Full of healthy fats from coconut and avocado, this no-cook fudge doubles as an excellent fat bomb to crush cravings or top off your fat macros. The fresh mint takes the flavor to another level and keeps the fudge light and fresh.

Ingredients

Fudge:

  • 1/3 cup coconut butter
  • 1/3 cup refined coconut oil *
  • 1 ripe Haas Avocado peeled & pitted
  • 1 serving Chocolate Mint Keto Chow
  • 1 tablespoon almond milk if needed
  • 3 ounces sugar-free, semi-sweet chocolate chips plus extra for decoration

Topping:

  • 1/4 cup white chocolate chips (1.5 ounces)
  • 1 tablespoon coconut oil
  • greet food coloring
  • small bunch fresh, mint leaves

Instructions

  • Oil a 9 X 4.5-inch loaf pan and line with parchment paper, leaving some extra hanging over the long sides. This will make the fudge easier to remove later.
  • Warm the coconut butter and coconut oil to soften; place in a blender with the flesh of the avocado and blend until smooth.
  • Add the Keto Chow and blend. If it is too thick to blend, add the almond milk.
  • Melt the chocolate chips carefully in the microwave or with a double boiler over gently simmering water.
  • Fold the melted chocolate into the avocado and coconut mixture.
  • Spread the fudge into the prepared loaf pan and chill in the freezer for about 20 minutes or until set.
  • Melt the white chocolate with the coconut oil in the microwave or over a double boiler of gently simmering water. Add a drop or two of green food coloring and stir to distribute the color.
  • Spread the white chocolate mixture over the fudge and decorate by pressing in chocolate chips and mint leaves.
  • Chill in the freezer for another ten minutes or until set.
  • Remove from the pan by lifting the parchment paper handles. If it won’t come loose, allow it to come to room temperature for ten minutes.
  • Cut the fudge into 24 pieces. Store in an airtight container in the refrigerator for up to five days or in the freezer for up to three months.

Notes

*Refined coconut oil gives a milder coconut flavor.

A make ahead dessert that is ready to serve at a moment’s notice, parfaits are always good to have on the roster. These parfaits are made with fluffy mint mousse and rich chocolate cream cheese pudding that is sure to please the chocolate mint lovers among you.

Ingredients

Instructions

  • Pour heavy cream into the bowl of an electric mixer and beat with whip attachment until soft peaks form. Remove one third of the whipped cream and set aside for the chocolate pudding.
  • Sprinkle the keto chow, two tablespoons of the erythritol, and the mint extract over the remaining cream and continue to whip until it has thickened and doubled in volume. Place in the fridge while you make the chocolate pudding.
  • Put the chocolate in a microwave safe bowl and microwave in 10 second bursts until the chocolate is melted and can be stirred completely smooth.
  • In a large mixing bowl whip the cream cheese until it is light and fluffy.
  • Add the remaining sweetener and the cocoa powder and beat into the cream cheese.
  • Mix the melted chocolate into the cream cheese mixture, then gently fold in the reserved whipped cream.
  • To assemble the parfaits, divide half the chocolate pudding between four dishes, smoothing into a level layer.
  • Next, divide half of the mint mousse among the four dishes, smoothing into another level layer.
  • Repeat with the remaining chocolate pudding and mint mousse so each dish has four alternating layers.
  • Cover and chill for at least two hours before serving.
  • Serve garnished with more whipped cream, chocolate chips, and a sprig of mint if desired.

For anyone on keto looking for a great meal replacement shake look no further ! Keto Chow is hands down the best out there, I have tried damn near every keto shake brand out there and everyone seemed to let me down. Then I saw an advertisement about the pistachio keto chow and had to try it, after trying the pistachio I absolutely loved it and blacked out on their website and ordered like five of every flavor and after trying them all I haven’t found a flavor I don’t like. I have only tried 2 flavors from my bundle. Mocha and Strawberry. I had the strawberry the morning after I mixed it. And it was not that great. So the next day I mixed the mocha let it stay in the fridge for 4 days and it tasted amazing. It was so much better. Over all I’m new to keto and to keto chow so still going through trial and error. SATISFYING

Just started on Keto Chow after my sister told me about it. She had done a 40-day challenge of 3 shakes a day and said it was the easiest thing she’d ever done! Already experiencing the keto lifestyle over the past year, I decided to give it a try. I want to lose 50 pounds. I’m a 52 year old male, 6’ tall and weigh 240. When I started researching Keto Chow I came across the 100-day challenge where the founder lost 50 lbs in 100 days (and improved his blood panels!). I thought, this is for me! What’s 100 days out of my life to reach a goal I’ve had for so long but never managed to reach. Just shakes is a challenge because there is so much psychological chatter that goes on when not eating “real food” (meaning food you have to chew). However, I’m working through it and finding some success. For one week I did two shakes a day with a sensible dinner to prime myself (hadn’t eaten keto for a good six months). Three days ago I started the shakes only. My goal is 100 days, however I’ll evaluate as I go along, and if at any point I want to go back to two shakes and a healthy, keto meal, I’ll do that. But for now, I’m finding the three shakes a day satisfying. The flavors are all incredible and varied so you’re not feeling like you’re drinking the same thing over and over. The transition back into ketosis seems less abrupt this time, and I attribute that to the electrolytes in the shake powder. I’m using grass fed butter as my fat source, and that makes the shakes satiating and extremely satisfying. The only concern I have is the low fiber count in the shakes. Three shakes provides roughly 25 grams of fiber which is the daily requirement for women, however men’s daily requirement is between 35-40 grams. So I’m playing with the idea of adding ground chia seeds (which provide 0 net carbs and 5 grams of fiber per tablespoon) to my shakes to up the fiber. I’ll keep checking my ketones as I do this to make sure it allows me to stay in ketosis. I’m hoping that by the third week of December (when my 100 day challenge is up) I can proudly say I weigh 190 lbs!

Yummy flavors, and makes you feel great!

For the past several months I have been replacing my breakfast and lunch with salted caramel and chocolate peanut butter. Wowza! These flavors are sweet! Having a crazy sweet tooth, these were perfect for me and they really help me get through the day. I’m a high school teacher with a toddler at home and am non-stop running around, especially during lunch time! Drinking these shakes totally help with that busy schedule, has awesome vitamin and minerals, and for 10 hours (that’s how long I work everyday ?) I’m not hungry AT ALL. since I started keto chow in July, I’m down 20lb ? and love fitting in my prepregnancy clothes again. Here’s how I make it: pour 14oz of warm(not hot!) Water in the blender bottle, then add grass fed butter (heavy cream is gross), wait for butter to melt, and finally and the powder and shake it up! I add ice afterwards to cool it down. There is so much flavor that I’ve found it still tastes great even after adding a total of 20oz of water haha. Enjoy the product!

I purchased the sample pack so I could try the flavors before purchasing. I tried to vanilla first, figuring I would like that one the best – I was wrong! The vanilla was the only one that I did not like. The chocolate, mocha, and caramel were delicious!!! I just made the snickernoodle for tomorrow’s breakfast and it smelled amazing!   • In a medium mixing bowl, whisk together the keto chow, baking powder, salt, and cocoa powder.
  • In a large mixing bowl, beat together the erythritol, eggs, butter, and peppermint extract.
  • Mix the dry ingredients into the wet ingredients, then fold in the melted chocolate.
  • Cover and chill the dough for at least two hours.
  • When ready to bake the cookies preheat the oven to 325 F
  • Line two cookie sheets with parchment paper
  • Scoop the dough by tablespoons and roll into balls
  • Place the dough at least two inches apart on the prepared baking sheets
  • Place on racks set in the middle of the preheated oven.
  • Bake 13-15 minutes until the cookies are firm at the edges and the centers are still slightly soft.
  • Allow the cookies to cool slightly before transferring them to a cooling rack.
  • While they are still warm, sift the powdered erythritol over them.
  • Store cookies in an airtight container in the fridge for up to a week.

I am not a fan of diet shakes and bars… So for me to try this it was a long shot as I needed something quick at work lunch during this pandemic…. I tried the starter pack and ordered 2 additional flavors I was interested in that were not included….
I must say I enjoyed them all so far… No chalky taste. Not overly sweet. Easy to make… Can be enjoyed in may ways… I have partly frozen, warmed in coffee, and just cold…. Eggnog had spices added to it… Banana taste like banana… Strawberry was great frozen like a milkshake…. And I found even if I added to much water it didn’t effect the taste…

I love these shakes more than any other store brand I’ve tried. I tried using different fats and my favorite is heavy whipping cream. These are so much better tasting and more filling than other brands that I made the commitment to a large bag! But I still love my sample flavors to round everything out.

Vanilla (good base for other flavors — I add flavored oils and Skinny Syrups)
Strawberry (my favorite!)
Mocha (delicious on its own — best with hwc)
Chocolate (I add banana flavored oils or pb powder, so good!)
Root Beer (HWC, 1/2 water — let sit in the fridge overnight, put in freezer 1/2 hour before drinking and add a can of Diet Root Beer… So freaking good!)

Oh my goodness! KetoChow is GREAT!

Butter Cream Filling

Instructions

Making the Cookies

  • Preheat oven to 300F and line a large baking sheet with parchment paper.
  • In a large bowl, combine all the dry ingredients and mix well.
  • Add in the egg, heavy cream, butter, vanilla extract, and mix well until a dough forms.
  • Roll out the dough between two sheets of parchment paper to desired thickness but no thicker than 1/4 inch.
  • Using a 2-inch round cookie cutter or something that works just as well, cut out circles of dough and lift gently and place them on the prepared baking sheet. Gather up scraps and re-roll until all dough is used up.
  • Bake cookies until firm to the touch, about 25 minutes, depending on the thickness of your cookies. Remove and let cool.

Making the Butter Cream Filling

  • Mix butter together with the powdered sugar alternative, adding 1/2 cup of the sugar at a time until blended.
  • Add Keto Chow and heavy cream and mix well.
  • If you want, you can add some crumbled cookies into your filling or even a tbsp or two of warmed cream cheese.
  • Spoon about 1/2 tbsp of the filling on top of half of the cookies you made earlier, then top with the other half of the cookies.

Notes

At approx 1/8" thick I made 37 cookies, 18 sandwiches. Your yield may vary.

Mint Chocolate Mousse Pie

Mint chocolate is a polarizing combination. Not everyone likes it, but people who like it tend to LOVE IT! So chocolate mint lovers, this one is for you.

Instructions

  • Preheat oven to 350F. Grease 9-inch pie pan and set aside.
  • Mix together dry ingredients for the crust, then add the butter to the egg, then pour into the dry ingredients. Using your hands, mix wet and dry ingredients together to form a dough. Remove 4 tbsp worth of dough and set aside.
  • Take remaining dough and roll into a ball, then flatten into a disk, and put in your prepared pie pan. With wet hands (it helps!), smooth and press the dough into the pie pan to form pie crust. Prick holes in the base of crust using a fork.
  • Take baking sheet and put a bit of parchment on it. Take reserved dough and flatten into a pancake (you're crumbling it, so it doesn't have to be pretty) on the parchment paper.
  • Put both pie and baking sheet into the oven, if it can fit. You can also do the baking in two stages if needed.
  • Bake for 12-14 minutes. Set aside to cool completely.
  • Take pancake piece and crumble into what looks like cookie crumbs.
  • Now prepare your filling. Beat your softened cream cheese for 2-3 minutes, then add sweetener, extracts, Keto Chow, 3/4 cup of the cream, and the food coloring (if using). Beat until smooth and fluffy. If you want your filling to have cookie crumbs in it, add them now! (I totally spaced this and instead, I sprinkled them on top. Valid choice!) Set aside.
  • In a clean bowl, beat remaining cream to soft peaks. Set aside about 1/2 cup for topping. Fold remaining whipped cream into Keto Chow mixture.
  • Scoop into cooled pie shell. Smooth into dome shape.
  • For bonus points, top with some freshly chopped chocolate!
  • Chill for 4 hours or overnight.

CHOCOLATE PEPPERMINT GANACHE

Instructions

  • Preheat the oven to 350F.
  • In a blender, standing mixer, or food processor, add coconut oil, mayo, vanilla, peppermint extract, and eggs together. Mix very well.
  • Add the heavy whipping cream.
  • In a separate mixing bowl, whisk together your dry ingredients until there are no clumps. Add your dry ingredients to the wet ingredients, making sure it's all incorporated.
  • Once your mixture is mixed, it is ready to be divided. Place your mixture into your donut mold. I made six donuts, though you could just as easily have seven from mixture.
  • Bake for 30 minutes.
  • To prepare your ganache, warm your heavy whipping cream in a saucepan with the sweetener until the sweetener dissolves. Then add your chocolate chips and let them melt. Once the chocolate is melted, stir in the peppermint extract.
  • Take your donuts and dip the tops into the ganache to coat them. Add toppings, if desired, right away before the ganache sets.
  • Store in a container in the fridge for up to one week.

  • Preheat oven to 350 degrees.
  • Blend butter, eggs, and erythritol, mixing well. Add sour cream and mint extract.
  • Mix in baking soda, coconut flour, and Keto Chow, starting on a low speed to not make a mess with the dry ingredients.
  • Mix in chocolate chips. This is best done by hand so you don't break them up.
  • Use a large cookie scoop to shape cookies and place them on a greased baking sheet or silicone mat/parchment paper.
  • Bake for 12-14 minutes until the edges are barely golden brown.

  • Preheat the oven to 350℉.
  • Cream together butter and erythritol. Add the egg and mix thoroughly.
  • Mix in the cocoa, baking powder, and Keto Chow.
  • With a silicone spatula, scoop all the batter onto parchment paper and make a uniform shape with your hands; the dough will be thick and sticky.
  • Put parchment on top and roll out until it’s 1/8 inch thick everywhere. Leave parchment on top and chill in the fridge for at least one hour.
  • Once chilled, take off the top parchment and use a two inch round cutter to cut as many circles as close together as you can. You should be able to make between 20-24, rerolling once or twice as necessary. If the dough starts to get too sticky as you roll or cut it, let it chill in the fridge again.
  • Place each cookie on parchment on a sheet pan. These do not spread much so you can put them close together if needed.
  • Bake for 10-12 minutes. (Add 2-5 minutes for high altitude.) They will still be a little soft when they are done, but will firm as they cool.
  • Melt chocolate in 1/2 cup increments for 45 seconds and add in roughly 10-15 peppermint chips per 1/2 cup. (Or add in 1/4 tsp. peppermint extract/flavoring.)
  • Once cookies are completely cooled, dip into chocolate and place back on parchment. Put in the fridge for at least 30 minutes to set.
