Chocolate Mint Fudge Fat Bombs

Full of healthy fats from coconut and avocado, this no-cook fudge doubles as an excellent fat bomb to crush cravings or top off your fat macros. The fresh mint takes the flavor to another level and keeps the fudge light and fresh.

Ingredients

Fudge:

  • 1/3 cup coconut butter
  • 1/3 cup refined coconut oil *
  • 1 ripe Haas Avocado peeled & pitted
  • 1 serving Chocolate Mint Keto Chow
  • 1 tablespoon almond milk if needed
  • 3 ounces sugar-free, semi-sweet chocolate chips plus extra for decoration

Topping:

  • 1/4 cup white chocolate chips (1.5 ounces)
  • 1 tablespoon coconut oil
  • greet food coloring
  • small bunch fresh, mint leaves

Instructions

  • Oil a 9 X 4.5-inch loaf pan and line with parchment paper, leaving some extra hanging over the long sides. This will make the fudge easier to remove later.
  • Warm the coconut butter and coconut oil to soften; place in a blender with the flesh of the avocado and blend until smooth.
  • Add the Keto Chow and blend. If it is too thick to blend, add the almond milk.
  • Melt the chocolate chips carefully in the microwave or with a double boiler over gently simmering water.
  • Fold the melted chocolate into the avocado and coconut mixture.
  • Spread the fudge into the prepared loaf pan and chill in the freezer for about 20 minutes or until set.
  • Melt the white chocolate with the coconut oil in the microwave or over a double boiler of gently simmering water. Add a drop or two of green food coloring and stir to distribute the color.
  • Spread the white chocolate mixture over the fudge and decorate by pressing in chocolate chips and mint leaves.
  • Chill in the freezer for another ten minutes or until set.
  • Remove from the pan by lifting the parchment paper handles. If it won’t come loose, allow it to come to room temperature for ten minutes.
  • Cut the fudge into 24 pieces. Store in an airtight container in the refrigerator for up to five days or in the freezer for up to three months.

Notes

*Refined coconut oil gives a milder coconut flavor.

Ingredients

  • 1/2 cup heavy cream
  • 8 ounces sugar-free, white chocolate chips
  • 1 serving Banana Keto Chow
  • 1 ounce unsalted butter
  • 1/2 tsp pure vanilla extract
  • 2 tsp sugar-free sprinkles for decorating optional

Instructions

  • Line an 8x4x2 loaf pan with plastic wrap and lightly oil the plastic wrap.
  • Place the white chocolate and heavy cream in a microwave safe bowl and heat in 30-second bursts until the chocolate is melted and the cream is hot. Stir until completely combined. You can also heat the cream and melt the chocolate in a small saucepan over low heat.
  • Stir in the Banana Keto Chow, then stir in the butter and vanilla extract.
  • Spread the mixture into the prepared loaf pan.
  • Place the sprinkles over the top and gently press them into the surface.
  • Cover with plastic wrap and chill for at least four hours.
  • Remove from the pan and cut into 18 pieces. Store refrigerated in an airtight container for up to a month.

Mint Chocolate Soft Fudge

  • Line an 8x8” pan with parchment paper and grease.
  • Add chocolates and Keto Chow to a mixing bowl. A stand mixer will work best but a hand mixer will also work. Set aside.
  • Butter the sides of a large, lidded, heavy pot with your stick of butter. Pour in the cream and xylitol and stir together. Place over medium heat and stir constantly until it comes to a rolling boil.
  • At this point, cover with a lid for one minute and then remove lid. Make sure to set a timer. Continue cooking on medium heat until the mixture reaches 230℉ on a candy thermometer. This should take about 2-3 minutes, but it is best to use a thermometer. Do not overcook or leave on the heat too long, or the fudge will crystallize and harden.
  • Remove from heat and add the remaining butter, the vanilla extract, and mint extract. Let them sit for one minute in the candy mixture without stirring. Pour the mixture over the chocolates and Keto Chow. Do not scrape the pot. Beat fudge on low for two minutes, then on high for five minutes. (Be sure to whip for that full time.) It will have the texture of a soft marshmallow cream.
  • Pour into the prepared pan. Cover and refrigerate until set—at least four hours, or overnight.
  • To cut, remove slab with parchment paper and use a sharp knife to cut into even squares. Keep refrigerated in a sealed container.

Notes

*Xylitol is best because it will melt and not leave a grainy texture. Allulose can work, but will be slightly grainy. Do not use erythritol as it will crystalize once heated.

Instructions

  • Line an 8x8 pan with foil and set aside.
  • Over medium heat, whisk together heavy cream, swerve, Orange Cream, and butter. Whisk continuously until it boils. This takes about 10 minutes.
  • Remove from heat and add the chocolate chips. Mix together (wooden spoon works best) for about 1 minute.
  • Add to prepared pan and place in fridge overnight. Remove from pan and remove foil and cut with a sharp knife.
  • This keeps at room temperature or in the fridge. For a softer fudge, keep at room temperature; refrigerate for a harder fudge. Keep in a sealed container.
