Chris Bair is a technology and computer geek. He became involved in the nutritionally complete "future foods" movement in January 2014, originally with a conventional recipe and later switching to a high fat, low carb "ketogenic" variant on October 2014. In January 2015 he created the recipe for Keto Chow and released it without restriction for anyone to use, at the same time he began mixing the recipe up for people that wanted a finished product and has seen steady growth in the business every month since.

What is “Keto” or a Ketogenic Diet, how do you do it? Miriam and Chris from Keto Chow sit down to talk about how to do a well-formulated ketogenic diet and set yourself up for success.

Carbs are an upper limit, meaning do not go higher than that. You want to be as far below them as possible, approaching zero if you can.

You want to hit your protein goal. If you go over it, that’s not a big deal. There’s a thing in your body that can turn protein into glucose but it’s DEMAND driven, not supply-driven, and so long as you’re keeping your carbohydrates low, your insulin will be low as well and too much protein isn’t something to be concerned about. Too little protein is a problem. A lot of people argue about this but Dr. Benjamin Bikman settled the debate back in 2018:

Fat is more variable. If your insulin is low then your body will be able to supply fat using your body’s reserves (yay!). If you are just starting keto then your insulin is likely high enough that the fat is locked away and you will not be able to access it readily. Here’s the rub: you’re not eating carbs so you don’t have glucose; but you also can’t access stored fat so unless there’s sufficient fat on your plate, your cells will not have any sources of energy and you’re going to get hungry. Probably REALLY hungry and think this keto thing is a pack of lies. The solution is to make sure you are getting sufficient fat until your body figures out what it’s doing and can pull from storage. Especially when you’re starting up the amount of fat you’re eating. Throw some extra butter on your steak, add some more heavy cream to your diet root beer, etc… After you’ve adjusted, then you can start running a caloric deficit but you’re probably not even going to need to deliberately do it since your body should clue-in and tell you “nah, I’m full – save that for later”

Finally: this cannot be emphasized enough: get salt. Like: a lot of salt. Not to be melodramatic but everything you’ve been told about limiting salt consumption is dead wrong and has no application to a ketogenic diet with low insulin levels. Salt your food. Salt your drinks. Eat some pickles. Drink some pickle juice. Make some chicken broth. Add more salt to your food. Failure to get enough salt will result in you feeling like crap and getting “Keto Flu” – I can speak from experience.

Fixing Keto Chow that’s too salty and/or too thick

You keep hearing how amazing Keto Chow is, the reviews are fantastic… but you mixed it up and it’s super thick and it’s WAY too salty – what’s going on? Was everyone lying? No, you just need to add more water!

On the Keto Chow instructions, it says to add 14 ounces (or more) of water, sometimes that gets interpreted to “mix to 14 ounces total” and if you do that it’s going to be WAY too thick and unbearably salty. It’s going to be GROSS. What you need to do is add more water, most people like the taste and thickness when the total mixture is around 20 ounces, or a nearly full Blender Bottle. If your Keto Chow is already mixed up and not the way you like it, just add more water!

It’s as good as the commercial!

I was a bit skeptical however Keto Chow is delicious. The package arrived pretty quickly and included the quality shaker, Keto Chow packets, and easy instructions. Every flavor in the sample pack was amazing in my opinion. I usually don’t like fake strawberry or root beer flavors but even THEY were yummy! There was no dreading drinking the shake. I actually looked forward to each one. I made a shake at night before I went to bed and drank it for my first meal the following day, which for me, is around noon. The shake kept me satisfied until supper time.
Keto Chow is not as crunchy as Hansel or Gretel but much easier to prepare. ha ha I love the witch commercial for Keto Chow. It’s witty, funny, and smart.

Earned a new customer

I first heard of Keto Chow via Facebook after watching the “Keto Witch” video. I must confess I was a bit annoyed and expected the video being dull and corny. It should not surprise me the “Keto Witch” mentioned every reason why I fell off the Keto wagon so many time. Shortly after the video, I started reading reviews and watching a few videos. Easy, convenient, and delicious!

I’ve known about Keto Chow for quite some time, but never took the steps to try it. Once I compared costs between what I was spending eating out throughout the month, it was cheaper and healthier to take the leap. My first purchase was Snickerdoodle and Chocolate Peanut Butter. Snickerdoodle has just the right level of sweetness and Chocolate Peanut Butter takes care of all of my sweet tooth battles. I’ve tried lots of keto shakes and low carb type meal replacements. They were OK but not great. I am totally blown away by this meal replacement. Just a reminder: We are closed for Labor Day Monday, September 2

Just by way of reminder: The United States Post Office, as well as UPS and all major parcel carriers, will be closed on this coming Monday for Labor Day. Consequently, Keto Chow is also closed. That means that order placed after about 10 am on Friday (tomorrow, 24 hours from when I’m posting this) will not ship until Tuesday, September 3rd.

If an order comes in on Friday afternoon and it’s set to be shipped by UPS Next Day Air, it will not be delivered until Wednesday, September 4. I know I’ve been guilty of forgetting about weekends and holidays when I’ve placed orders online but I want to make sure that people are informed as possible.

Amazing Product — Amazing Company!!
I LOVE Keto Chow! The flavors are fantastic and it really curbs my appetite, helping me to stick to my keto plan with ease. My 16yo daughter really loves it, too. It takes all the guess work out of putting together a meal with correct macros and satisfies my sweets cravings as well. Recently, our order came through the mail with a large puncture in the packaging. Not only did we lose more than a third of the contents, I was concerned about potential malicious contamination. I took a couple of pictures and sent a quick note to customer service. Within moments, Jenn contacted me back and let me know that they were sending out a replacement for me at no extra charge!! ALTERNATIVE WAY TO SERVE
I really love this stuff, and the banana flavor is great. I started by following the directions, but then I tried adding it to my keto smoothies and drinking them instantly and it all got MUCH easier.

I use almond milk, ice, avocado oil (as specified), low carb nut butter, Rebel Icecream (which is super keto friendly and basically heavy cream) and I blend it into a thickshake and it is AMAZING. I have it for breakfast every day and it really gives me the energy I need. I’m actually not hungry again for hours, and it’s so delicious, especially in summer, it’s a thick shake for breakfast.

Great and unique product
These mean replacements are rather amazing. They DO NOT have an odd aftertaste, are filling, and the nutritional balance is just right. I have used then per package instructions and also in pound cake made with CarbQuick. The pumpkin spice pound cake was one of the best I have ever had, and greatly keto. Order more quickly!
This is amazing! I have tried every diet known to mankind. Shakes always left me starving. Not Keto Chow, I am full! There is so much of it and it is thick and delicious. Best of them all !!!
I just have to say, I’ve tried so many so-called Keto and LC shakes and meal re[lacement drinks over the years and they all vary in the macros, the nutrients the good or bad ingredients, etc, but they all shared one unmistakable characteristic. They all tasted awful! They were either too thick or too thin or just weird in texture. Even if the texture was palatable the taste was either non-existant or just plain gross. Every health shake for any purpose, protein, weight loss, meal replacement, etc. needs to step up their game. your product is head and shoulders above them. I think Strawberry will be my favorite, I’m just waiting for my sample of the natural strawberry to compare and then I will place an ongoing subscription. I can’t recommend your product more highly and look forward to trying the savory flavors and the electrolyte drops as well. My go to meals after surgery
So I bought a few big bags of Keto Chow because I live alone and had shoulder surgery on my dominate hand. I had to have something easy to make that didn’t make a mess. So I went to Costco, loaded up on butter and bought an immersion blender. I bought blender bottles to make 3 batches each time. I haven’t found a flavor I don’t like, so I’m very impressed. I made Keto Chow Ice Cream for one meal following the 2KrazyKetos recipe. I will continue to use Keto Chow for meal replacement and an ice cream treat too! The only thing I don’t like is the packaging. The package is hard to get closed properly.

Keto Chocolate Toffee Walnut Brownie Bark

Ingredients

Instructions

  • Preheat oven to 325 degrees and grease your baking pan with a thin amount of ghee or butter.
  • In a small bowl, whisk together Keto Chow, almond flour, baking powder and salt,
    Chocolate Toffee Brownie Bark
  • In a large bowl, beat egg whites until frothy. Beat in sweetener and cocoa powder until smooth. Then beat in melted butter, cream and vanilla.

  • Beat in the almond flour mixture until well combined. This will get thick so I recommend changing to a fork instead of a whisk.

  • Spread batter onto greased pan into a thin layer.

  • Sprinkle crushed walnuts on top and press into the batter gently.
  • Bake 18 minutes, until puffed and set. Remove from oven, turn oven off and let cool 15 minutes.
  • Use a sharp knife or pizza wheel to cut into squares, but don't separate. Return to warm oven for 5 to 10 minutes to crisp up slightly.

Ingredients

  • 6 slices bacon
  • 1 1/2 lb. 80/20 ground beef
  • 1 1/2 lb. ground pork (can be substituted with additional ground beef)
  • 1 medium sweet onion diced
  • 2 medium green bell peppers diced
  • 2 tsp. minced garlic
  • 3 cups organic beef stock
  • 2 Tbsp. chili powder
  • 4 tsp. ground cumin
  • 2 tsp. salt
  • 1 tsp. ground pepper
  • 1/2 tsp. cayenne pepper
  • 30 drops liquid monk fruit or stevia optional
  • 2 servings Creamy Tomato Basil Keto Chow (or 2 scoops)

Instructions

  • Heat up a large cast iron pot or Dutch oven on medium heat.
  • Dice bacon and add to pot with coconut oil. Cook until fat is rendered but don't overcook; the bacon should still be soft.

  • Add ground beef and ground pork and cook most of the way through. Break meat into small pieces.

  • Turn heat to low and cover the pot. Allow to simmer for 1 hour. For a thicker chili, simmer with lid off for at least 30 minutes.

Keto Chocolate Toffee Cheesecake

Ingredients

Topping (optional)

  • 2 Tbsp Lakanto suntella or any nut butter; pili nut butter works great
  • 1 ounce coarsely ground pecans

Instructions

Crust

  • Preheat oven to 325 degrees. Combine all ingredients in bowl.

  • Press ingredients into bottom of 8" springform pan.

  • Bake in 325 degree oven for 10-15 minutes until edges begin to brown.

  • Remove from oven and place in fridge to cool.

Filling

  • Bring cream cheese and eggs to room temp. With a hand mixer, combine Lakanto sweetener and cream cheese until smooth

  • Add eggs, almond milk, sour cream, and Keto Chow. Combine well but don't overmix or you will add air to mixture.

  • Pour filling into crust and lightly tap pan on counter to remove air bubbles.

  • Bake at 325 degrees for 50 minutes or until edges begin to brown and center 2" is slightly jiggly. (DONT OVERCOOK or it will crack.)

  • When done, turn oven off and crack open door for 10 minutes.
  • After 10 minutes, gently run a knife around edge and close oven door. Allow to cool for another 30 minutes.
  • Remove from oven and drizzle 1 tablespoon of suntella (or other nut butter) across top.

  • If desired, sprinkle coarsely ground pecans over top and then drizzle over suntella or nut butter.

Notes

Place in fridge and allow to cool for at least 4 hours.
