Ingredients

  • 1.5 cups water
  • 8 oz tomato sauce
  • 1 serving Spicy Taco Base Keto Chow (or 1 scoop)
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder

Instructions

  • Blend everything together. If you prefer a thicker sauce, reduce water.

For the Keto Chow photos, I only used ¾ c of water, which made the whole recipe 16 oz.

Ingredients

  • 2 large eggs
  • 10 oz canned chicken keep liquid, do not drain
  • 2 oz shredded cheddar cheese (about 1/2 cup)
  • 1 serving Spicy Taco Base Keto Chow (43 grams or 1 scoop)

Instructions

  • Preheat oven to 350 degrees.
  • Blend together all ingredients until creamy, about one minute. Both a blender and food processor work great.
  • Add mixture to a 17x11 inch cookie sheet that has been lined with parchment paper and then greased. Take your time to spread evenly in the pan. Shaking and pounding it down helps to make it even.
  • Bake at 350 degrees for 20 minutes.
  • Let cool for a couple of minutes. Cut into triangles or preferred shapes. I have found the easiest way is to do lines and then squares and then triangles. Use a silicone spatula to help release chips from parchment paper.
  • In small batches, so they don't touch or fold, add into a pre-heated air fryer at 400 degrees. Fry for 3 minutes and then flip. After the initial flip, you can shake or flip every couple of minutes until they are your desired crispness.
  • They turn quick so watch closely and they also can cook at different times depending on thickness.
  • These can also be baked in the oven on 400 degrees, after 5 minutes flip and bake until fully crispy. Air frying is preferred method for ultimate crisp. 
  • Serve with your favorite dip!!!! 

Notes

I have made these in a 15X10 cookie sheet with great results, they just take longer to crisp up! 
It’s best to eat immediately or within a couple of hours. You can store chips in the fridge and re air fry if needed. 
KETO CHOW NOTES: 
A buttered silicone baking mat works instead of parchment paper. Spread to approx 1” from edges.

If the chips do not release from paper or mat, score with knife/pizza cutter in desired shapes and place upside down (chips down between foil and paper/mat) on a foil lined baking sheet. Bake for an extra 10-15 min or until chips can release with ease using a silicone spatula. Then bake at 400 degrees to crisp, removing crisped chips every few minutes so that edge chips don’t burn. 
Letting chips cool completely before scoring for “second bake” or “crisping” allows for much cleaner cut edges.

Ingredients

  • 2 lb stew meat of choice roast or pre-cut
  • 4 cup water divided
  • 1/2 medium yellow onion chopped
  • 1/4 cup butter for onion
  • 1/2 medium head cauliflower roughly chopped (approx 3 cups)
  • 2 servings Spicy Taco Base Keto Chow (or 2 scoops)
  • 2 cup water
  • 1/4 cup butter melted
  • 1/2 tsp guar gum
  • salt and pepper to taste

Instructions

  • Add stew meat or roast to pressure cooker. Add 2 c water. Cook meat to desired doneness. The MEAT/STEW button works well for this. When meat has finished cooking, remove from pressure cooker and cut into bite sized pieces if using a roast.
  • While cooking meat, use ¼ c butter and saute chopped onion and cauliflower on low; approx 10 min.
  • Dump water used for cooking into a blender, add remaining 2 c of water, ¼ c melted butter, 2 servings Spicy Taco Keto Chow, and ½ tsp guar gum. Blend well, scraping sides if necessary.
  • Place cut meat and sauteed onions into pressure cooker, add Keto Chow soup mixture. Press SAUTE to heat all together. 
  • Add salt and pepper to taste before serving.
  • TIPS: I used my instant pot on MEAT/STEW for 20 min with quick release, 1 lb frozen venison roast with 2 c water was cooked to medium rare. Make sure guar gum does not touch sides of blender or it will clump. Guar gum can be added in the top pour spout while blending if you are talented.

Notes

Add any other veggies you would like. Make sure they are cooked/softened before heating all together.

Beef soup base keto chow also works well in place of the Spicy taco keto chow!

Fairly chilly here today. For taco Tuesday I made taco soup! I kept it mild so my kids would eat it too!

Ingredients

  • 1 lb ground beef
  • 4 oz can of diced chiles
  • 14.5 oz can diced tomatoes
  • 1 serving Spicy Taco Base Keto Chow (or 1 scoop)
  • 4 oz cream cheese
  • 1 tsp salt
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • 1/2 tsp garlic powder
  • your favorite taco toppings

Instructions

  • Brown the beef on medium high heat. (I used my instant pot on sauté.)
  • Add the rest of the ingredients and stir together. Don’t worry about mixing in the cream cheese; it will melt as it cooks.
  • Cook in crockpot or using a crockpot feature on high for 2 hours.
  • Add all of your favorite taco toppings and serve.

Ingredients

  • 6 slices bacon
  • 1 1/2 lb. 80/20 ground beef
  • 1 1/2 lb. ground pork (can be substituted with additional ground beef)
  • 1 medium sweet onion diced
  • 2 medium green bell peppers diced
  • 2 tsp. minced garlic
  • 3 cups organic beef stock
  • 2 Tbsp. chili powder
  • 4 tsp. ground cumin
  • 2 tsp. salt
  • 1 tsp. ground pepper
  • 1/2 tsp. cayenne pepper
  • 30 drops liquid monk fruit or stevia optional
  • 2 servings Creamy Tomato Basil Keto Chow (or 2 scoops)

Instructions

  • Heat up a large cast iron pot or Dutch oven on medium heat.
  • Dice bacon and add to pot with coconut oil. Cook until fat is rendered but don't overcook; the bacon should still be soft.

  • Add ground beef and ground pork and cook most of the way through. Break meat into small pieces.

  • When meat is mostly cooked, add the pepper, onion and garlic. Allow to simmer until soft.

  • Add all spices, Keto Chow, and beef stock. Stir to combine. Add monk fruit or stevia, if using.
  • Turn heat to low and cover the pot. Allow to simmer for 1 hour. For a thicker chili, simmer with lid off for at least 30 minutes.

Ingredients

Soup

  • 1 lb steak
  • 1 bell pepper sliced
  • 1/2 small onion sliced
  • 1-2 clove garlic
  • 2 tbsp butter
  • 1 serving Spicy Taco Soup Keto Chow (or 1 scoop)
  • 1/4 cup butter
  • 14 oz warm water
  • salt
  • pepper

Instructions

Conventional Cooking Method

  • Generously coat steak with salt and pepper. Grill steak to desired doneness or a little less.

  • While grilling steak, add Taco Soup Base with 1/4 c butter and warm water to a pot, whisking thoroughly until no longer lumpy. Keep on low heat.

  • Saute onions and peppers in 2 tbsp butter and add garlic.

  • Slice steak into “bite-sized” pieces.

  • Add cooked onions, peppers, garlic, and steak to soup base and let simmer for a few minutes.

  • Add salt and pepper to taste. Serve and top with any toppings you like.

InstantPot Method

  • Generously coat steak with salt and pepper. Using 2 tbsp butter, sear steak using SAUTE function. Remove steak and cut into “bite-sized” pieces.

  • Saute onions and peppers with the garlic for 2 min, adding more butter if necessary. Remove onions and peppers.
  • Add 1/4 c butter and melt. Once melted, add water and turn off saute function.

  • Whisk in Spicy Taco Soup Keto Chow until no longer lumpy.
  • Add steak, onions, peppers and garlic back to InstantPot. Season with more salt and pepper. Cook on low pressure for 10 min. Serve and top with any toppings you like.

Notes

TIPS: For a more liquid soup, do a second serving of Keto Chow Taco Soup mixed with water and butter. This recipe is very mild in the spiciness factor. If you want more spice, add a hotter pepper in the mix, chili powder, or some cumin. You can replace the water with beef broth.
