Ingredients

Instructions

  • To make the crust, stir together the walnuts, cocoa powder, and sweetener, then mix in the melted butter.
  • Press the mixture into the bottom of your pan. Place in the refrigerator or freezer to firm up while you make the filling.
  • To make the filling, beat the cream cheese until light and fluffy, then mix in the sour cream.
  • Add the Keto Chow, sweetener, and mint extract. Blend until fully combined. If the mixture looks too thick, add heavy cream a tablespoon at a time until it is spreadable.

  • Mix in the chopped chocolate and spread the filling onto the prepared crust.
  • Chill for at least four hours or overnight.
  • Garnish with whipped cream, chocolate curls, and mint leaves if desired.

Ingredients

  • 2-4 ounces softened, unsalted butter adjust according to your macros
  • 1 serving Beef Soup Base Keto Chow (or 1 scoop)
  • 14 ounces hot water
  • 1 tsp dried onion flakes
  • 1/2 tsp granulated garlic
  • 1/2 tsp dried parsley
  • 1/2 tsp black pepper
  • sea salt to taste
  • Swiss or Gruyere cheese optional

Instructions

  • Blend all the ingredients together and enjoy.
  • Garnish with grated Swiss or Gruyere cheese if desired.
  • You can combine the dry seasonings with the Keto Chow in advance and take it on the go for work, school, traveling or even camping. Make a larger batch and keep it on hand to use in cooking like you would French onion soup mix.

Instructions

  • Butter or oil the donut molds and preheat the oven to 350 degrees.
  • In a large mixing bowl, beat together the eggs, butter, sweetener, and orange extract. 
  • Then mix in the Keto Chow, almond flour and baking powder.
  • Fill the donut molds, making sure to spread the batter into the molds so they fill the cavities. They should be filled about halfway.
  • Bake for 15-20 minutes, until they are puffed and browning. Allow them to cool while you make the glaze.

For Decorating

  • Place the powdered erythritol in a small bowl and mix in the almond milk one teaspoon at a time until you reach a spreadable consistency. Then mix in the orange extract.
  • Dip each donut into the glaze (or spread with a spoon) and then sprinkle with orange zest as desired.

Chocolate Coating

Instructions

  • In a large mixing bowl, beat the cream cheese with an electric mixer on low speed until it is softened and has spread out in the bowl.
  • Add the Keto Chow and heavy cream and beat on medium speed until they are fully mixed in.
  • Add the butter and the sweetener; add the orange extract and food coloring now, if using.
  • Beat the mixture for about 30-45 seconds on low speed, then raise the speed to medium-high and whip until the mixture looks light and fluffy.
  • Scoop out teaspoon sized balls onto a tray lined with waxed paper or parchment paper. Or prepare an 8”x 6” or similar sized rectangular cake pan by greasing and lining with parchment paper cut to fit the bottom of the pan. Spread the Orange Cream mixture into the pan in an even layer.
  • Chill in the coldest part of your refrigerator for at least 4 hours, preferably overnight. When it has set, turn it out of the pan, remove the parchment paper and cut it into small squares.
  • If it becomes too soft to work with, place it in the freezer for a few minutes.
  • To serve, dust the pieces with confectioner’s sweetener or drizzle them with chocolate coating and chill until the chocolate is set.

Chocolate Coating

  • Melt the coconut oil and the chocolate together.
  • You can melt them in a microwave safe bowl in the microwave or in the top of a double boiler set over gently simmering water.
  • Stir the mixture to make sure it is thoroughly combined.
  • Drizzle the chocolate over the chilled meltaways.
  • You can also use the chocolate coating to make molded meltaways by following the manufacturer’s directions for filled chocolates from your favorite candy mold.

  • Taste and add additional sweetener if you want a sweeter fudge.

Ingredients

  • 1 serving Strawberry Keto Chow (or 1 scoop)
  • 8 ounces water
  • 6 ounces full fat coconut milk
  • 1/2 cup ice cubes
  • 1 large strawberry chopped

Instructions

  • Mix the scoop of Keto Chow and the water in a shaker cup and refrigerate at least two hours, preferably overnight.
  • To make your smoothie, combine the prepared Keto Chow, coconut milk, ice cubes and strawberry in the blender and blend until smooth.

What could be better than a light strawberry sponge cake rolled around whipped cream, fresh strawberries and toasted coconut? It takes a little bit more time and attention than the average cake but it’s a show stopper that will make any occasion extra special. The cake stays surprisingly tender, moist, and really tastes like a traditional sponge cake.

Equipment

  • Clean dry kitchen towel

Ingredients

Cake

Filling

  • 1 pint strawberries rinsed and drained
  • 1 cup unsweetened shredded coconut toasted
  • 2 cups heavy whipping cream

Instructions

Preparation

  • Line the jelly roll pan with parchment paper and lightly oil the parchment paper
  • To toast the coconut spread it out on an ungreased pan and bake in the oven at 325 until it begins to turn golden and smells fragrant. About 10 minutes. Set aside to cool.

Cake

  • Beat the egg yolks with the sweetener until the color is light yellow and ribbons form when the beaters go through. Add the food coloring and mix in if using now.
  • In a separate bowl with very clean beaters whip the egg whites until they begin to foam, sprinkle in the sweetener and continue to beat until stiff peaks form.
  • Fold 1/3 of the egg whites into the egg yolk mixture to lighten it. Then gently fold in the remaining egg whites until they are almost completely combined. Being careful to retain as much air in the egg whites as possible.
  • Mix together the Keto Chow, coconut flour, gelatin, and baking powder and sprinkle them over the egg mixture. Gently fold the dry ingredients into the eggs.
  • Using an offset spatula, spread the batter onto the prepared jelly roll pan and even it out as much as possible its ok if it looks a little bumpy.
  • Bake in the preheated oven for 10-12 minutes until the cake is set, slightly golden around the edges but still tender and soft to the touch.
  • Meanwhile sift a layer of powdered sweetener on a clean, dry kitchen towel.
  • When it’s cool enough to touch carefully turn the cake over onto the towel and remove the pan.
  • Gently peel the parchment paper away from the cake and using the towel roll the cake up the long way, with the cake rolled inside.
  • Leave the cake rolled up in the towel to cool completely while you make the filling.

Filling

  • Slice the strawberries into thin slices
  • Whip the cream to stiff peaks.
  • Unroll the cake and spread it with the whipped cream leaving about 1/2 inch of plain cake around the edges.
  • Lay the strawberry slices over the whipped cream, and sprinkle with the toasted coconut. Gently reroll the cake. Using the towel to help hold it. Make sure not to roll the towel inside again.

  • Place the cake on a platter and garnish with more whipped cream, strawberries, coconut, and powdered sweetener if desired.

  • Place 2 cups of the heavy whipping cream in a large mixing bowl, sprinkle the Banana Keto Chow and 1/4 cup of the sweetener over the cream and beat until it is completely mixed. It should double in volume and have a creamy, pudding consistency. If it is too thick, thin it by adding almond milk a Tbsp. at a time until it is spreadable.
  • In a separate bowl, repeat the process with the other two cups of heavy cream, the Vanilla Keto Chow, the other 1/4 cup of sweetener, and the vanilla extract.
  • Line the bottom of an attractive bowl or trifle dish with a layer of the lemon snap cookies. Spread the banana pudding over the cookies, then add another layer of cookies.
  • Top with the vanilla pudding.
  • Cover the dish with plastic wrap and refrigerate overnight.
  • When ready to serve, decorate with whipped cream, lemon curls, and mint leaves.

Instructions

  • Preheat oven to 325 F and prepare a cookie sheet by lining with parchment paper or tin foil.
  • Whisk together the Keto Chow, almond flour, and baking powder in a small mixing bowl and set aside.
  • Place the butter in a large mixing bowl and beat with an electric mixer until it is light and fluffy.
  • Beat in the sweetener, lemon zest and lemon extract.
  • When the sweetener is completely mixed with the butter, add the egg and mix well.
  • Add the dry ingredient mixture and mix on low until everything is completely combined.
  • Scoop balls of dough that are about 0.5 oz. (about two tsp.) each onto the prepared cookie sheet.
  • Bake for 10-12 minutes, or until the cookies have puffed slightly and are just beginning to turn golden around the edges.
  • Cool them completely and store in an airtight container or use them to make low carb lemon snap banana pudding.

Toasted Macadamia Cinnamon Vanilla Keto Chow Cooler

Inspired by a traditional horchata, this drink features toasted macadamia nuts, vanilla bean, and cinnamon stick, in a cool, creamy beverage that will keep you refreshed all summer long. There are a couple of steps to this recipe, but it is easy to make, and it is well worth the effort. This recipe makes two servings to get the most out of your vanilla bean and cinnamon stick.

Equipment

Ingredients

  • 2 ounces macadamia nuts or blanched almonds
  • 1 vanilla bean
  • 1 large cinnamon stick
  • 28 ounces water
  • 2 servings Vanilla Keto Chow (or 2 scoops)
  • 2-4 ounces heavy cream optional

Instructions

  • Spread the macadamia nuts on an ungreased cookie sheet and bake at 325 for ten minutes or until they begin to turn a golden color and smell fragrant. Remove them from the oven and set aside to cool slightly.
    Toasted Macadamia Cinnamon Vanilla Cooler
  • Split the vanilla bean in half lengthwise with a sharp paring knife. Scrape out the seeds with the edge of the knife.
  • Place the toasted nuts, the vanilla bean and its seeds, and the cinnamon stick in a pitcher or large mason jar.
  • Bring the water to a simmer and carefully pour it over the nuts, vanilla bean and cinnamon stick.
  • Leave the water mixture out on a counter until it has cooled to room temperature.
  • When it has reached room temperature and is no longer hot to the touch stir in the Vanilla Keto Chow, cover the container and refrigerate the whole thing overnight.
  • When the mixture has been refrigerated overnight, remove the split vanilla bean and the cinnamon stick and blend the rest of the ingredients in a blender until the nuts are completely pureed and it looks smooth and creamy.
  • Strain the blended liquid through a very fine strainer set over a pitcher or large jar.
  • Using the back of a spoon or a rubber spatula push the liquid through the strainer until all that’s left in the strainer is the nut meal. You can line the strainer with a couple layers of cheesecloth if you have it.
  • Discard the nut meal or save it to use in keto baked goods or hot cereal.
  • Taste your strained cooler and add heavy cream if desired.
  • Serve well chilled, over ice.

Notes

Note: If you don’t have vanilla beans you can substitute a teaspoon of pure vanilla extract. Add the extract after the hot water has cooled.
