Decadent, yet rich chocolate cream dessert. This recipe from Joe Stauffer at 2 Krazy Ketos is a cross between a no bake cream cheese and chocolate mousse.

Ingredients

Pie Crust - Enough dough for 2 shallow dish pie pans or one deep dish pie.

Filling

Instructions

Pie Crust

  • Combine coconut flour, xanthan gum, and erythritol into a bowl
  • Add eggs and vanilla extract and mix well.
  • Cut butter into small pieces and add to pie mixture; blend until smooth. You want the butter to be well mixed in; the crust mixture should not be chunky from the butter.
  • Wrap in plastic and chill in fridge for at least 1-2 hours.
  • Preheat oven to 350 degrees. Using parchment paper top and bottom, roll out the crust with a rolling pin to an approximately 12" circle.
  • Remove top parchment paper and place into a well-grease 9" standard depth pie pan and poke holes in the bottom with a fork. Cut any excess crust from around the edges and use excess to fix any cracks that may have occurred while placing the crust into the dish.
  • Bake in oven at 350 degrees until crust begins to brown, about 10 minutes.

Chocolate Filling

  • In a bowl, whip heavy cream until it forms stiff peaks. It should double in size so that you have 2 cups. Place in the fridge while you work on the next step.
  • Combine cream cheese and mascarpone cheese until well blended.
  • Add in Chocolate Keto Chow, allulose, stevia, and almond milk. Mix until smooth.
  • Gently fold whipped cream into the cream cheese mixture and blend until smooth.
  • For assembly, take the chilled pie crust and fill with chocolate cream filling.
  • Gently shave a small piece of dark chocolate across the top.
  • Place in freezer to chill so that it's easier to slice.

Notes

This recipe will work with any sweet flavor of Keto Chow.
To make it easier to slice, place the finished pie in the freezer.

Ingredients

  • 8 tbsp salted butter room temperature
  • 1/3 cup Lakanto granular golden monk fruit or any golden erythritol
  • 2 eggs room temperature
  • 1 tsp vanilla extract
  • 10-20 drops liquid Lakanto extract can substitute stevia
  • 1 serving Salted Caramel Keto Chow (or 1 scoop)
  • 3 1/2 tbsp coconut flour
  • 2 tsp baking powder
  • 1/4 tsp Redmond real salt
  • 1/4 cup Lily's chocolate chips

Instructions

  • Bring eggs and butter to room temperature.
  • Preheat oven to 350 degrees.
  • In a bowl, cream butter and golden monk fruit until well combined. Add in eggs, vanilla extract and liquid sweetener.
  • In a separate bowl, combine coconut flour, Keto Chow, baking powder and salt.
  • Add dry ingredients to the butter mixture and combine well. Fold in chocolate chips.
  • Bake at 350 degrees for 10-13 minutes, until edges begin to brown.
  • Allow to cool before handling.

Ingredients

  • 2 pounds chicken, cut into pieces (use chicken thighs)
  • 1 tbsp avocado oil
  • 6 oz full fat cream cheese room temperature & cut into chunks
  • 1 serving Savory Chicken Soup (or 1 scoop)
  • 1/2 cup heavy whipping cream
  • 1 tsp garlic powder
  • 1 tsp redmond real salt
  • 1/2 cup water
  • 1 1/2 cups broccoli
  • 1 1/2 cups cauliflower
  • 1 cup cheddar cheese shredded

Instructions

  • Preheat oven to 350 degrees
  • Cut chicken into pieces
  • In a large skillet, add 1 tbsp of avocado oil and cook chicken until no longer pink
  • Add in cream cheese and mix until cream cheese is melted.
  • Add Keto Chow, heavy cream, water, garlic powder and salt. Combine well. If the mixture is too thick, add a little more water.
  • Stir in 1/2 cup of shredded cheddar cheese
  • Cover the bottom of a 9x13 casserole dish with broccoli and cauliflower. Pour chicken mixture over top. Spread an additional 1/2 to 1 cup of cheese across the top.
  • Bake in a 350 degree oven for 20-25 minutes, until the cheese begins to brown.

Sarah NOTES: I mixed the keto chow, heavy cream, water, garlic powder, and salt in a separate bowl with an immersion blender and then mixed into the chicken and cream cheese. Shredded cheese was then stirred in.

Eggnog Cannoli Cupcakes

A twist on eggnog and cannoli. Joe Stauffer from 2 Krazy Ketos made an eggnog flavored cupcake and then filled each one with an eggnog cannoli cream.

Ingredients

Cupcakes

Cannoli Filling

  • 1/2 cup ricotta cheese (undrained)
  • 1/2 cup mascarpone cheese
  • 1/4 cup heavy whipping cream
  • 1 serving Eggnog Keto Chow (or 1 scoop)
  • 1/4 cup allulose
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp liquid stevia

Instructions

Cupcakes

  • Preheat oven to 350F.
  • In a bowl, combine all dry ingredients.
  • Beat in eggs, butter, and stevia.
  • Blend until smooth. Allow mixture to sit for 5 minutes so the coconut flour absorbs any excess moisture.
  • Scoop into 8 cupcake molds.
  • Bake at 350F for 20 minutes or until they pass the toothpick test.
  • Allow to cool before frosting.

Cannoli Cream

  • Using a high speed mixer, beat together mascarpone and ricotta cheese.
  • Once well combined, add Keto Chow, cinnamon, allulose, nutmeg, and stevia. Combine well.
  • Add in heavy whipping cream as you continue to mix.
  • Allow to chill in the fridge until ready.
  • Once cupcakes are cool, using a pastry bag and tip, squeeze some cannoli cream into each cupcake. With the remaining cream, top each cupcake like a frosting.

Notes

Usually when making cannoli cream, people drain the ricotta in a cheesecloth. DO NOT do that with this recipe. The Keto Chow will remove all the excess moisture. If you drain the ricotta, you will get a very dry, clumpy cream.
Depending on the time of year, you can use any flavor of Keto Chow.

Ingredients

  • 6 slices bacon
  • 1 1/2 lb. 80/20 ground beef
  • 1 1/2 lb. ground pork (can be substituted with additional ground beef)
  • 1 medium sweet onion diced
  • 2 medium green bell peppers diced
  • 2 tsp. minced garlic
  • 3 cups organic beef stock
  • 2 Tbsp. chili powder
  • 4 tsp. ground cumin
  • 2 tsp. salt
  • 1 tsp. ground pepper
  • 1/2 tsp. cayenne pepper
  • 30 drops liquid monk fruit or stevia optional
  • 2 servings Creamy Tomato Basil Keto Chow (or 2 scoops)

Instructions

  • Heat up a large cast iron pot or Dutch oven on medium heat.
  • Dice bacon and add to pot with coconut oil. Cook until fat is rendered but don't overcook; the bacon should still be soft.

  • Add ground beef and ground pork and cook most of the way through. Break meat into small pieces.

  • When meat is mostly cooked, add the pepper, onion and garlic. Allow to simmer until soft.

  • Add all spices, Keto Chow, and beef stock. Stir to combine. Add monk fruit or stevia, if using.
  • Turn heat to low and cover the pot. Allow to simmer for 1 hour. For a thicker chili, simmer with lid off for at least 30 minutes.

Ingredients

  • 2 Tbsp Lakanto suntella or any nut butter; pili nut butter works great
  • 1 ounce coarsely ground pecans

Instructions

Crust

  • Preheat oven to 325 degrees. Combine all ingredients in bowl.

  • Press ingredients into bottom of 8" springform pan.

  • Bake in 325 degree oven for 10-15 minutes until edges begin to brown.

  • Remove from oven and place in fridge to cool.

Filling

  • Bring cream cheese and eggs to room temp. With a hand mixer, combine Lakanto sweetener and cream cheese until smooth

  • Add eggs, almond milk, sour cream, and Keto Chow. Combine well but don't overmix or you will add air to mixture.

  • Pour filling into crust and lightly tap pan on counter to remove air bubbles.

  • Bake at 325 degrees for 50 minutes or until edges begin to brown and center 2" is slightly jiggly. (DONT OVERCOOK or it will crack.)

  • When done, turn oven off and crack open door for 10 minutes.
  • After 10 minutes, gently run a knife around edge and close oven door. Allow to cool for another 30 minutes.
  • Remove from oven and drizzle 1 tablespoon of suntella (or other nut butter) across top.

  • If desired, sprinkle coarsely ground pecans over top and then drizzle over suntella or nut butter.

Notes

Place in fridge and allow to cool for at least 4 hours.
