Ingredients

  • 4 chicken thighs chopped
  • salt and pepper to taste
  • 6 slices thick bacon bacon grease reserved
  • 6 jalapeños diced
  • 1 tsp garlic minced
  • 1/2 cup onion chopped
  • 2 tsp dried cilantro
  • 1 tsp cajun seasoning
  • 32 oz chicken broth
  • 3 cups water
  • 8 oz cream cheese
  • 4 oz cheddar cheese
  • 2 servings Savory Chicken Soup Keto Chow (or 2 scoops)

Instructions

  • Slice bacon in small pieces. Fry in soup pot until crispy. Remove bacon and set aside for later.
  • Fry chicken in reserved bacon grease for 5-­10 minutes.
  • Add diced jalapeno peppers, onions and garlic to the mixture. Let this cook until soft.
  • Add cream cheese and let melt stirring constantly.
  • Add broth, water and spices to the mixture and stir until pan is deglazed.
  • Add 2 scoops of Savory Chicken Soup Keto Chow and whisk in. Let this simmer in slow cooker for 2-3 hours.
  • Add cooked bacon and cheddar cheese. Stir until melted and serve warm.

Ingredients

FOR THE MEATLOAF

  • 1 large egg
  • 3 tbsp coconut aminos or Worcestershire sauce
  • 1 serving Beef Soup Base Keto Chow (or 1 scoop)
  • 2 tbsp onion flakes
  • 1 tbsp garlic powder
  • 1 tbsp dry parsley
  • 1/2 tsp sea salt
  • 1/2 tsp ground black pepper
  • 1/4 tsp hot sauce
  • 2 pounds ground beef
  • 1 oz ground pork rinds

FOR THE GRAVY

  • 1 cup water
  • 1 serving Beef Soup Base Keto Chow (or 1 scoop)
  • 2 tbsp coconut aminos or Worcestershire sauce
  • 1 tsp beef base
  • 1 tsp garlic powder
  • 1/4 tsp hot sauce
  • 2 tbsp butter
  • 1 large onion sliced
  • 5 oz button mushrooms sliced

Instructions

  • Grease a 9 x 5 loaf pan.
  • Preheat the oven to 350F.
  • In a large mixing bowl whisk together the egg, coconut aminos or Worcestershire sauce, Keto Chow, onion flakes, garlic powder, parsley, salt, pepper, and hot sauce.
  • Add the ground beef and crushed pork rinds and knead them into the egg mixture until everything is fully combined.
  • Press the mixture into the prepared loaf pan.
  • Place in the preheated oven and bake for an hour or until the internal temperature reaches 160F.
  • When the meatloaf has been in the oven for about 40 minutes, make the gravy.
  • Measure the water into a glass or liquid measuring cup and whisk in the Keto Chow, coconut aminos or Worcestershire sauce, beef base, garlic powder, and hot sauce. Set aside.
  • Melt the butter in a large, heavy bottom skillet over medium heat.
  • Add the onions and mushrooms and cook over medium heat, stirring occasionally until the onions start to look golden and the mushrooms have released all their liquid and begin to brown. This should take about 10 minutes. If the vegetables are browning too fast, lower the heat.
  • Take the skillet off the heat and whisk in the water and Keto Chow mixture.
  • Return the skillet to the burner and warm over low heat until the gravy is heated through and thickened. Keep warm until ready to serve.
  • When the meatloaf is done, remove it from the oven and allow it to rest about five minutes before slicing.
  • Serve with gravy and enjoy.

Notes

Yield: 8 servings of meatloaf and 2 cups gravy

Tangy Barbecue Sauce and Country Style Ribs

It's not always easy to find good sugar free barbecue sauce. Now you can make your own, know exactly what's in it and rest assured it's not only delicious but surprisingly delicious. It's also easy to make. If you like a sweeter sauce, you can add more sweetener or ketchup and reduce the vinegar. I use Keto Chow as the base of the sauce to keep it low in carbs and full of flavor.

Instructions

  • Season the ribs with salt and pepper and bake covered at 300F for 2 hours.
  • While the ribs are baking, make the barbecue sauce.
  • In a small saucepan, whisk together water, Keto Chow, garlic powder, vinegar, ketchup, sweetener, coconut aminos or soy sauce, liquid smoke, mustard, and salt. Warm over low heat, whisking constantly just until it begins to look clear and gently simmer. Set aside to cool.
  • When the ribs have cooked for two hours, remove them from the oven and carefully uncover them.
  • Raise the temperature on the oven to 375F.
  • Brush or mop the ribs all over with a generous layer of barbecue sauce. Place them back in the oven and bake for another 20 minutes or until they are browned.
  • Serve with extra barbecue sauce and a side of coleslaw.

YEILDS: 2 cups BBQ Sauce and approx. 8 Ribs

Ingredients

  • 1 lb. ground beef
  • Salt and pepper for seasoning
  • 1 tsp. minced garlic
  • 16 oz. sliced mushroom
  • 1/2 cup sour cream
  • 1/2 cup water
  • 1 serving Beef Soup Base Keto Chow (or 1 scoop)

Instructions

  • In a large skillet, season the ground beef with salt and pepper and then brown over medium high heat until cooked through; this should take about 10 minutes.
  • Remove beef with a slotted spoon, leaving grease in the skillet. Add the garlic and let brown for a minute or two. Add the mushrooms and cook for 10 minutes stirring occasionally.
  • While they are cooking, blend together the sour cream, water, and Keto Chow. (An immersion blender makes this easy.)
  • Once mushrooms are tender and have reduced by about half, add in the sour cream mixture and the browned ground beef. Stir until combined and heat until boiling.
  • Serve with your favorite low carb noodles.

Instructions

  • Preheat oven to 350 degrees.
  • Mix all of the cake ingredients with a mixer until smooth and creamy.
  • Pour into an 8x8 pan that has been lined with parchment paper and greased. Smooth batter to all edges and shake out air bubbles. Bake for 30 minutes or until done.
  • Place the cake in the freezer to cool completely. Roughly 30 minutes. While the cake cools, you can prepare the pudding filling.
  • Whip together softened cream cheese, softened unsalted butter, 1/2 cup heavy whipping cream, vanilla and Swerve until creamy and smooth, about 3-5 minutes.
  • In a separate bowl, blend together 1 cup heavy cream, water and Keto Chow until thick and pudding like. Fold together cream cheese and Keto Chow pudding mixture. Place in the fridge.
  • Pull cake from the freezer and add to a food processor, pulse to break down into crumbles.
  • Layer cake crumbles and the pudding mixture in your favorite glass dish until nothing remains. It’s easiest to pipe in the pudding if you can. Refrigerate to let set overnight or preferably 24 hours. 

Notes

A 7 cup dish was used to make the trifle. Cronometer figured for 8 servings.
Individual dishes are approx ½ c in size with tiny spoons and toddler hands for size reference.

Ingredients

  • 2 tbsp olive oil
  • 1 stalk celery minced
  • 1/2 onion minced
  • 2 cloves garlic crushed
  • 2 tsp fresh rosemary minced
  • 1 egg
  • 1 serving Creamy Tomato Basil Keto Chow (or 1 scoop)
  • 1 tsp basil
  • 1 tsp garlic powder
  • 1/2 tsp sea salt
  • 1/2 tsp ground black pepper
  • 20 oz ground turkey
  • 4 oz mozzarella cheese
  • 2 oz parmesan cheese grated

Instructions

  • Line a rimmed baking sheet with parchment paper or lightly oiled tin foil. Preheat oven to 350 degrees.
  • Heat a skillet and add the olive oil, then add the celery, onion, and garlic. Cook over medium heat until the vegetables are soft and translucent. Stir in the rosemary and set aside to cool.
  • In a large mixing bowl combine the egg, Keto Chow, basil, garlic powder, salt and pepper. Add cooled celery, onion, garlic, and rosemary.
  • Then add the ground turkey and knead it with the egg mixture. Finally add the mozzarella and parmesan cheeses and mix well. Allow the mixture to sit about 5 minutes to help hold together.
  • Shape into 15 meatballs, slightly wetting your hands to help keep the mixture from sticking if necessary.
  • Place each meatball on the prepared baking sheet. Bake at 350 degrees for 40 minutes until the meatballs are firm and register 160F internal temperature on a meat thermometer.
  • Delicious served with cauliflower mash or zucchini pasta and your favorite sauce.

Keto Chow Chocolate Raspberry Truffles

  • Two 1” truffle molds, piping bag (plastic sandwich bags also work)

Ingredients

  • 1 cup sugar free dark chocolate chips + 2 Tbsp for later
  • 1 serving Chocolate Keto Chow (or 1 scoop)
  • 1/2 cup freeze dried raspberries measured whole then crushed/powered
  • 3 oz heavy cream
  • 2 tsp raspberry extract

Instructions

  • Melt ½ cup sugar free dark chocolate chips in a microwaveable bowl, 20 seconds at a time until mostly melted, then stir until all chips have melted. Use a small spoon to coat truffle mold cavities.
  • While chocolate sets, add ½ cup sugar free dark chocolate chips, crushed/powdered freeze dried raspberries, and Keto Chow into a mixing bowl.
  • Add heavy cream and raspberry extract to a small saucepan and heat until simmering but not boiling. Pour the hot cream over the chocolate and start mixing. I used my stand mixer on the stir setting for 2 minutes.
  • Fill chocolate coated truffle molds with the truffle filling. The truffle filling will need to stay relatively warm to stay pliable enough to not crack the chocolate shell. I used a double boiler method and placed my mixing bowl over a pot of hot water and this worked well.
  • Pop each truffle half out. Melt remaining 2 TBSP of chocolate, spoon into piping bag, cutting off a small portion at the end and pipe around the inner rim of half of truffles, placing another half on top to “glue” them together as you go. Make sure to place together before moving to the next truffle.

Notes

You can make 12 equal sized balls and place them on a fork, using a spoon to coat the balls with melted chocolate. They won’t be as pretty but I am sure they will taste delicious!
If you don’t want raspberry seeds, you can use a food processor and powder the raspberries or nix the freeze dried raspberries and go for a little more extract.

Instructions

  • Line a bread pan with parchment paper, or prepare your silicone molds.
  • Add all ingredients into a saucepan on medium heat. Whisk continuously for 15 minutes. The mixture should begin to boil at 8-10 minutes and will start to thicken, but keep whisking. When it’s ready, it will be thick and shiny, and will pull away from the pan.
  • Add to your lined bread pan or silicone molds. It’s easiest to transfer it into the pan or molds with a Ziploc piping bag, but be sure to let the mixture cool for a bit first.
  • Put in the freezer for at least an hour or until set. If they do not pull away easily from the parchment paper, they need more time in the freezer.
  • Once set, cut into 16 squares to serve. Store in the refrigerator or freezer.

Notes

You can cover these in chocolate once set!

Ingredients

  • 1.5 cups water
  • 8 oz tomato sauce
  • 1 serving Spicy Taco Base Keto Chow (or 1 scoop)
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder

Instructions

  • Blend everything together. If you prefer a thicker sauce, reduce water.

Ingredients

  • 2 large eggs
  • 10 oz canned chicken keep liquid, do not drain
  • 2 oz shredded cheddar cheese (about 1/2 cup)
  • 1 serving Spicy Taco Base Keto Chow (43 grams or 1 scoop)

Instructions

  • Preheat oven to 350 degrees.
  • Blend together all ingredients until creamy, about one minute. Both a blender and food processor work great.
  • Add mixture to a 17x11 inch cookie sheet that has been lined with parchment paper and then greased. Take your time to spread evenly in the pan. Shaking and pounding it down helps to make it even.
  • Bake at 350 degrees for 20 minutes.
  • Let cool for a couple of minutes. Cut into triangles or preferred shapes. I have found the easiest way is to do lines and then squares and then triangles. Use a silicone spatula to help release chips from parchment paper.
  • In small batches, so they don't touch or fold, add into a pre-heated air fryer at 400 degrees. Fry for 3 minutes and then flip. After the initial flip, you can shake or flip every couple of minutes until they are your desired crispness.
  • They turn quick so watch closely and they also can cook at different times depending on thickness.
  • These can also be baked in the oven on 400 degrees, after 5 minutes flip and bake until fully crispy. Air frying is preferred method for ultimate crisp. 
  • Serve with your favorite dip!!!! 

Notes

I have made these in a 15X10 cookie sheet with great results, they just take longer to crisp up! 
It’s best to eat immediately or within a couple of hours. You can store chips in the fridge and re air fry if needed. 
KETO CHOW NOTES: 
A buttered silicone baking mat works instead of parchment paper. Spread to approx 1” from edges.

If the chips do not release from paper or mat, score with knife/pizza cutter in desired shapes and place upside down (chips down between foil and paper/mat) on a foil lined baking sheet. Bake for an extra 10-15 min or until chips can release with ease using a silicone spatula. Then bake at 400 degrees to crisp, removing crisped chips every few minutes so that edge chips don’t burn. 
Letting chips cool completely before scoring for “second bake” or “crisping” allows for much cleaner cut edges.
