Banoffee Pie Parfaits

Banoffee Pie is a popular British dessert made with luscious layers of toffee, bananas, and whipped cream. Although there are a few steps to this recipe it comes together easily.

Equipment

  • electric mixer, vegetable peeler

Ingredients

Cookie Crumb Layer

  • 1 cup fine almond flour (3 oz.)
  • 2 Tbsp. salted butter
  • 1 Tbsp. brown erythritol blend

Toffee Layer

Banana Layer

Whipped Cream Topping

Instructions

  • Start with the cookie crumb layer by melting the butter in a medium nonstick skillet, over low heat. Add the almond flour and cook, stirring regularly until the flour starts to brown lightly and smell fragrant.
  • Sprinkle the brown erythritol blend over the almond flour and stir well. Transfer to a heatproof dish and set aside to cool.
  • When cool, place two Tbsp. of the crumb mixture on the bottom of six serving bowls or glasses.
  • To make the toffee, melt the butter over low heat, add the sweetener, and stir until dissolved.
  • Add the heavy cream and vanilla extract to the butter and whisk to combine. Heat until bubbles start to form at the edge of the pan. Stir again and remove from the heat.
  • Allow the mixture to cool slightly, then whisk in the Chocolate Toffee Keto Chow until fully dissolved. The mixture will begin to thicken. While it’s still warm, pour 1/4 cup of the toffee over the crumb layer in each dish and gently smooth to even.
  • Place in the refrigerator to chill while you make the banana layer.
  • To make the banana layer, combine the heavy cream, almond milk, Banana Keto Chow, and powdered erythritol in a large mixing bowl. Beat with an electric mixer until the Keto Chow is fully dissolved and the mixture has increased in volume and holds stiff peaks.
  • Spread 1/4 cup of the banana mixture over the toffee layer in each dish.
  • Make the whipped cream. Place the heavy cream, powdered erythritol, and vanilla extract in a large mixing bowl. Beat with an electric mixer until the mixture holds stiff peaks.
  • Place two Tbsp. of the whipped cream on top of the banana layer in each cup.
  • Shave the edge of the piece of chocolate with a vegetable peeler or grater to make chocolate shavings.
  • Sprinkle about half a tsp. of the shavings over the whipped cream in each dish.
  • Chill parfaits in the refrigerator for at least 30 minutes before serving.
  • Store the parfaits covered in the refrigerator for up to three days.

Ingredients

CAKE:

TOFFEE SAUCE:

  • 1/4 cup unsalted butter
  • 1/2 cup heavy whipping cream
  • 1/4 cup brown erythritol

Instructions

  • Preheat oven to 350°F and grease four 4-ounce ramekins and place them on a cookie sheet.
  • In the bottom of each ramekin, add 1/2 tablespoon butter and 1/2 teaspoon brown erythritol.
  • With a stand mixer using the paddle attachment, cream the softened butter with the brown sweetener and vanilla.
  • While continuing to mix, add in eggs one at a time. Add the coconut flour, cocoa, baking powder, and Chocolate Toffee Keto Chow. Mix on low speed until combined.
  • Add 1/2 cup of batter into each ramekin.
  • Bake at 350°F for 30 minutes or until a toothpick inserted comes out clean.
  • To make the toffee sauce, melt the butter over medium heat in a medium saucepan.
  • Carefully pour in the heavy cream.
  • In the middle of the pan, add the sweetener and the vanilla. Do not stir. Let sit for 2 minutes so the sweetener will melt. (Waiting to stir prevents crystals of sugar on the sides, making a smoother sauce.)
  • Once the sweetener has melted, stir and turn off heat.
  • Run a butter knife around the ramekin to release the cooked cake from the sides. Turn the cake onto a serving plate and spoon toffee sauce over the cake. Best served right away while warm!

Follow Directions!

I was a little nervous because I read some of the bad reviews, but was determined to give it a try from all the rave reviews. And after trying a few of the flavors so far I have liked them all, and I didn’t find any of the detractions the negative reviews had complained of. My conclusion is that the negative reviewers must not have follow the instructions properly. Definitely use 14oz of WARM water with your fat and powder mix. Use a higher amount of fat to start, especially if you are just starting out keto. And an absolute must to refrigerate overnight. I know you are excited when you get the package in, but it needs that refrigerator time to let the flavor bloom and texture to creamify(yes, I made up that word). It probably would hurt to use a blender, the blender bottle is ok, but not great. The blender bottle is the only thing that didn’t work well in the sample pack.

Never felt full from a shake before this

I have tried many shakes protein drink and this one makes me feel full and no bloated full either. I love the flavors, not sure what’s is my favorite yet. I live that I can add my own amount of fat vs someone telling what is perfect for my body. Love this stuff worth every penny, high recommend the shaker bottle or something like it to blend the product with.

Fabulous!

This shake exceeded my expectations. It was flavorful without the horrible aftertaste that you normally have with sugar substitutes, I chose to make mine with heavy cream and couldn’t be happier. The shake is very thick and delicious, I have one either for breakfast or lunch and it holds me until the next meal, sometimes I actually have a hard time drinking it all as I get very full. Some of the flavors I add to my morning coffee, so yummy! We have been doing Keto for about 4 months now, I lost 10 lbs but then that was it, I knew I was doing something wrong so I tried these, I placed a huge order after finding that we enjoyed them, I finally moved from my plateau and started losing again. I do t think I was eating enough actually, so this helps get in the calories I need.

Game changing!

I finally decided to give Ketochow a try – I had used other shakes and shake mixes but when the Lemon flavor was released I knew I needed to try Ketochow – I love this stuff – all the flavors are good, some I personally like better than others. I really hope the lemon is a forever flavor because I would drink that every day. I love that you can use different fats and they change the flavor. My favorite is 3OZ of cream cheese with the lemon – and my second is the salted caramel and heavy cream. I also enjoy the FB page and all the videos – so many fun recipes to try and I love the SCIENCE behind this product!

Love this stuff – every flavor is good, some are excellent. I love that there are samples so you can try different flavors affordably. Less than $5 for a meal is a bargain and I stay full for hours which is awesome. The shipping is so fast too – 3-4 days to the east coast from when I placed my orders is awesome. Make Lemon a big bag and I will order several!!

Unbelievable!

The flavors are amazing especially with melted butter. No grit, smooth texture totally made me full for 3 hours between my breakfast shake & lunch shake & my regular keto dinner. This is by far better than those nasty 310 shakes. I enjoy the fact that I can make shakes ahead and they last up to 6 days in the fridge, that is a game changer for busy people. I’m definitely sticking with my keto chow, Yum!

Easy meal prep, Fantastic taste

Can’t go wrong with any of the chocolate varieties, Cookies and cream satisfies that oreo craving, Orange Cream? Yeah baby. The only flavor im not big on is banana,But i despise artificial banana flavoring to begin, If you like the little banana candies, You’ll probably like it. But seriously, If the flavors sound good to you, They won’t disappoint.

What amazes me about this company is the amount of resources and support they provide for those new to the Keto diet. The shakes are filling and the variety of flavors is great. They can be a bit salty if you don’t add enough liquid, but that is easily remedied. I have just ordered 21 more packets because I’ve found this to be a great lunch option, instead of doing all the work of planning and cooking twice a day! And I’ve stopped needing to take keto supplement pills since this has the needed electrolytes and minerals in it as well! The cost per pack is less than it would cost you to order or make most keto meals.

I was so skeptical, y’all. I thought it was expensive. I thought it was weird that the directions said it was best to make it the day before. As a new customer of your product I ordered 2 identical sample bundles so my husband and I both can try the same ones. We tried our first shake this afternoon, mocha. I made them the night before as directed and used the HWC. I was very thick, smooth and not too sweet. I am very full, although my husband agreed with my discription, he said he wasn’t full. We did eat a little later than normal. I order these to give us a break from eggs! I have had other nonzero protein drinks this is so far the best tasting one yet. I will definitely will be buying more!

I really love Keto Chow

Review: FIVE STARS without a doubt. This is the only meal replacement shake I have ever thought was good. And this one is actually great. It definitely qualifies as a meal, and they are all delicious! My favorite flavors are chocolate peanut butter, chocolate, chocolate toffee, the new lemon meringue, pumpkin caramel… I pretty much like them all, including vanilla – either plain or I add some peppermint extract. I have been ordering Keto Chow for a while now and I am extremely happy with both the product, and the integrity of this company. In fact as I write this I am drinking chocolate with my peppermint extract added – picture included for proof! :)

Pleasantly Surprised and Excited!

I’ve wanted to try a keto diet for a couple of years, but knew the meal prep, macro-counting, and everything else was out of my wheelhouse. I needed a simpler solution. I ordered this sampler pack b/c I was skeptical about the flavor and whether or not I could stomach drinking a shake for meals at least twice a day. Four of six flavors in, every one has been surprisingly delicious, and I feel FULL! The first one I only refrigerated for 30 mins… I’d definitely recommend when it’s much colder. It wasn’t bad… but it wasn’t at it’s “full potential”.

I want to try a few more flavors (especially the savory ones… still a little skeptical on those, but I was WAY wrong on the first group). I’m a little discouraged that I have to commit to 21 pouches of just one flavor in order to get a reasonable price. It’d be nice if I do like 21 pouches split into 3 flavors of my choice.

TBD on whether the diet itself works for me, but I’m excited to try!

Ingredients

CHOCOLATE TOFFEE BROWNIE

  • 1/2 cup butter
  • 2 eggs
  • 1/4 cup granular sweetener
  • 1 serving Chocolate Toffee Keto Chow (or 1 scoop)
  • 1/4 cup unsweetened vanilla almond milk
  • 1/4 cup Lily's Chocolate Chips

CHEESECAKE

  • 8 oz cream cheese
  • 1 egg
  • 1/2 tsp vanilla
  • 2 tbsp granular sweetener
  • 1/4 tsp lemon juice

Instructions

  • Using a mixer, blend butter, eggs, and sweetener together until well mixed. Turn speed to low and add Keto Chow. Add almond milk and blend well. Mix in Chocolate Chips.
  • Place half the brownie mixture on the bottom of the 8x8" greased pan.
  • Place cream cheese in a bowl and stir/mix until smooth and creamy texture. Add all remaining ingredients together and stir/mix until smooth. Room temperature cream cheese works best.
  • Pour cheesecake mixture on top of brownie. Then dollop the left over brownie mixture on top of cheesecake. I used a knife to blend together slightly by going back and forth one direction 6-8 times then 6-8 times in at a 90 degree turn (think T shape). Bake at 350 for 30 to 35 minutes. Best a little undercooked. Even better the next day.

Ingredients

Instructions

  • Preheat oven to 325 degrees and grease your baking pan with a thin amount of ghee or butter.
  • In a small bowl, whisk together Keto Chow, almond flour, baking powder and salt,

  • In a large bowl, beat egg whites until frothy. Beat in sweetener and cocoa powder until smooth. Then beat in melted butter, cream and vanilla.

  • Beat in the almond flour mixture until well combined. This will get thick so I recommend changing to a fork instead of a whisk.

  • Spread batter onto greased pan into a thin layer.

  • Sprinkle crushed walnuts on top and press into the batter gently.
  • Bake 18 minutes, until puffed and set. Remove from oven, turn oven off and let cool 15 minutes.
  • Use a sharp knife or pizza wheel to cut into squares, but don't separate. Return to warm oven for 5 to 10 minutes to crisp up slightly.

  • 2 Tbsp Lakanto suntella or any nut butter; pili nut butter works great
  • 1 ounce coarsely ground pecans

Instructions

Crust

  • Preheat oven to 325 degrees. Combine all ingredients in bowl.

  • Press ingredients into bottom of 8" springform pan.

  • Bake in 325 degree oven for 10-15 minutes until edges begin to brown.

  • Remove from oven and place in fridge to cool.

Filling

  • Bring cream cheese and eggs to room temp. With a hand mixer, combine Lakanto sweetener and cream cheese until smooth

  • Add eggs, almond milk, sour cream, and Keto Chow. Combine well but don't overmix or you will add air to mixture.

  • Pour filling into crust and lightly tap pan on counter to remove air bubbles.

  • Bake at 325 degrees for 50 minutes or until edges begin to brown and center 2" is slightly jiggly. (DONT OVERCOOK or it will crack.)

  • Cream together butter, eggs, and erythritol.

  • Add cocoa and Keto Chow and mix well.

  • Add to an 8X8 pan lined with parchment and grease.

  • Bake on 350 degrees for 20 minutes.

Topping

  • While brownies are baking, melt butter over medium high heat.
  • Once boiling stir frequently until it turns amber to make brown butter.

  • Remove from the heat and add chocolate chips.
  • Stir until the chips melt completely.

  • Cool chocolate toffee sauce in the fridge for 5 to 10 minutes and then drizzle over brownies and let it set for about 30 minutes, you can refrigerate to set the toffee chocolate sauce faster if you wish.

Why is this fudge magic? Because it’s ridiculously easy to make, super ketogenic, and rich and delicious enough to crush any chocolate craving. It mixes together in just a couple minutes and is easy to keep on hand stored in the freezer. You can also soften it to room temperature to use as a frosting or spread. Instructions

  • Blend the butter and almond butter together with an electric mixer or wooden spoon.
  • Add the keto chow and cocoa powder and mix until fully blended.
  • Taste and add additional sweetener if you want a sweeter fudge.
  • Fill silicon candy molds or a small square container with the fudge mixture and place in freezer to chill until firm.
  • Pop the fudge pieces out of the silicone candy molds or cut into small pieces if you chilled it in a container.
  • Store in an air tight container or plastic bag in the freezer.

  • Scoop onto parchment paper.
  • Bake at 350 degrees for 8 minutes.

Notes

You can use solid coconut oil in place of butter and add more sweetener for taste (It cuts the salt more).
