Ingredients

  • 2 tablespoons butter
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1.5 cups water
  • 1/2 cup heavy cream
  • 1 serving Savory Chicken Soup Keto Chow (or 1 scoop)
  • 2 cups cubed cooked chicken or turkey breast

Instructions

  • In a skillet, melt butter over medium-high heat. Add carrots and celery.
  • Let cook for about 5 minutes and then add 1 cup water.
  • Let this simmer on medium for another 10 minutes stirring occasionally until vegetables are tender.
  • While that’s simmering, add 1/2 cup water, 1/2 cup heavy cream and 1 scoop Savory Chicken Soup Keto Chow to a narrow container and blend together with an immersion blender.
  • Add the Keto Chow mixture and cubed cooked chicken to tender carrots and celery and let cook for another 5 minutes.
  • You can eat as is for a soup or add to a baking dish and put a keto pie crust over the top and bake on 350 until done.

Keto Chow Eggnog Waffles with Cranberry Syrup

To me, nothing says cozy mornings at home with family during the holidays like waffles and warm syrup. And It doesn’t get much more festive than eggnog waffles with homemade cranberry syrup. Even the most dedicated carb eater in your midst will enjoy these waffles so you might want to make a double batch. They freeze well so you can save any extras to reheat in a toaster oven or toaster if you still have one hanging around. Keep the cranberry syrup chunky and layer it between two waffles with sliced turkey and cheddar for amazing turkey melts!

  • Put the almond flour, Keto Chow and baking powder in a medium mixing bowl and whisk together.

  • Add the eggs, milk, butter and vanilla extract and whisk well or blend with an immersion blender.

  • Once the batter is mixed, let it sit for five minutes then stir once more before cooking. Batter will be thick.

  • While the batter sits preheat your waffle iron.
  • When the waffle iron is hot oil it with cooking spray or butter,
  • Place about 1/4 cup of the batter in the center of the hot iron and spread out slightly.

  • Close the lid and cook the waffle until it has set, looks golden and the waffle iron opens without resistance.
  • If the batter gets too thick, thin it by adding water or more nut milk a teaspoon at a time.
  • Remove the waffle to a warm plate and continue until you have cooked all the batter.
  • Serve the waffles with butter and warm cranberry syrup or your favorite sugar-free syrup.

Notes

Note: You can also mix the batter in a blender quickly and easily and clean up will be a breeze. Just place all the ingredients in the blender and mix until they are fully combined. Allow the batter to sit five minutes and pour it directly from the blender pitcher into the hot waffle iron. Yield: approximately 4-5 waffles depending on the size of your waffle iron.

No-Sugar Added Cranberry Syrup

No-Sugar Added Cranberry Syrup

Cranberries aren’t just for Thanksgiving. I love to use them all winter long. They are bright, beautiful, high in vitamin C and antioxidants and of course they are lower in sugar than most fruits. This recipe will yield enough syrup for a double batch of waffles or to save some to drizzle over your favorite keto friendly ice-cream or yogurt.

Instructions

  • Place all the ingredients in a medium sauce pan and bring to a boil over high heat.

  • Reduce heat to medium and simmer the sauce until the cranberries burst and the sauce begins to thicken. This should take about 5- 10 minutes.
  • When the sauce is cooked remove the cinnamon stick and allow it to cool slightly.
  • Pour the sauce into a fine sieve placed over a mixing bowl and push it through with a spatula or the back of a large spoon. Continue working until all you have left in the strainer is skin and pulp and all the liquid is in the bowl.

  • You should have a ruby red, glossy syrup.

Notes

You can leave the sauce whole if you prefer and serve as is. It will be nice and chunky. Yield: approximately 2 cups of syrup

Ingredients

Crust

  • 1.5 cups almond flour, toasted
  • 2 Tbsp brown Swerve
  • 1 Tbsp sugar free maple syrup or maple flavoring
  • 1-2 tsp OOO Flavors graham cracker flavor from oooflavors.com
  • 1 tsp cinnamon
  • 2-3 Tbsp melted butter

Pie Filling

Instructions

Crust

  • Toast the almond flour in a dry pan until it’s fragrant.
  • Add it to a bowl and add the rest of the crust ingredients except for butter, mixing well.
  • Add butter and mix until the mixture will hold form.
  • Press into pie pan. It’s ready to add your favorite filling!!

Filling

  • With an immersion blender or regular blender, mix the heavy cream, water, Keto Chow, and sweetener (if using) until thick and creamy - like pudding.
  • Add the flavoring and food coloring if needed.
  • Add pudding to your pie crust.
  • Cover and refrigerate overnight but preferably 24 hours.

  • In a microwave safe bowl, melt coconut oil. Heat waffle iron on high.

  • Spray waffle iron with nonstick cooking spray. Place 1/2 of the batter in the iron. Cook until lightly golden brown (2-5 minutes depending on your iron).

  • Beat heavy cream and Swerve on high until stiff and fluffy. Once cool, top waffle with whipped cream.

  • First, melt the coconut oil in a microwave safe bowl. This is crucial: if the oil is not melted it will harden and make lumps in the batter. Combine with the remaining waffle ingredients until smooth.

  • 2 tablespoons refined coconut oil
  • 6 ounces sugar-free dark chocolate, chopped into small pieces

  • Chill in the coldest part of your refrigerator for at least 4 hours, preferably overnight. When it has set, turn it out of the pan, remove the parchment paper and cut it into small squares.
  • If it becomes too soft to work with, place it in the freezer for a few minutes.
  • To serve, dust the pieces with confectioner’s sweetener or drizzle them with chocolate coating and chill until the chocolate is set.

  • Melt the coconut oil and the chocolate together.

  • You can melt them in a microwave safe bowl in the microwave or in the top of a double boiler set over gently simmering water.
  • Stir the mixture to make sure it is mixed completely together.

  • Drizzle the chocolate over the prepared mints.
  • You can also use the chocolate coating to make molded mints by following the manufacturer’s directions for filled chocolates from your favorite candy mold.

We’re super happy to announce a new addition to our site. We were super impressed with the recipes being made by Taffiny Elrod of KetoCookingSchool.com and asked her if she could come up with some recipes that use Keto Chow. Ingredients

  • 1 serving Pumpkin Spice Caramel Keto Chow (or 1 scoop)
  • 4 ounces cold water
  • 5 ounces heavy cream you may adjust the amount according to your macros
  • 10-12 ounces hot, freshly brewed masala chai tea

Instructions

  • Mix the Keto Chow, water, and heavy cream together and refrigerate overnight.
  • When the Keto Chow has been refrigerated overnight, brew the chai tea.
  • Carefully blend the hot tea into the prepared Keto Chow with a stick blender or frother.
  • Sprinkle with a little ground cinnamon or nutmeg and enjoy.
