Spumoni Bombe

Spumoni Bombe

Spumoni is such a classic frozen, summer treat, a combination of chocolate, pistachio, and cherry ice-creams studded with candied fruit and nuts. This version uses Keto Chow’s Raspberry Cheesecake flavor for the sweet berry layer instead of cherry. The unmolded bombe looks very impressive, with its festive layers of color, but you can layer the mixture in individual serving bowls, or popsicle molds for a more casual presentation. You can also layer it in a loaf pan for easier slicing and storage.

  • Line a 2 1/2-quart to 3-quart freezer safe bowl with plastic wrap. A clear bowl is ideal as it will allow you to see the layers as you build the bombe. Overlap as many pieces of plastic wrap as you need to make sure the entire inside of the bowl is covered, leaving a couple inches overhang outside the bowl, this will help you remove the bombe when it’s frozen. Make sure the plastic wrap is pressed into the bowl completely. Any air pockets will mar the shape of your bombe.
  • In a large mixing bowl, whip two cups of the heavy cream with the powdered allulose until stiff peaks form. Place in the refrigerator to chill.
  • In a medium mixing bowl, beat together the Chocolate Keto Chow, 1/3 cup almond milk, 1/3 cup heavy cream, and the cocoa powder until well mixed. Fold in one third of the prepared, whipped cream, then fold in the almonds.
  • Spread the chocolate mixture in the bottom of the bowl, keeping the edges as neat as possible. Place the bowl in the freezer while you make the next layer.
  • In a medium bowl, beat together the Raspberry Cheesecake Keto Chow, 1/3 cup almond milk, and 1/3 cup heavy cream, then fold in one third of the prepared whipped cream and then the raspberries.
  • Spread the raspberry layer evenly over the chocolate layer, making a clear line around the edges of the bowl and return it to the freezer while you work on the final layer.
  • In a medium bowl, blend the Pistachio Keto Chow, the remaining 1/3 almond milk, and 1/3 heavy cream. Fold in the remaining third of the whipped cream, and then fold in the pistachios.
  • Spread the pistachio layer over the raspberry layer as evenly as possible.
  • Cover the bowl tightly with plastic wrap and return to the freezer. Freeze overnight.
  • To unmold the bombe, fill a larger bowl with hot water and carefully dip the frozen bowl in for a few seconds at a time, until you can pull the plastic wrap loose from the inside of the bowl. Gently lift the bombe by the overhanging pieces of plastic wrap, to make sure it is free, then place a plate over the bowl and invert the whole thing so the bombe releases onto the plate. Carefully pull off the plastic wrap.
  • Allow to sit at room temperature for five to ten minutes before slicing into servings.
  • Store any remaining servings in the freezer, in an airtight container for up to a month.

Notes

You can use a silicone cake deep cake pan instead of a plastic wrapped bowl, and remove the bombe by turning the silicone pan upside down and pulling up the sides. No need to place in hot water for removal this way. 
Do not let each layer freeze solid before adding the next layer or the layers will separate when slicing for serving.

Instructions

  • Preheat the oven to 350℉ and line an 8x8 pan with parchment paper. Leave two of the sides long and allow them to hang over for easy removal.
  • Pulse the pistachios into fine crumbs with a food processor, spice grinder, or blender.
  • With an electric mixer, cream together the butter,* sweetener, eggs, and extracts on medium speed. Add in baking powder, Keto Chow, and the pistachio crumbs; mix on medium spend until everything is fully incorporated.
  • Add the batter to your prepared pan. It will be thick, but spread it to the sides the best you can. Bake for approximately 25 minutes.
  • To make the frosting, cream together the butter, cream cheese, vanilla extract, and almond extract on medium speed. Once it’s nice and creamy add in the confectioner’s erythritol and start beating on low and then on medium speed until thoroughly mixed.
  • Spread frosting on cooked bars.
  • Store in the refrigerator for up to three days.

Notes

*For high altitude bakers: melt the butter before adding to the mixing bowl, add 1.5 Tbsp. water to batter, and bake for 3-5 minutes extra.

Instructions

  • Soak pistachios in water for 20 minutes.
  • Combine butter, sweetener and egg with mixer on low speed. Add keto chow and almond flour and mix until well combined.
  • Blot dry pistachios with a paper towel and add into batter. Mix thoroughly.
  • Scoop onto plastic wrap and form into a cylinder with your hands and the wrap. Finish wrapping and refrigerate for at least two hours or even overnight.
  • Preheat oven to 350 degrees.
  • Remove plastic wrap and slice into 16 by cutting in half and those halves in half again until you have 16 slices. Place sliced cookies onto parchment paper on a cookie sheet.
  • Bake at 350 degrees for 15 minutes. Allow to cool.
  • You can leave as is or if you want to get fancy you can dip the ends in chocolate and add crushed pistachios or coarse sea salt.*

Instructions

  • Toast the nuts by placing them in a dry skillet set over medium-low heat for about five minutes, or until they begin to look lightly browned and smell toasty. Keep a close eye on them as they can burn quickly. Then move them to a tray lined with parchment paper to cool.
  • Microwave the white chocolate chips in 15-second bursts, until melted enough to stir smooth.
  • Mix the toasted nuts into the white chocolate and spread the mixture onto your lined tray in one even layer. Place in the freezer to set.
  • Use a blender to mix the allulose, almond milk, and Keto Chow until the allulose is dissolved, and the Keto Chow is well incorporated.
  • Add the heavy cream and the pistachio extract if using; blend briefly until combined and frothy. If you blend too long, you will turn the cream into butter.
  • Transfer to your ice cream machine and churn according to the manufacturer's directions.
  • While the ice cream is churning, break the chocolate-covered nuts into individual pieces and add to the ice cream mixture. Some machines can mix in add-ins for you. If yours does not, fold them into the ice cream when you transfer it.
  • Transfer the ice cream to a container and freeze for at least four hours.
  • Keep in an airtight container in the freezer for up to two weeks for best results.

New Limited-Edition Keto Chow flavor: Pistachio!

Following on the amazing Lemon Meringue, we are pleased to introduce another new limited-edition flavor: Pistachio. It passed quality testing and is ready NOW for purchase. What’s the Pistachio like? If you’ve ever had the green pistachio flavored pudding or pistachio ice cream (that IS NOT Wasabi), that’s what you’re in for! If you mix it with heavy cream, you’ll get the more muted flavor with a lot of creaminess. If you opt to mix it with melted butter and warm water, the pistachio flavor comes through much stronger.

First things first: Pistachio is a LIMITED EDITION flavor. It is ONLY available in the individual sample size packet, and it’s a limited quantity. We will NOT be adding the Pistachio to the sample bundles and it cannot be purchased in the bulk bags. When we run out of the limited edition, that’s the end of it.

Each packet of Pistachio Keto Chow has a unique serial number on the back, just like we did with the Lemon Meringue. Why? Mostly because the company that does our packaging has the capability to do it, we thought it was cool, so we did it. “Collect them all” I suppose =) The first delivery we received is a bit random in the numbering so you may get numbers from the end of the run instead of the beginning. We’ll have that sorted out with people getting the low numbers soon (in case that matters to you).

Pistachio is also the second flavor to switch over to version 2.5.2 which brings with it the change to Real Salt. Real Salt tastes better than the regular salt we have been using in the past but costs a little more for us to use, we’re not charging any extra, you’re welcome! Real Salt is a tiny bit gritty, if you’ve used it in cooking you’ll notice that the added minerals mean you will occasionally get some stuff that doesn’t fully dissolve. This is normal but it should sink harmlessly to the bottom and you likely won’t even notice it.
