Banoffee Pie Parfaits

Banoffee Pie is a popular British dessert made with luscious layers of toffee, bananas, and whipped cream. Although there are a few steps to this recipe it comes together easily.

Equipment

Ingredients

Cookie Crumb Layer

  • 1 cup fine almond flour (3 oz.)
  • 2 Tbsp. salted butter
  • 1 Tbsp. brown erythritol blend

Toffee Layer

Banana Layer

Whipped Cream Topping

Instructions

  • Start with the cookie crumb layer by melting the butter in a medium nonstick skillet, over low heat. Add the almond flour and cook, stirring regularly until the flour starts to brown lightly and smell fragrant.
  • Sprinkle the brown erythritol blend over the almond flour and stir well. Transfer to a heatproof dish and set aside to cool.
  • When cool, place two Tbsp. of the crumb mixture on the bottom of six serving bowls or glasses.
  • To make the toffee, melt the butter over low heat, add the sweetener, and stir until dissolved.
  • Add the heavy cream and vanilla extract to the butter and whisk to combine. Heat until bubbles start to form at the edge of the pan. Stir again and remove from the heat.
  • Allow the mixture to cool slightly, then whisk in the Chocolate Toffee Keto Chow until fully dissolved. The mixture will begin to thicken. While it’s still warm, pour 1/4 cup of the toffee over the crumb layer in each dish and gently smooth to even.
  • Place in the refrigerator to chill while you make the banana layer.
  • To make the banana layer, combine the heavy cream, almond milk, Banana Keto Chow, and powdered erythritol in a large mixing bowl. Beat with an electric mixer until the Keto Chow is fully dissolved and the mixture has increased in volume and holds stiff peaks.
  • Spread 1/4 cup of the banana mixture over the toffee layer in each dish.
  • Make the whipped cream. Place the heavy cream, powdered erythritol, and vanilla extract in a large mixing bowl. Beat with an electric mixer until the mixture holds stiff peaks.
  • Place two Tbsp. of the whipped cream on top of the banana layer in each cup.
  • Shave the edge of the piece of chocolate with a vegetable peeler or grater to make chocolate shavings.
  • Sprinkle about half a tsp. of the shavings over the whipped cream in each dish.
  • Chill parfaits in the refrigerator for at least 30 minutes before serving.
  • Store the parfaits covered in the refrigerator for up to three days.

  • Popsicle Molds

Ingredients

  • 1/2 cup heavy cream or coconut cream
  • 1 serving Banana Keto Chow
  • 1 1/4 cup water, room temperature
  • 1 Tbsp. fresh lime juice
  • 2 tsp. orange zest (zest of 1 orange) or 1 tsp. orange extract
  • 1 tsp. rum extract

Instructions

  • Blend the heavy cream, water and Keto Chow with a whisk or immersion blender until the Keto Chow is completely dissolved.
  • Add the lime juice, orange zest, and rum extract and mix until combined.
  • Pour the mixture into popsicle molds and place in the freezer.
  • Freeze at least four hours, or until popsicles are completely frozen.
  • To unmold popsicles, dip the molds in very hot water just until the popsicles loosen.
  • Store in the freezer for up to three months.

Still the best

Other big brands are finally jumping on the Keto bandwagon. I’ve tried the Slim-Fast and others and they aren’t as tasty and lack the complete nutrition.

I have have been on Keto Chow before the subscription system and this is a great addition. It’s cheaper than Amazon especially with the new rewards points.

Keto Chow is still hands down the best.
My favorite flavors are snickerdoodle & chocolate. I tried strawberry & banana so I could make a variety of flavor mixes but for my palette (which is admittedly terrible) the flavors did not come through. So I’m going back to my old stand-by but I encourage you to try! I might be brave and try some hot flavors next!

Keto chow has been so helpful in getting me started on this journey. The sample pack with the blender bottle made it easy. All of the flavors have been very good, with the exception of vanilla. Sorry, y’all, that one was a miss for me. Ordering samples of other flavors and a big bag of chocolate and salted caramel now!

Love all these flavors except vanilla, (just personal preference not bad) for years i haven’t eaten breakfast for years now because never have time and always made me feel sick but since doing keto these are my go to every morning make it up in the night grab it in the morning and take it with me. JUST TRY IT

I was skeptical, given how awful most protein shakes still taste, even in 2020; however, Keto Chow is legit. I don’t like the vanilla, and the strawberry and chocolate are just OK, but the gourmet/exotic flavors are all really delicious. It feels more like a decadent treat/milkshake than nutrition, but I think that’s the point. Anyway, I’m a happy enthusiast now, so give it a shot and make sure you use the blender bottle, HWC, and enough water for it to taste right.

I liked it so much I bought the big bags of pumpkin spice and chocolate peanut butter and the essential minerals! I am a huge fan of Dr Berry, Neisha, and the two krazy ketos! Even better than expected!

If I am honest most keto substitutes are not as good as the non keto versions. That is NOT the case with KetoChow! I could honestly say that I would drink these even if I wasnt doing a keto diet. So far my favorites are the pumpkin spice, salted caramel, and chocolate toffee. I have read alot about putting them in the fridge for a few hours or overnight, but I really enjoy them right after making them. There is a little salty/sweet thing going on.

Definitely a win

I first ordered the starter pack and some extra samples. Some were very good, others not so much. You have to find the flavors that are right for you! My husband LOVES the eggnog. We ordered bulk bags of chocolate, strawberry, and cookies and cream. I drink one shake mid morning and I’m good til dinner. They make me feel pretty energized too. Pleasantly surprised

So I’ve been using other keto meal replacement shakes and they were not that great. I ordered these because I saw one of the commercials and thought hey a starter pack couldn’t hurt. To scoop out just the rich cream for this recipe, I place a can of coconut milk in the freezer for about ten minutes.

Ingredients

  • 1/2 cup frozen strawberries (3 ounces)
  • 1/3 cup plain, whole milk yogurt
  • 1/3 cup coconut cream cold
  • 1 serving Banana Keto Chow (or 1 scoop)
  • 2-3 ice cubes
  • 2 tbsp almond milk plus more as needed
  • fresh or frozen berries, nuts, seeds, coconut, hemp hearts, or sugar free chocolate chips as desired, for topping and decorating your bowl

Instructions

  • Place strawberries, yogurt, coconut cream, Banana Keto Chow, ice cubes, and almond milk in a blender. Cover and blend until the mixture is smooth but still thick enough to eat with a spoon.
  • If the mixture is too thick to blend add almond milk a tablespoon at a time until the mixture blends.
  • Pour into a bowl and decorate with your selected toppings.

Blueberry muffins are back and better than ever! I love blueberry muffins but adding berries to low-carb baked goods can cause them to become soggy. I finally found a solution; a small number of freeze-dried berries add all the flavor and color of fresh berries but instead of adding more moisture to the mix, they actually help absorb moisture.

Instructions

  • Oil the donut molds well and arrange them on a baking sheet.
  • Preheat the oven to 350 degrees Fahrenheit.
  • Beat the eggs in a large mixing bowl, add the sour cream, melted butter, and erythritol and blend together.
  • Add the Keto Chow, coconut flour and baking soda and mix into the egg mixture. Stir in the freeze-dried blueberries.
  • Divide the batter among the prepared donut molds filling up the molds so that the batter lightly covers the center of donut mold. This will result in a muffin top when the donuts rise in the oven.
  • Bake until the donuts are golden-brown and spring back when lightly touched, about 25 minutes.
  • Transfer them to a cooling rack and allow to cool completely.
  • Serve warm or cold.

Notes

Baking these muffin/donut hybrids in donut molds helps them bake through faster and keep their crown. You can serve them toasted and buttered or topped with your favorite icing. If you have blueberry extract you can add a couple of drops to this and your muffins will smell like they’re fresh from your favorite bakery.
