Ingredients

Instructions

  • Preheat the oven to 350℉ and line two baking sheets with parchment paper.
  • Place the sesame seeds in a small pie plate or shallow bowl.
  • In a large mixing bowl, combine the almond flour, Keto Chow, baking powder, and sea salt.
  • In a separate bowl, whisk together the sesame tahini and sugar-free syrup. Mix in the egg.
  • Add the wet ingredients into the dry ingredients and mix well. The dough will be soft and slightly sticky.
  • Scoop about two Tbsp. of dough (a #40 ice cream scoop works perfectly) and roll it into a ball.
  • Roll the ball of dough in the sesame seed dish to coat it. Set it on the prepared baking sheet and flatten slightly with the bottom of a glass or the palm of your hand.
  • Continue with the rest of the dough, spacing the balls at least an inch apart on the cookie sheets.
  • Bake for ten minutes, or until they are slightly puffed and golden on the bottom. Transfer to a cooling rack. Store in an airtight container in the refrigerator for up to a week.

Notes

*Mix well before measuring if the oil has separated.

Instructions

  • Preheat the oven to 350 degrees.
  • Add all ingredients to a food processor and blend until combined. Scoop onto a greased cookie sheet.
  • Bake at 350 degrees for 10-12 minutes.
  • Dust or glaze cookies.
  • Let cool for five minutes and dust with powdered erythritol.
  • To make the glaze, mix everything together with a fork and drizzle on cookies once they are completely cooled.

  • In a large mixing bowl cream butter and cream cheese with an electric mixer, whipping until light and fluffy.
  • Add the granulated and brown erythritols and beat until well combined, add the vanilla extract and mix, then add the eggs one at a time, beating after each addition, scraping down the bowl with a spatula to ensure everything is incorporated.
  • Add the dry ingredients to the bowl and mix until a slightly sticky dough has formed. Cover with plastic and chill for approximately 1 hour.
  • When ready to make the cookies preheat the oven to 350 degrees and line two cookie sheets with parchment paper.
  • Mix three tablespoons erythritol with apple pie spice and cinnamon in a small bowl.
  • Scoop approximately two tablespoons of dough – I used a #40 ice cream scoop - and roll into a ball, then place it in the erythritol-spice mixture and roll to coat well.
  • Place on a prepared cookie sheet and flatten slightly, continue with the rest of the dough placing eight cookies on each tray.
  • Bake in the preheated oven 13-15 minutes until the edges are firm and the tops are slightly puffed.
  • Allow the cookies to cool at least ten minutes before removing them from the tray. Cool completely and store in an airtight container for up to three days.

  • Preheat oven to 325F
  • Line a cookie sheet with parchment paper.
  • In a large mixing bowl whisk together the keto chow, almond flour, erythritol, cinnamon, nutmeg, and baking soda.
  • In a separate bowl whisk together the eggs, melted butter, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and stir to combine, stir in the almonds.
  • Shape the dough into a loaf approximately 8 inches long and 5 inches wide.
  • Place the loaf on the prepared tray and bake until golden around the edges and firm to the touch, but still slightly soft in the center, about 30 minutes.
  • Remove from the oven and cool until firm enough to slice, about 15 minutes. If it begins to crumble when you slice it, allow it to cool a few more minutes.
  • Slice into 1/2-inch-thick pieces.
  • Lower oven temperature to 250F
  • Arrange the sliced cookies on the cookie sheet and return to the oven to bake again until they are dry and crisp, about another 20 minutes.
  • Remove from the oven and cool completely, they will continue to crisp as they cool.
  • When they are completely cool, melt the white chocolate and dip one side of the biscotti in the chocolate, then decorate with sprinkles and nuts, place  in the freezer for 10 minutes to set the chocolate.
  • Store in an airtight container in a cool, dry place.

  • Place the chocolate in a microwave safe bowl and microwave in 10 second bursts until the chocolate is melted and can be stirred completely smooth.
  • In a medium mixing bowl, whisk together the keto chow, baking powder, salt, and cocoa powder.
  • In a large mixing bowl, beat together the erythritol, eggs, butter, and peppermint extract.
  • Mix the dry ingredients into the wet ingredients, then fold in the melted chocolate.
  • Cover and chill the dough for at least two hours.

  • Scoop the dough by tablespoons and roll into balls

  • Allow the cookies to cool slightly before transferring them to a cooling rack.
  • While they are still warm, sift the powdered erythritol over them.
  • Store cookies in an airtight container in the fridge for up to a week.

Instructions

  • Preheat oven to 350℉ and grease a or line a baking sheet.
  • Cream together pumpkin, egg, and sweetener.
  • Add in the Keto Chow, cinnamon, pumpkin spice, coconut flour, and baking powder. Mix well.
  • Form twelve dough balls, each approximately two Tbsp. of cookie dough, and place on prepared baking sheet. Use a spoon to make a divot on the top of each one.
  • Bake for 15 minutes. Cool for five minutes before frosting.
  • To make the frosting, add the cream cheese, butter, and erythritol to a glass bowl and soften in the microwave for 15-20 seconds. If the ingredients are still too stiff, microwave again in 10-second intervals until softened. Stir with fork until smooth.
  • Pipe onto each cookie (you can do this while still warm). Dust with cinnamon or pumpkin spice if desired.
  • Store in an airtight container in the refrigerator for up to three days.

  • 1/2 cup heavy cream
  • 2 tbsp confectioners sweetener
  • 1 tsp vanilla

Instructions

  • Preheat the oven to 350 degrees.
  • With a mixer, cream butter and sweetener together on medium speed and then add eggs. Mix until combined.
  • Add baking soda and Keto Chow and on medium speed, mix until creamy.
  • Scoop one tablespoon balls onto a greased baking sheet, leaving an inch between.
  • Bake at 350 degrees for 10-12 minutes. Pull out of the oven and cool for 5 minutes and then place the pan of cookies in the freezer for 20 minutes.
  • While cookies are cooling, add filling ingredients to a mixing bowl and whip on high speed until stiff peaks form.
  • Pipe filling into cooled cookies and place another cookie on top to make a sandwich.
  • Cover with plastic wrap and place in the freezer for at least 6 hours.

Instructions

  • Soak pistachios in water for 20 minutes.
  • Combine butter, sweetener and egg with mixer on low speed. Add keto chow and almond flour and mix until well combined.
  • Blot dry pistachios with a paper towel and add into batter. Mix thoroughly.
  • Scoop onto plastic wrap and form into a cylinder with your hands and the wrap. Finish wrapping and refrigerate for at least two hours or even overnight.
  • Preheat oven to 350 degrees.
  • Remove plastic wrap and slice into 16 by cutting in half and those halves in half again until you have 16 slices. Place sliced cookies onto parchment paper on a cookie sheet.
  • Bake at 350 degrees for 15 minutes. Allow to cool.
  • You can leave as is or if you want to get fancy you can dip the ends in chocolate and add crushed pistachios or coarse sea salt.*

Notes

*For some festive Halloween fun, turn these cookies into little Frankensteins! Once the cookies are cooled, melt dark chocolate in 20-second intervals, stirring in between so it doesn't seize. Place in a piping bag and decorate with hair, facial features, and stitches as desired. White chocolate may be used with the same melting method to add other details.

For some festive Halloween fun, turn these cookies into little Frankensteins! Once the cookies are cooled, melt dark chocolate in 20-second intervals, stirring in between so it doesn’t seize. Place in a piping bag and decorate with hair, facial features, and stitches as desired. White chocolate may be used with the same melting method to add other details.

Instructions

  • Preheat the oven to 350 degrees.
  • With an electric or stand mixer on high speed, beat egg whites to soft peaks and then add vanilla. Continue beating to stiff peaks.
  • Add in the confectioners sweetener and keto chow and then fold mixture with spoon or rubber spatula until it’s nice and creamy. It will limp together at first, just keep stirring. It will reduce down a lot by folding which is ok.
  • Add to piping bag and pipe circles onto a cookie sheet lined with parchment paper. Bake at 350 degrees for 15 minutes.
  • Allow cookies to cool for at least 30 minutes. They will harden as they cool.

Higher Altitude Instructions:

  • With an electric or stand mixer with whisk attachment on high speed, beat egg whites to soft peaks and then add vanilla. Continue beating to stiff peaks.
  • While the mixer is still whipping on high, add in the confectioners sweetener a little bit at a time and mix thoroughly between additions. Using the same method, add keto chow a bit at a time. The mixture will reduce down some, but let it keep whipping on high until fully mixed. Make sure to continue whipping while adding sweetener and keto chow. Only stop to scrape the sides once or twice.
  • Add to a piping bag and pipe circles onto a cookie sheet lined with parchment paper. Bake at 350 degrees for 15-20 minutes. Cookies should be golden brown and puffed.
  • For a crisper cookie, lightly oil a foil lined cookie sheet and pipe cookies onto the foil.

  • Preheat oven to 350 degrees.
  • Blend butter, eggs, and erythritol, mixing well. Add sour cream and mint extract.
  • Mix in baking soda, coconut flour, and Keto Chow, starting on a low speed to not make a mess with the dry ingredients.
  • Mix in chocolate chips. This is best done by hand so you don't break them up.
  • Use a large cookie scoop to shape cookies and place them on a greased baking sheet or silicone mat/parchment paper.
  • Bake for 12-14 minutes until the edges are barely golden brown.
