I’m gonna be real honest right now and let you know I HATE spending a ton of money on keto treats for myself but I have an insane sweet tooth. I’ve been wanting the banana peanut butter but I just can’t bring myself to spend over $10 on a jar. I decided to make my own and it did not disappoint!

Ingredients

  • 1 cup dry roasted salted peanuts
  • 1/4 cup Banana Keto Chow
  • 1 Tbsp erythritol or another sweetener like allulose
  • 2 Tbsp softened butter

Instructions

  • Gather ingredients.

  • Pulse peanuts on the highest setting for 45 seconds.

  • It should be a peanut butter consistency.

  • Add butter, erythritol and Keto Chow, and pulse until blended.

Notes

You may add more Keto Chow for more banana flavor, but I’m not sure how it will change the consistency. If you like things sweeter add a touch more erythritol. If you don’t like things salty, use unsalted peanuts and unsalted butter.

  • Place 2 cups of the heavy whipping cream in a large mixing bowl, sprinkle the Banana Keto Chow and 1/4 cup of the sweetener over the cream and beat until it is completely mixed. It should double in volume and have a creamy, pudding consistency. If it is too thick, thin it by adding almond milk a Tbsp. at a time until it is spreadable.
  • In a separate bowl, repeat the process with the other two cups of heavy cream, the Vanilla Keto Chow, the other 1/4 cup of sweetener, and the vanilla extract.
  • Line the bottom of an attractive bowl or trifle dish with a layer of the lemon snap cookies. Spread the banana pudding over the cookies, then add another layer of cookies.
  • Top with the vanilla pudding.
  • Cover the dish with plastic wrap and refrigerate overnight.
  • When ready to serve, decorate with whipped cream, lemon curls, and mint leaves.

Chocolate Dipped Banana Peanut Butter Keto Pops

When I was a kid, peanut butter and bananas was one of my favorite snacks. Well, I don’t eat bananas these days but I still love the flavor combination and when you add chocolate you’ve got an incredibly delicious treat that won’t throw you off your keto game. These pops are fun and delicious especially if you find yourself some banana shaped popsicle molds (https://amzn.to/2Yaqh1P) to freeze them in. But if you don’t feel like taking the time to freeze them, the mixture also happens to make the most delicious banana-peanut butter smoothie you can imagine.

Equipment

  • popsicle molds or small paper cups with popsicle sticks

Ingredients

  • 1 cup nut milk or coconut milk
  • 1/2 cup heavy cream
  • 1/4 cup creamy unsweetened peanut butter
  • 1 serving Banana Keto Chow (or 1 scoop)
  • 1 tablespoon granulated sweetener optional
  • 2 tablespoons coconut oil
  • 4 ounces chopped dark chocolate sugar free or at least 80% cocoa solids
  • 1/4 cup crushed roasted peanuts

Instructions

  • Combine milk, heavy cream, peanut butter, banana keto chow, and sweetener if you are using in a blender and blend until everything is fully combined and creamy.
  • Pour into popsicle molds and freeze overnight
  • When your popsicles are completely frozen, prepare the chocolate coating.
  • Melt the coconut oil in the top of a double boiler or in the microwave in a microwave safe container.
  • Add the chocolate and stir gently continuing to heat until all the chocolate is melted. Be careful not to stir it too much and keep the heat low or the chocolate may seize and get grainy and stiff.
  • Allow the mixture to cool down somewhat so it is still flowing but isn’t so hot that it will melt the popsicles.
  • Loosen the popsicles from their mold but do not unmold.

  • Working quickly, one popsicle at a time unmold a frozen popsicle dip it in the melted chocolate or pour the chocolate over with a spoon. Sprinkle the chocolate coating with crushed peanuts while it is still soft.
  • Place the popsicle handle down in a cup or bowl that will hold it upright while the chocolate sets.
  • Repeat with the rest of the popsicles until they are all coated.
  • Once the chocolate has set you can serve them immediately or wrap them and return them to the freezer to serve one at a time.
  • You can also make a shake version if you want to skip using molds.

  • Mash avocado with mixer.
  • Add eggs and sweetener and combine.

Notes

This does sink a little when it’s cooling; be sure it’s done before you pull it out of the oven. Let it cool completely before slicing. You can also substitute almond milk for butter if you prefer.

Ingredients

Crust

  • 1.5 cups almond flour, toasted
  • 2 Tbsp brown Swerve
  • 1 Tbsp sugar free maple syrup or maple flavoring
  • 1-2 tsp OOO Flavors graham cracker flavor from oooflavors.com
  • 1 tsp cinnamon
  • 2-3 Tbsp melted butter

Pie Filling

Instructions

Crust

  • Toast the almond flour in a dry pan until it’s fragrant.
  • Add it to a bowl and add the rest of the crust ingredients except for butter, mixing well.
  • Add butter and mix until the mixture will hold form.
  • Press into pie pan. It’s ready to add your favorite filling!!

Filling

  • With an immersion blender or regular blender, mix the heavy cream, water, Keto Chow, and sweetener (if using) until thick and creamy - like pudding.
  • Add the flavoring and food coloring if needed.
  • Add pudding to your pie crust.
  • Cover and refrigerate overnight but preferably 24 hours.

Banana Nut Breakfast Muffins

The final product are these gorgeous golden brown muffins! They smelled so delicious they didn’t last long enough for me to take the pictures, I had to dig in! As you can see, these muffins resemble the texture of a german pancake, making them perfect for breakfast. ;) Bon appetit!

  • Preheat oven to 350 degrees. In a mixing bowl, melt butter and cream cheese.

  • Combine and add eggs. Be careful not to cook the eggs from the heat of the butter.

  • In a separate bowl, mix protein powder, baking powder, cinnamon. Pour dry ingredients into wet; combine with a hand mixer until completely mixed. At first, the batter will look thin and too liquidy, but because of the xanthan gum in the protein powder, it will thicken up after a couple of minutes).

  • Stir in pecans.

  • Pour into muffin baking tray and bake at 350 degrees for 22-26 minutes. (I have a convection oven and after 24 minutes they were golden brown.)

  • The final product are these gorgeous golden brown muffins! They smelled so delicious they didn’t last long enough for me to take the pictures, I had to dig in! (If you notice the size difference between the two muffins on the bottom left side and the rest it’s because they’re lacking baking powder/soda- I did a little experiment to see how important it really was and obviously it made a HUGE difference!)
