Keto Chow Eggnog Waffles with Cranberry Syrup

To me, nothing says cozy mornings at home with family during the holidays like waffles and warm syrup. And It doesn’t get much more festive than eggnog waffles with homemade cranberry syrup. Even the most dedicated carb eater in your midst will enjoy these waffles so you might want to make a double batch. They freeze well so you can save any extras to reheat in a toaster oven or toaster if you still have one hanging around. Keep the cranberry syrup chunky and layer it between two waffles with sliced turkey and cheddar for amazing turkey melts!

Ingredients

Instructions

  • Put the almond flour, Keto Chow and baking powder in a medium mixing bowl and whisk together.
    Img 2625 (1)
  • Add the eggs, milk, butter and vanilla extract and whisk well or blend with an immersion blender.
    Img 2626 (1)
  • Once the batter is mixed, let it sit for five minutes then stir once more before cooking. Batter will be thick.
    Img 2628 (1)
  • While the batter sits preheat your waffle iron.
  • When the waffle iron is hot oil it with cooking spray or butter,
  • Place about 1/4 cup of the batter in the center of the hot iron and spread out slightly.
    Img 2635 (1)
  • Close the lid and cook the waffle until it has set, looks golden and the waffle iron opens without resistance.
  • If the batter gets too thick, thin it by adding water or more nut milk a teaspoon at a time.
  • Remove the waffle to a warm plate and continue until you have cooked all the batter.
  • Serve the waffles with butter and warm cranberry syrup or your favorite sugar-free syrup.
    Eggnog Waffles with Cranberry Syrup

Notes

Note: You can also mix the batter in a blender quickly and easily and clean up will be a breeze. Just place all the ingredients in the blender and mix until they are fully combined. Allow the batter to sit five minutes and pour it directly from the blender pitcher into the hot waffle iron. Yield: approximately 4-5 waffles depending on the size of your waffle iron.

Keto Chow Waffles

YUM! This is the only word I can think of that accurately describes these protein packed waffles. Dress them up with whipped cream and syrup, or just eat them straight off the waffle iron; either way I guarantee you will not be disappointed.

Ingredients

Whipped Cream

Instructions

  • First, melt the coconut oil in a microwave safe bowl. This is crucial: if the oil is not melted it will harden and make lumps in the batter. Combine with the remaining waffle ingredients until smooth.
    Img 0541
  • Heat a waffle iron to high heat. Spray with cooking spray and cook waffles until golden brown.
    Img 0540
  • Beat whipping cream and Swerve on high until stiff (2-3 minutes).
    Img 0539
  • Dress the waffle with your favorite low carb toppings (berries, calorie free syrup, bacon, chocolate chips, etc.). Enjoy!
    Img 0537
  • I used Lilly's chocolate chips and Hershey's sugar free chocolate syrup for my waffle; I highly recommend this combination!

Ingredients

Mint Meltaways

Chocolate coating

  • 2 tablespoons refined coconut oil
  • 6 ounces sugar-free dark chocolate, chopped into small pieces

Instructions

Mint Meltaways

  • In a large mixing bowl, beat the cream cheese with an electric mixer on low speed until it is softened and has spread out in the bowl.
    Img 0866
  • Add the Keto Chow and heavy cream and beat on medium speed until they are fully mixed in.
    Img 0875
  • Add the butter and the sweetener; add the peppermint extract and food coloring now if using.
    Img 0828
  • Beat the mixture for about 30-45 seconds on low speed, then raise the speed to medium-high and whip until the mixture looks light and fluffy.
  • Scoop out teaspoon sized balls onto a tray lined with waxed paper or parchment paper.
    Img 0917
  • Or prepare an 8” X 6” or similar sized rectangular cake pan by greasing and lining with parchment paper cut to fit the bottom of the pan. Spread the mint mixture into the pan in an even layer.
    Img 0914
  • Chill in the coldest part of your refrigerator for at least 4 hours, preferably overnight. When it has set, turn it out of the pan, remove the parchment paper and cut it into small squares.
  • If it becomes too soft to work with, place it in the freezer for a few minutes.
  • To serve, dust the pieces with confectioner’s sweetener or drizzle them with chocolate coating and chill until the chocolate is set.
    Chocolate Mint Meltaways

Chocolate coating

  • Melt the coconut oil and the chocolate together.
    Img 0871
  • You can melt them in a microwave safe bowl in the microwave or in the top of a double boiler set over gently simmering water.
  • Stir the mixture to make sure it is mixed completely together.
    Img 0893
  • Drizzle the chocolate over the prepared mints.
  • You can also use the chocolate coating to make molded mints by following the manufacturer’s directions for filled chocolates from your favorite candy mold.

This really this works with just about any flavor of Keto Chow but it’s especially fun with chocolate since it tastes a lot like store-bought hot cocoa anyway. Be sure to try it with Chocolate Mint and Pumpkin Spice Caramel too!

Instructions

  • Preheat the oven to 325 degrees.
  • Prepare three 4-inch pie pans by buttering them well.
  • Soften the cream cheese by placing it in a bowl and beating with an electric mixer.
  • Then add the rest of the ingredients and blend until fully combined and completely smooth.
  • Pour the mixture into the prepared pie pans and place the pans on a cookie sheet.
  • Bake at 325 degrees for 15-20 minutes, or until the tops are set but the pies are still slightly soft in the center.

Ingredients

Instructions

  • Start by choosing your oil or nut butter. Your choice will affect the flavor of the cookie dough. I used this natural peanut butter because I LOVE peanut butter. Soften your oil/nut butter in the microwave and whip with almond milk until smooth.

  • Add vanilla, and Vanilla Keto Chow powder to mixture and beat for one minute.
