Banoffee Pie is a popular British dessert made with luscious layers of toffee, bananas, and whipped cream. Although there are a few steps to this recipe it comes together easily.

Cookie Crumb Layer

  • 1 cup fine almond flour (3 oz.)
  • 2 Tbsp. salted butter
  • 1 Tbsp. brown erythritol blend

Instructions

  • Start with the cookie crumb layer by melting the butter in a medium nonstick skillet, over low heat. Add the almond flour and cook, stirring regularly until the flour starts to brown lightly and smell fragrant.
  • Sprinkle the brown erythritol blend over the almond flour and stir well. Transfer to a heatproof dish and set aside to cool.
  • When cool, place two Tbsp. of the crumb mixture on the bottom of six serving bowls or glasses.
  • To make the toffee, melt the butter over low heat, add the sweetener, and stir until dissolved.
  • Add the heavy cream and vanilla extract to the butter and whisk to combine. Heat until bubbles start to form at the edge of the pan. Stir again and remove from the heat.
  • Allow the mixture to cool slightly, then whisk in the Chocolate Toffee Keto Chow until fully dissolved. The mixture will begin to thicken. While it’s still warm, pour 1/4 cup of the toffee over the crumb layer in each dish and gently smooth to even.
  • Place in the refrigerator to chill while you make the banana layer.
  • To make the banana layer, combine the heavy cream, almond milk, Banana Keto Chow, and powdered erythritol in a large mixing bowl. Beat with an electric mixer until the Keto Chow is fully dissolved and the mixture has increased in volume and holds stiff peaks.
  • Spread 1/4 cup of the banana mixture over the toffee layer in each dish.
  • Make the whipped cream. Place the heavy cream, powdered erythritol, and vanilla extract in a large mixing bowl. Beat with an electric mixer until the mixture holds stiff peaks.
  • Place two Tbsp. of the whipped cream on top of the banana layer in each cup.
  • Shave the edge of the piece of chocolate with a vegetable peeler or grater to make chocolate shavings.
  • Sprinkle about half a tsp. of the shavings over the whipped cream in each dish.
  • Chill parfaits in the refrigerator for at least 30 minutes before serving.
  • Store the parfaits covered in the refrigerator for up to three days.

Instructions

  • Melt the butter in a small saucepan over low heat for about five minutes, or until it begins to smell toasted, and the butter solids start to look golden.
  • Remove from heat and let cool for five minutes. Then stir in the heavy cream and yacon syrup.
  • Sprinkle the Keto Chow over the mixture and whisk until completely incorporated.
  • Stir in the vanilla extract.
  • Serve the sauce warm with a sprinkling of coarse sea salt.
  • Store in an airtight container in the refrigerator for up to two weeks.

Notes

*This sauce can easily be made into a dip by reducing the heavy cream to half a cup and refrigerating until thickened.
 
**If needed, substitute with another sugar-free syrup, or simply omit. This syrup does add 22 net carbs, unfortunately, so if this is a concern, we recommend omitting it altogether. The nutrition information listed includes the yacon syrup.

Ingredients

  • 1 serving Vanilla Keto Chow (or flavor of your choice)
  • 1/2 ripe avocado (about 2 oz)
  • 1/4 cup coconut cream
  • 1/4 cup loosely packed flat leaf parsley
  • 1 tsp lemon juice
  • 1 coin sized fresh ginger, crushed (optional)

Instructions

  • Mix the keto chow with 12 ounces of water and chill for at least thirty minutes, preferably overnight.
  • To make the smoothie blend the chilled keto chow with the avocado, coconut cream, flat leaf parsley, lime juice, and ginger in a blender and blend until smooth.
  • This smoothie is best if consumed right away because the avocado is best when fresh.
  • If you don’t like the texture of the ginger you can grate it and squeeze the juice from it.

Ingredients

COOKIES

  • 1/2 cup shelled pistachios
  • 1 serving Pistachio Keto Chow
  • 1/2 cup fine almond flour (1.5 oz)
  • 1/4 cup granulated erythritol
  • 4 Tbsp. cold unsalted butter, cubed
  • 1/2 tsp. rose water
  • 1 Tbsp. dried rose petals or rose bud tea plus extra for garnish (4g) *
  • 1 large egg

ICING

Instructions

  • Place the pistachios in the work bowl of a food processor and pulse until they are coarsely ground. Remove from the food processor and set aside.
  • Place the Keto Chow, almond flour, and granulated erythritol in the food processor and pulse to combine.
  • Add the butter and pulse until it is cut into pea size pieces or smaller in the dry mixture.
  • Return the ground pistachios to the food processor along with the rose petals, 1/2 tsp. rose water, and egg. Process on low speed until the mixture begins to hold together.
  • Remove the dough and knead it into a ball. Slightly flatten and press the edges against the counter to create a square shape. Wrap in plastic and chill in the refrigerator for 30 minutes.
  • While the dough chills, heat the oven to 350℉ and line two cookie sheets with parchment paper.
  • Unwrap the dough and place it between two sheets of parchment paper.
  • Roll it out to a 9 X 9-inch square; it will be about 1/4-inch thickness.
  • Cut nine cookies out of the dough and transfer them to the prepared cookie sheets.
  • Gently press the scraps together, re-roll the dough and cut out three more cookies.
  • Bake the cookies for about ten minutes, or until they are lightly golden around the edges. They will be slightly soft in the center but will firm as they cool.
  • When the cookies have cooled completely, make the icing.
  • Place the powdered erythritol in a small bowl and stir in the rose water and milk. The icing should have a thick, pourable consistency like syrup.
  • Stir in the pink food coloring one small drop at a time, until the desired color is reached.
  • Spoon or pipe the icing into the middle of the cookie and spread it out to make a circle covering most of the cookie. While the icing is still wet, sprinkle with rose petals to decorate. Allow the icing to set before serving or storing cookies.
  • Store cookies in a single layer in an airtight container at room temperature for up to three days or tightly sealed in the freezer for up to three months.

Notes

*You can find dried rose leaves online and rosebud tea at many Asian markets. To use rosebud tea, gently pull the leaves off of the stem leaving the green behind. Wherever you source yours, be sure they are food grade and haven’t been treated with pesticides.

Instructions

  • Oil the cake molds and preheat the oven to 325℉. Attach a round tip to the piping bag or use a plastic Ziploc bag with a cut corner.
  • In a small mixing bowl, combine the Keto Chow, cocoa powder, and baking powder.
  • Beat the egg whites in the work bowl of an electric mixer with the whip attachment until they begin to look frothy. With the mixer at medium speed, add the cream of tartar and sprinkle 1/4 cup of the powdered erythritol over the egg whites. Beat until the egg whites look glossy and hold stiff peaks.
  • Transfer the beaten egg whites to another bowl and place the egg yolks in the work bowl. (No need to wash the bowl yet.) Beat the egg yolks with the remaining 1/4 cup powdered erythritol until they have doubled in volume, which should take about five minutes. They should look satiny and be light yellow in color.
  • Fold the avocado oil and vanilla extract into the egg yolks with a rubber spatula.
  • Fold the egg whites into the egg mixture in two portions.
  • Sprinkle the Keto Chow mixture over the eggs and fold in gently. The volume will decrease slightly.
  • Fill the piping bag with the batter and pipe into the prepared cake molds.
  • Bake the cakes for 15-20 minutes, or until they have risen, the surface looks dull, they spring back when touched, and a cake tester comes out clean.
  • Set the molds on a cooling rack. Turn the cakes out of the molds when they have cooled for about five minutes, then let cool completely.
  • To make the filling, beat together the peanut butter and softened butter until light and fluffy. Add the Keto Chow, erythritol, heavy cream, and vanilla extract and beat until combined and light.
  • Put the filling in a piping bag with a large star tip or ruffle tip, or in a Ziploc bag with a cut corner to create a piping bag.
  • Carefully slice the cooled cakes in half lengthwise.
  • Pipe filling on one half and place the other half on top, then place in the refrigerator to set. Reserve about 1/4 cup of the filling to decorate the cakes.
  • To make the glaze, sift the powdered erythritol and cocoa powder into a mixing bowl.
  • Add the vanilla extract and stir in the warm water a tsp. at a time until it reaches a thick, pourable consistency.
  • Spoon or pour the glaze over the top of each cake, smoothing it to the edges.
  • Allow the glaze to set slightly, then decorate the tops with the remaining peanut butter filling. They can also be decorated with crushed peanuts, shaved chocolate, or whipped cream.
  • Store in an airtight container in the refrigerator for up to three days or store frozen for up to three months.

NOTES: Higher elevation may impact your baking time; it took approximately 30 minutes of baking to get a clean toothpick 
*You can use a mini cupcake tin instead if you do not have éclair molds.

Even better, it tastes delicious and will keep chilled in the refrigerator for up to three days so you can make it ahead.

Instructions

  • Preheat oven to 325F and spray a 15x10 jelly roll pan lightly with cooking spray and line with lightly oiled parchment paper.
  • Beat the egg yolks with 1/4 cup of the sweetener until light yellow in color and ribbons form when the beaters go through.
  • In a separate bowl, whip the egg whites with very clean beaters until they begin to foam, then sprinkle in the remaining 1/4 cup of sweetener and continue to beat until stiff peaks form.
  • Fold 1/3 of the egg whites into the egg yolk mixture to lighten it. Then gently fold in the remaining egg whites until they are almost completely combined. Be careful to retain as much air in the egg whites as possible.
  • Mix the Keto Chow, coconut flour, cocoa powder, gelatin, and baking powder together and sprinkle them over the egg mixture. Gently fold the dry ingredients into the eggs.
  • Using an offset spatula, spread the batter onto the prepared pan and even it out as much as possible. It’s ok if it’s a little bumpy.
  • Bake for 10-15 minutes until the cake is set and slightly browned around the edges but tender and soft to the touch.
  • Sift a layer of powdered sweetener combined with cocoa powder on a clean, dry kitchen towel. Then when the cake is cool enough to touch, carefully turn it over onto the towel and remove the pan.
  • Gently peel the parchment paper away from the cake and roll the cake up from the long side, using the towel with the cake rolled inside. Leave it rolled up to cool completely while you make the filling.
  • Whip the cream until it begins to thicken, then add the sweetener and vanilla extract. Continue to beat until stiff peaks form.
  • Unroll the cake and spread the raspberry jam across the inside of the cake in a thin layer. Then spread the whipped cream over the jam, leaving about 1/2 inch of plain cake around the edges. Then gently reroll the cake. Make sure not to roll the towel inside again. Wrap it in plastic wrap and chill it while you make the frosting.
  • For the frosting, beat the heavy cream to soft peaks and sprinkle the Chocolate Keto Chow, cocoa powder, and powdered sweetener over the top. Continue to beat until the dry ingredients are fully combined, light, and fluffy. It should be thick, but if needed, add almond milk one tablespoon at a time to thin it slightly.
  • Remove the cake from the fridge and unwrap it. Cut a slice from one end on a slight angle. This will be used to create a stump on the log. If you would like, you can cut a piece from the other end to create another stump. You can cut the second piece on the diagonal or straight across.
  • Place the cake on a board or on a serving dish and cover it with frosting. Attach the stumps you cut by pressing them into the frosting wherever you think they would look best and frost them, too. For a bark-like look, gently run the tines of a fork through the frosting along the length of the cake.
  • Garnish with fresh raspberries and mint leaves or anything else you would like.
  • Chill in the refrigerator for up to three days, or until ready to serve.

Pizzelle are a classic Italian cookie, often made for Christmas. They are made on a pizzelle iron which is like a waffle iron and gives them their decorative shape. The lemon flavor is bright and delightful in these pizzelle, but you can substitute anise extract for a more traditional Italian flavor. They are also wonderful made with lemon meringue keto chow for full lemon flavor.

  • Beat eggs for at least three minutes, or until they are light, fluffy, and doubled in volume. This gives the pizzelle a light texture and makes the batter much easier to work with.
  • Gradually beat in erythritol on low speed, then beat in oil, lemon zest, and vanilla extract.
  • Mix in the Keto Chow and salt.
  • Let the batter rest while you heat your pizzelle iron.
  • When your iron is heated, drop about a Tbsp.-size ball of dough onto your iron. For best results, drop it slightly nearer the back of the iron because it will be pushed toward the front as you close it.
  • Cook according to the manufacturer’s directions. When the pizzelle is done, it should be lightly golden, but not brown. Depending on the iron, this could take 20 seconds to 2 minutes.
  • Gently remove the cooked pizzelle from the iron with a small spatula. It will be very soft, but it will crisp as it cools. Lay the cooked pizzelles in a single layer on a rack to cool. Use a pair of kitchen shears to trim the edges, if desired. While they are still warm, they can be shaped by draping over a small cup or wrapping them around a cannoli form.
  • When they are cool, stack them in a box or tin that isn’t completely airtight (so they stay crisp). If needed, they can be re-crisped at a low temperature in the oven.
  • Dust with powdered sweetener for a decorative touch.

Ingredients

  • 1 cup cold unsweetened, chocolate almond milk
  • 2 tsp gelatin powder
  • 1 tsp espresso powder
  • 1 scoop Mocha Keto Chow
  • 1 1/2 cups heavy cream
  • 4-5 drops liquid stevia, optional

Instructions

  • Lightly oil four 6-ounce teacups, dessert glasses or ramekins coconut oil cooking spray works well for this.
  • Place the cold almond milk in a small saucepan and sprinkle gelatin over the surface. Let the gelatin sit on the cold milk until it has softened or “bloomed”, about two minutes.
  • Heat the milk over low heat, stirring until all the gelatin has dissolved. The milk should be just below a simmer. Don’t allow the mixture to boil. Cool the mixture slightly.
  • Place the mocha keto chow and espresso powder in a large mixing bowl. Whisk in the warm milk, stirring until the keto chow and espresso are completely dissolved.
  • Whisk in the heavy cream, and the stevia if you are using it. You can taste the mix and adjust the sweetness to your liking.
  • Divide the mixture between the prepared cups, cover with plastic wrap and chill overnight.
  • When they are set the panna cotta can be served as is or gently loosened from their cups, turned out onto small dishes, and garnished with whipped cream, chocolate curls, or fresh berries.

Ingredients

  • Remove the gummies from the molds and store in an airtight container, in the refrigerator for up to a week.
