Can't Be Keto Chocolate Cake

This cake tastes so good, we just can't believe it's keto - but it is! Chocolate cake with chocolate chips covered in chocolate ganache, it's almost as chocolatey as my husband.

Instructions

  • Preheat oven to 350F.
  • In a large bowl using an electric mixer, blend all of the cake ingredients until the mixture is light, fluffy, and well-incorporated.
  • Pour mixture into a well-greased 6-muffin pan (jumbo muffin tin).
  • Bake for 30 minutes until golden brown on top. Cake will be done once an inserted toothpick comes out clean.
  • Add all of the ganache ingredients into a microwave safe bowl. Heat at 15-second intervals and mix until smooth, then pour on top of the cooled cake.

Ingredients

  • 2 ounce salted butter melted (1/2 stick)
  • 1 serving Creamy Tomato Basil Keto Chow (or 1 scoop)
  • 14 ounces hot water
  • 3 ounces mascarpone cheese
  • 2 Tbsp fresh basil leaves
  • 1-2 Tbsp grated parmesan or romano cheese
  • salt and pepper to taste

Instructions

  • Blend the butter, keto chow and hot water according to package directions.
  • Add the mascarpone cheese, fresh basil, and grated parmesan or romano cheese and blend until creamy and frothy.
  • Taste and adjust seasoning as desired.
  • Drink hot or chill and enjoy as a cold soup.

Instructions

  • To make brown butter, melt your butter over low heat and cook it gently until it begins to brown and smell toasted. Be careful once it starts to toast and brown; it can burn quickly. (1-2 sticks can take as long as 20 minutes on low to brown.) It will be very hot. Set it aside to cool for at least 15 minutes. 
  • When your butter is ready, mix it with heavy cream, Keto Chow, apple pie spice, vanilla extract, apple extract, and water in a blender.
  • Chill overnight.
  • When you are ready to serve, put the prepared Keto Chow back in the blender with the cup of ice and blend. 
  • Garnish with whipped cream and a sprinkle of apple pie spice if desired.

Notes

If you already have brown butter, preparation time is 5 min with an overnight rest.

  • 1 package sugar-free Strawberry Jell-o
  • 1 cup hot water
  • 1/3 cup frozen raspberries
  • 1/2 cup cold water

Whipped Topping

Instructions

  • Preheat oven to 350℉ and grease a 9-10" springform pan with coconut oil.*
  • Combine melted butter, almond flour, sugar, and vanilla in a small mixing bowl. The crust mixture should stick together in a ball. If your crust is too crumbly, add more butter.
  • Press the mixture evenly into the bottom of the pan.
  • Bake for 10-15 minutes or until lightly golden brown. Remove from oven and cool for at least 10 minutes.
  • To make the cheesecake mixture, beat the softened cream cheese until fluffy. Add vanilla, eggs and sweetener; beat until smooth.
  • Add Keto Chow and beat until smooth.
  • Mix heavy cream and almond or coconut milk together and pour slowly into the batter while beating. Continue to pour the milk and cream mixture until batter becomes the right consistency. It should run but still be thick. Add more milk if needed.
  • Pour cheesecake batter into pan and smooth it so that it's even.
  • Bake for 25 minutes, then reduce temperature to 200℉* and bake for an additional hour, or until fully cooked. The center should jiggle slightly when gently shaken. It will set completely as it cools.
  • Let sit until cool enough to touch pan before covering with plastic wrap and moving to fridge.
  • While cheesecake is cooling, heat 1 cup of water and frozen strawberries on stove; mash strawberries with a spoon. Add the Jell-o package to the boiling water and remove from heat. Stir and add 1/2 cup of cool water. Let cool in fridge for about an hour, or until Jell-o is thick but not completely set. Pour thickened Jell-o on top of cheesecake and continue to cool in refrigerator.
  • Once your cheesecake is completely set, combine cream, sweetener, and vanilla using a mixer or a blender until thick and stiff. Place in piping bag and pipe around the edges. If you don't have a piping bag, spoon whipped cream over top and smooth with a spatula.
  • Cut into 12 slices and serve—but try not to eat the entire pan!

Notes

NOTES: 
*Halve the recipe if using a 6" springform. When baking, it should only need 45 more minutes (instead of an hour) after you turn the oven down to 200 degrees.

Ingredients

  • 1/4 cup cold water
  • 1 packet sugar free Jello
  • 3/4 cup boiling water
  • 13 ml MCT Oil
  • 50 ml heavy cream plus more for whipped cream topping, if desired
  • 50 grams Raspberry Cheesecake Keto Chow or your flavor of choice (we also recommend Strawberry or Natural Strawberry Keto Chow)

Instructions

  • Add Jello packet to 1/4 cup cold water and stir.
  • Boil 3/4 cup water, add to the mixture and whisk/blend it.
  • Add MCT oil and heavy cream and whisk/blend some more.
  • Add Keto Chow along with any additional flavorings you might want. Blend this really well, approximately 5 minutes.
  • If desired, whip up some of your heavy cream and put some on top when you eat it.

For Decorating

Instructions

  • Butter or oil the donut molds and preheat the oven to 350 degrees.
  • In a large mixing bowl, beat together the eggs, butter, sweetener, and orange extract. 
  • Then mix in the Keto Chow, almond flour and baking powder.
  • Fill the donut molds, making sure to spread the batter into the molds so they fill the cavities. They should be filled about halfway.
  • Bake for 15-20 minutes, until they are puffed and browning. Allow them to cool while you make the glaze.

For Decorating

  • Place the powdered erythritol in a small bowl and mix in the almond milk one teaspoon at a time until you reach a spreadable consistency. Then mix in the orange extract.
  • Dip each donut into the glaze (or spread with a spoon) and then sprinkle with orange zest as desired.

Chocolate Coating

Instructions

  • In a large mixing bowl, beat the cream cheese with an electric mixer on low speed until it is softened and has spread out in the bowl.
  • Add the Keto Chow and heavy cream and beat on medium speed until they are fully mixed in.
  • Add the butter and the sweetener; add the orange extract and food coloring now, if using.
  • Beat the mixture for about 30-45 seconds on low speed, then raise the speed to medium-high and whip until the mixture looks light and fluffy.
  • Scoop out teaspoon sized balls onto a tray lined with waxed paper or parchment paper. Or prepare an 8”x 6” or similar sized rectangular cake pan by greasing and lining with parchment paper cut to fit the bottom of the pan. Spread the Orange Cream mixture into the pan in an even layer.
  • Chill in the coldest part of your refrigerator for at least 4 hours, preferably overnight. When it has set, turn it out of the pan, remove the parchment paper and cut it into small squares.
  • If it becomes too soft to work with, place it in the freezer for a few minutes.
  • To serve, dust the pieces with confectioner’s sweetener or drizzle them with chocolate coating and chill until the chocolate is set.

Chocolate Coating

  • Melt the coconut oil and the chocolate together.
  • You can melt them in a microwave safe bowl in the microwave or in the top of a double boiler set over gently simmering water.
  • Stir the mixture to make sure it is thoroughly combined.
  • Drizzle the chocolate over the chilled meltaways.
  • You can also use the chocolate coating to make molded meltaways by following the manufacturer’s directions for filled chocolates from your favorite candy mold.

Instructions

  • Preheat oven to 235 degrees.
  • Season each side of roast liberally with salt about 1 tsp each side and pepper 1/2 tsp each side, use 1 tsp minced garlic for each side and crush it into the meat with a spoon.
  • In a heavy-bottomed pot or skillet, heat oil over medium-high heat. Once oil and pan are hot, add the beef to pan and sear for a few minutes on each side until it’s nice and brown.
  • While the beef is searing prepare the butter, water, and Keto Chow by mixing together with a blender. (My preference is an immersion blender. )
  • Add tomato basil soup to the pan with the beef once both sides have been browned.
  • Cover and put in the oven for three hours.

  • Preheat oven to 325 degrees and grease your baking pan with a thin amount of ghee or butter.
  • In a small bowl, whisk together Keto Chow, almond flour, baking powder and salt,

  • In a large bowl, beat egg whites until frothy. Beat in sweetener and cocoa powder until smooth. Then beat in melted butter, cream and vanilla.

  • Beat in the almond flour mixture until well combined. This will get thick so I recommend changing to a fork instead of a whisk.

  • Spread batter onto greased pan into a thin layer.

  • Sprinkle crushed walnuts on top and press into the batter gently.
  • Bake 18 minutes, until puffed and set. Remove from oven, turn oven off and let cool 15 minutes.
  • Use a sharp knife or pizza wheel to cut into squares, but don't separate. Return to warm oven for 5 to 10 minutes to crisp up slightly.
