Creamy, cool and elegant, this old-fashioned gelatin brings back memories of root beer floats on hot summer days. The carbonated water lightens the gelatin and adds a little sparkle to the root beer. Try cherry, vanilla or even lime soda water to add another layer of flavor to this creamy delight.

Ingredients

Instructions

  • Place the cold water in a small saucepan and sprinkle the gelatin over the surface.
  • Allow the gelatin to soften for a minute or two.
  • Place the pan over medium-low heat and heat while stirring until all the gelatin has dissolved and the mixture is hot but not boiling - about 190-200 degrees.
  • Add the sweetener and stir until completely dissolved.
  • Set the gelatin mixture aside to cool slightly.
  • Whisk or blend the Keto Chow, heavy cream, and one cup of the carbonated water together until there are no lumps remaining. Mix in the gelatin.
  • Gently stir in the rest of the carbonated water, being careful to keep as much carbonation in it as possible. Pour the mixture into your ring mold or an attractive serving bowl.
  • Cover and refrigerate overnight.
  • To serve, unmold onto a platter or serve in the bowl garnished with fresh whipped cream and berries if desired.

Summer is right around the corner and orange and vanilla is one of my favorite flavor combinations so I couldn’t resist making keto dreamsicles with my Orange Cream Keto Chow. The sour cream in this recipe gives the popsicles a little tang and the oil helps keep them creamy in the freezer.

Ingredients

Instructions

  • Combine all ingredients and blend until fully mixed.
  • Pour into popsicle molds and freeze overnight.
  • To unmold, briefly dip the outside of the popsicle molds in warm water and gently remove the pops.

Chocolate Dipped Banana Peanut Butter Keto Pops

When I was a kid, peanut butter and bananas was one of my favorite snacks. Well, I don’t eat bananas these days but I still love the flavor combination and when you add chocolate you’ve got an incredibly delicious treat that won’t throw you off your keto game. These pops are fun and delicious especially if you find yourself some banana shaped popsicle molds (https://amzn.to/2Yaqh1P) to freeze them in. But if you don’t feel like taking the time to freeze them, the mixture also happens to make the most delicious banana-peanut butter smoothie you can imagine.

Equipment

  • popsicle molds or small paper cups with popsicle sticks

Ingredients

  • 1 cup nut milk or coconut milk
  • 1/2 cup heavy cream
  • 1/4 cup creamy unsweetened peanut butter
  • 1 serving Banana Keto Chow (or 1 scoop)
  • 1 tablespoon granulated sweetener optional
  • 2 tablespoons coconut oil
  • 4 ounces chopped dark chocolate sugar free or at least 80% cocoa solids
  • 1/4 cup crushed roasted peanuts

Instructions

  • Combine milk, heavy cream, peanut butter, banana keto chow, and sweetener if you are using in a blender and blend until everything is fully combined and creamy.
  • Pour into popsicle molds and freeze overnight
  • When your popsicles are completely frozen, prepare the chocolate coating.
  • Melt the coconut oil in the top of a double boiler or in the microwave in a microwave safe container.
  • Add the chocolate and stir gently continuing to heat until all the chocolate is melted. Be careful not to stir it too much and keep the heat low or the chocolate may seize and get grainy and stiff.
  • Allow the mixture to cool down somewhat so it is still flowing but isn’t so hot that it will melt the popsicles.
  • Loosen the popsicles from their mold but do not unmold.
    Chocolate Dipped Banana Keto Chow and Peanut Butter Pops
  • Working quickly, one popsicle at a time unmold a frozen popsicle dip it in the melted chocolate or pour the chocolate over with a spoon. Sprinkle the chocolate coating with crushed peanuts while it is still soft.
  • Place the popsicle handle down in a cup or bowl that will hold it upright while the chocolate sets.
  • Repeat with the rest of the popsicles until they are all coated.
  • Once the chocolate has set you can serve them immediately or wrap them and return them to the freezer to serve one at a time.
  • You can also make a shake version if you want to skip using molds.

Instructions

  • Place the Keto Chow, almond flour, flax meal, coconut flour, baking soda, and cocoa powder in a large bowl and mix well.
  • In a separate bowl beat together the almond milk, olive oil, and vinegar.
  • Slowly pour the wet ingredients into the dry ingredients and stir together until everything is well mixed.
  • Stir in the caraway seeds.
  • Pour the batter into the greased loaf pan and spread out to even the top.
  • Bake at 325 for approximately 50 minutes until the loaf is brown around the edges and springs back when touched in the center.

  • In a large mixing bowl, blend together the coffee, sweetener, Keto Chow, and vanilla extract; mix in the mascarpone cheese.
  • In a separate bowl whip the heavy cream until it forms soft peaks.

  • Gently fold the whipped cream into the mascarpone cheese mixture.

  • Divide among six small serving dishes and sprinkle the top of each with cocoa powder.

Ingredients

  • 1 cup warm water

  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon ground black pepper
  • 1/4 cup grated Romano cheese
  • 1/4 cup grated parmesan cheese

Instructions

  • Mix the water, heavy cream and Keto Chow together blending until there are no lumps and set aside.
  • Melt the butter in a small saucepan.
  • Add the minced garlic and cook over low heat until the garlic is soft, fragrant and starting to turn golden. Don’t allow the butter or the garlic to brown.
  • Stir in the garlic powder, parsley, salt and pepper
  • Whisk or blend in the Keto Chow mixture and mix well
  • Cook over medium-low heat while stirring until the sauce starts to simmer.
  • Stir in the cheese.
  • Return to a simmer.
  • Taste and add more salt and pepper if you prefer.
  • Serve hot over your favorite low carb noodles or vegetables. Garnish with extra grated cheese and fresh parsley if desired.

Ingredients

  • 2 large eggs
  • 1 serving Savory Chicken Soup Keto Chow (or 1 scoop)
  • 1 cup almond milk
  • 1/2 cup heavy cream
  • 1/2 teaspoon sea salt

Instructions

  • Preheat oven to 350℉ and grease a 9 X 13 baking pan.
  • In a large mixing bowl, beat together the eggs, then add the Keto Chow, dry spices, milk, and heavy cream. Mix well until there are no lumps.
  • Stir in the riced cauliflower and 2 cups of the shredded cheese; reserve the remaining 1/4 cup.
  • Spread the mixture into the greased baking pan. Top with the remaining cheese.
  • Bake for approximately 35 minutes, or until the casserole is set and beginning to brown on the top.

Prepare Cookies

  • Prepare a cookie sheet by lining with parchment paper or aluminum foil
  • Place the oil, egg and sweetener in a large mixing bowl and whisk together.
  • Add the Keto Chow, cocoa powder, baking powder, and cinnamon and mix to combine.
  • The dough will should be soft and glossy when its fully mixed.
  • Stir in the chocolate chips.

  • Measure out eight evenly sized cookies onto the prepared cookie sheet. I use a small ice cream scoop for this.

  • Bake at 325 degrees for 10 minutes until the cookies are just beginning to brown around the edges but they are still slightly soft to the touch.

  • When they are done baking, allow then to cool completely. While the are cooling make the cream filling.

Filling and final prep.

  • Beat the butter with an electric mixer until it is light and fluffy. Beat the sweetener in a little at a time, on low speed. Add the vanilla extract and beat until everything is fully mixed and the cream begins to look stiff.
  • Spread a quarter of the filling on one cookie and top with another cookie. Continue until you have four cookie sandwiches.

  • Store the sandwiches in an air tight container in the refrigerator or individually wrapped in plastic.

Instructions

  • Melt the butter in a small pan over low heat, then stir in the sweetener, vanilla and salt.
  • Stirring constantly, cook the mixture until the sweetener melts and begins to bubble.
  • Allow it to cook for about one minute, while continuing to stir.
  • Carefully add the almonds and stir to coat them in the caramel mixture. Continue to cook over low heat until the almonds are toasted, and the coating looks like it’s beginning to dry.
  • Carefully transfer to a tray lined with parchment paper or aluminum foil and allow to cool completely.
  • When it has cooled completely, break it into small pieces.
