  • Prepare an ice cream mold or loaf pan by lining with plastic wrap or waxed paper.

  • With an electric mixer, beat the cream until it starts to thicken. When it begins to look like melted ice cream, slowly add the Keto Chow and sweetener.

  • Continue to whip the cream until it holds stiff peaks.

  • Fold in the candied almonds.

  • In a separate bowl, beat the egg whites until they are stiff but not dry. Be sure the bowl and beaters are very clean and there isn’t even a drop of egg yolk in the whites or the whites will not whip successfully. You can wipe the bowl and the beaters down with white vinegar to ensure they are clean.

  • Gently fold the whipped egg whites into the Keto Chow mixture.

  • Spoon the mixture into the prepared ice cream mold or loaf pan and wrap tightly with plastic wrap.

  • Freeze overnight.
  • Unmold the loaf onto a serving dish and slice to serve.

  • Preheat oven to 350℉ and line a standard muffin tin.
  • Place the eggs, oil, and erythritol in a large mixing bowl and whisk together.
  • Add the Keto Chow, almond flour, flax seed, coconut flour, baking soda, cinnamon, and allspice.
  • Mix in the almond milk, vinegar, and vanilla extract, then add in the nuts or seeds.
  • Allow the batter to rest 2-3 minutes, then divide evenly in the prepared muffin tin.

  • Preheat oven to 350℉ and line a standard muffin tin.
  • To make the cupcakes, combine the almond milk, vinegar, and vanilla extract. Set aside.
  • In a separate bowl, mix together the Keto Chow, almond flour, coconut flour, cocoa powder, and baking soda.
  • Cream butter with an electric mixer until light and fluffy. Beat in the erythritol; then beat in the eggs, one at a time.
  • Beat in half the flour mixture. Slowly mix in the almond milk mixture a little at a time so it doesn’t splash out of the bowl, then beat in the remaining flour mixture.
  • Mix in the red food coloring. Add enough to make the batter bright red. The amount needed will depend on what type of coloring you use.
  • Divide the batter evenly among the prepared muffin cups.
  • Bake for about 25-30 minutes, or until slightly firm to the touch and lightly browned around the edges.
  • Allow the cupcakes to cool completely before frosting.

Frosting

  • To make the frosting, blend the Keto Chow and heavy cream in a large mixing bowl until smooth.
  • Beat in the cream cheese and then the powdered erythritol.
  • Beat in the softened butter a few pieces at a time until the mixture is light, fluffy and smooth.
  • Frost the cupcakes and decorate with raspberries.

  • 2 tablespoons unsalted butter
  • 2 whole white mushrooms sliced
  • 1 teaspoon fresh thyme leaves plucked from the stem
  • 1 teaspoon fresh parsley minced

  • 1/2 teaspoon sea salt
  • 1/2 teaspoon ground black pepper
  • 14 ounces mushroom broth
  • 1 serving Savory Chicken Soup Keto Chow (or 1 scoop)
  • 1/2 cup crème fraiche, sour cream, or heavy cream

Instructions

  • Melt the butter in a small saucepan over medium heat.

  • Add the mushrooms, herbs, salt and pepper to the pan.

  • Cook until most of the moisture has evaporated from the mushrooms and they begin to turn golden brown.

  • Carefully add the mushroom broth to the pan and bring it to a simmer.

  • When the broth comes to a simmer, remove the pan from the heat, discard the bay leaf, and whisk in the Keto Chow.
  • Then mix in the crème fraiche or cream.

Yield: Approximately 20 ounces of soup
The fresh herbs really make this soup special and are worth seeking out. But if you don’t have fresh herbs you can substitute 1/4 teaspoon each dried thyme and dried parsley instead. You can use fresh or dried bay leaves interchangeably.
Want an even heartier soup? Add a couple ounces of cooked, crumbled sage flavored sausage like pork or turkey breakfast sausage

I am really excited about these cookies! They are the best cookies I have made since going keto. They are soft, tender and lightly sweet. They really behave and taste like traditional cookies and they are so easy to make. Everyone who tried them loved them! Have fun with this recipe and make it your own. Add your favorite sugar-free chocolate chips, chopped nuts, or seeds, or use sugar-free jam to make thumbprint cookies. You can even roll the dough out and use cookie cutters to cut out perfect cookies!

  • Preheat oven to 350 degrees.
  • Whisk together the Keto Chow, coconut flour, and baking powder in a small mixing bowl and set aside.

  • Place the butter in a large mixing bowl and beat with an electric mixer until it is light and fluffy.
  • Beat in the sweetener.
  • When the sweetener is completely mixed with the butter, add the egg and the vanilla extract.
  • Beat the mixture until the egg is completely mixed with the butter and sweetener. The mixture will look grainy and separated.
  • Add half of the dry ingredients to the bowl and blend. When that is fully combined, add the rest of the dry ingredients.
  • Beat on low speed until it is completely combined and creates a stiff dough. It should start to come together into a ball.
  • Scoop balls of dough that are about a tablespoon each onto an oiled cookie sheet, spacing them approximately two inches apart.

  • Bake at 350 degrees for 10-12 minutes until the cookies have puffed slightly and are just beginning to turn golden brown around the edges.

Cut Out Cookies/Cookie Cutter Cookies

  • To make cut-out cookies: chill the dough for approximately 30 minutes, roll it out between two sheets of oiled parchment paper to about 1/4 inch thickness and cut into shapes with your favorite cookie cutters.

  • Reroll the scraps and repeat.
  • Place on an oiled cookie sheet and bake at 350 for 8-10 minutes until the cookies are just beginning to turn golden brown around the edges. Don’t overbake or the cookies will become dry.

Notes

Please Note: This recipe calls for one measuring cup of Keto Chow powder, not one scoop.
Note about sweeteners: I tested this recipe with both an erythritol blend and with allusose. They both worked and gave good results. They erythritol resulted in a slightly sweeter cookie and is easier to roll out and shape. The allulose yielded a cookie that was a bit more soft and chewy.

Here’s a great way to add some greens to your day. This is a mix and match recipe, so you can use your favorite greens and herbs to make it your own. Get creative and have fun with it. Cook up a different soup every time you make it. It’s a great way to use up small amounts of fresh greens, herbs and broth leftover in the fridge. For instance, I used chicken broth, arugula, parsley, dried dill and lemon juice for the soup pictured here, but you could use vegetable broth, baby spinach, fresh cilantro, dried basil and a dash of your favorite hot sauce for a completely different creation.

  • 14 fluid ounces broth or water
  • 1 cup tender leafy greens such as baby spinach or arugula
  • 1/4 cup loosely packed fresh herbs like parsley, cilantro, basil, or chives roughly chopped
  • 1 teaspoon of your favorite dried herb(s) like oregano, marjoram, tarragon, or dill optional
  • 2 whole green onions white and green parts cleaned and chopped
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1 serving Savory Chicken Soup Keto Chow (or 1 scoop)
  • 2 ounces neutral tasting oil such as avocado oil
  • 2 ounces extra virgin olive oil
  • 1 teaspoon lemon juice, apple cider vinegar, or a dash of hot sauce
  • 1 tablespoon grated parmesan or Romano cheese optional

Instructions

  • Bring the broth or water to a simmer in a small sauce pan over medium heat or in a microwave safe container in the microwave
  • Add the greens, herbs, salt and pepper to the hot broth.

  • 1/2 cup unsalted butter melted
  • 1 serving Eggnog Keto Chow (or 1 scoop)
  • 1 tablespoon heavy cream
  • 1/2 teaspoon pure vanilla extract

Instructions

  • Mix the coconut oil and butter together in a mixing bowl with deep sides or a liquid measuring cup at least 1-quart in size.
  • Add the Keto Chow, heavy cream, vanilla extract, and nutmeg if using.

  • Blend everything together with an immersion blender or whisk.
  • Mix well to be sure all the ingredients are fully combined.
  • Pour the mixture into candy molds, ice cube trays, or miniature muffin pans.

  • Place them in the freezer to chill until firm. Unmold and store in an airtight container in the refrigerator or freezer.

To me, nothing says cozy mornings at home with family during the holidays like waffles and warm syrup. And It doesn’t get much more festive than eggnog waffles with homemade cranberry syrup. Even the most dedicated carb eater in your midst will enjoy these waffles so you might want to make a double batch. They freeze well so you can save any extras to reheat in a toaster oven or toaster if you still have one hanging around. Keep the cranberry syrup chunky and layer it between two waffles with sliced turkey and cheddar for amazing turkey melts!

  • Put the almond flour, Keto Chow and baking powder in a medium mixing bowl and whisk together.

  • Add the eggs, milk, butter and vanilla extract and whisk well or blend with an immersion blender.

  • Once the batter is mixed, let it sit for five minutes then stir once more before cooking. Batter will be thick.

  • While the batter sits preheat your waffle iron.
  • When the waffle iron is hot oil it with cooking spray or butter,
  • Place about 1/4 cup of the batter in the center of the hot iron and spread out slightly.

  • Close the lid and cook the waffle until it has set, looks golden and the waffle iron opens without resistance.
  • If the batter gets too thick, thin it by adding water or more nut milk a teaspoon at a time.
  • Remove the waffle to a warm plate and continue until you have cooked all the batter.
  • Serve the waffles with butter and warm cranberry syrup or your favorite sugar-free syrup.

Note: You can also mix the batter in a blender quickly and easily and clean up will be a breeze. Just place all the ingredients in the blender and mix until they are fully combined. Allow the batter to sit five minutes and pour it directly from the blender pitcher into the hot waffle iron. Yield: approximately 4-5 waffles depending on the size of your waffle iron.

No-Sugar Added Cranberry Syrup

Cranberries aren’t just for Thanksgiving. I love to use them all winter long. They are bright, beautiful, high in vitamin C and antioxidants and of course they are lower in sugar than most fruits. This recipe will yield enough syrup for a double batch of waffles or to save some to drizzle over your favorite keto friendly ice-cream or yogurt.

Instructions

  • Place all the ingredients in a medium sauce pan and bring to a boil over high heat.

  • Reduce heat to medium and simmer the sauce until the cranberries burst and the sauce begins to thicken. This should take about 5- 10 minutes.
  • When the sauce is cooked remove the cinnamon stick and allow it to cool slightly.
  • Pour the sauce into a fine sieve placed over a mixing bowl and push it through with a spatula or the back of a large spoon. Continue working until all you have left in the strainer is skin and pulp and all the liquid is in the bowl.

  • You should have a ruby red, glossy syrup.

Notes

You can leave the sauce whole if you prefer and serve as is. It will be nice and chunky. Yield: approximately 2 cups of syrup
