cream mold or loaf pan and wrap tightly with plastic wrap.

  • Freeze overnight.
  • Unmold the loaf onto a serving dish and slice to serve.

  • Preheat oven to 350℉ and line a standard muffin tin.
  • To make the cupcakes, combine the almond milk, vinegar, and vanilla extract. Set aside.
  • In a separate bowl, mix together the Keto Chow, almond flour, coconut flour, cocoa powder, and baking soda.
  • Cream butter with an electric mixer until light and fluffy. Beat in the erythritol; then beat in the eggs, one at a time.
  • Beat in half the flour mixture. Slowly mix in the almond milk mixture a little at a time so it doesn’t splash out of the bowl, then beat in the remaining flour mixture.
  • Mix in the red food coloring. Add enough to make the batter bright red. The amount needed will depend on what type of coloring you use.
  • Divide the batter evenly among the prepared muffin cups.
  • Bake for about 25-30 minutes, or until slightly firm to the touch and lightly browned around the edges.
  • Allow the cupcakes to cool completely before frosting.

Frosting

  • To make the frosting, blend the Keto Chow and heavy cream in a large mixing bowl until smooth.
  • Beat in the cream cheese and then the powdered erythritol.
  • Beat in the softened butter a few pieces at a time until the mixture is light, fluffy and smooth.
  • Frost the cupcakes and decorate with raspberries.

Instructions

  • Mix snickerdoodle mixture ingredients together. An immersion blender works best for this.
  • In greased 8x8 or 9x9 pan, add the snickerdoodle mixture except for 1/4 cup.

  • Mix cheesecake mixture; spread it on top of the snickerdoodle mixture.

  • Spoon dollops of remaining snickerdoodle mixture on top and use a knife to make a swirl.

Instructions

  • Cream coconut oil or butter with mixer.
  • Add erythritol and eggs and mix well.
  • Add baking powder and Keto Chow. Mix until well combined.
  • Roll dough into balls and drop into erythritol/cinnamon mixture and roll until covered.

  • Add to parchment paper and bake at 350 degrees for about 12-15 minutes.
