Chris Bair is a technology and computer geek. He became involved in the nutritionally complete "future foods" movement in January 2014, originally with a conventional recipe and later switching to a high fat, low carb "ketogenic" variant on October 2014. My friend Dave Feldman had planned to do an experiment where he did a 4-week study of the effects of Extra Virgin Olive Oil (EVOO) and Butter, with all other sources of calories consumed remained constant. “Planned” because he ran into some problems and stopped. This is something I’ve done multiple times in the past so I decided to take over from Dave and run with it (besides, the guy can only do so many experiments a year). I’ll quote from Dave here:

One of the most common suggestions in lowering cholesterol (both total and LDL) is “replace saturated fat with mono and polyunsaturated fat”. This advice appears to have lots of evidence behind it. I’ve both read many studies and heard many stories that back up this advice, although individual results can vary.

In particular, I regularly hear one should “replace butter with extra virgin olive oil” where they can. Given the enormous popularity of both these sources of fat, I decided to set up an experiment to test each in isolation — and it’s going to be a bit ambitious.

Personally, I would much prefer to use Avocado Oil or Light Tasting Olive Oil, both have a light flavor that isn’t super terrible. Extra Virgin Olive Oil, on the other hand, tends to have a rather strong flavor that’s going to be a bit difficult to get through for 21 consecutive meals (twice). I suspect it’s going to be a bit like when I did Macadamia Nut Oil back in 2019, tolerable but no fun. As Dave said, it’s important that it be extra virgin olive oil because that’s kind of the “go-to” when people take out butter and other saturated fats from their diet, and the additional compounds that are in the extra virgin olive oil will likely come into play as well.

Experiment Design

The Experiment will be what’s called a “double crossover” – meaning that I will go back and forth TWICE modulating the variable (butter vs EVOO) each time. A “crossover experiment” is where the people doing the experiment do both phases, typically they do the placebo/control and the intervention. By doing this you can see if the effects of the changes are from a participant’s personal idiosyncrasies or if the change is really having an effect. By doing the crossover twice, it will allow control for a bunch of variables and will show if the effects of one fat are repeatable the second time, clarifying the effects. The only better way to do the experiment would be to wait a few months and repeat the experiment in the opposite order to further rule out the possibility of the order changing the results. I’m not going to do that, so don’t ask.

I will attempt to keep all other variables as equivalent as possible throughout: eating times, exercise times/duration, and sleep schedule. For the Extra Virgin Olive Oil (EVOO) I will be using Kirkland Signature Extra Virgin Italian Olive Oil. There is some VERY heated discussion about the authenticity and purity of Olive Oils, this particular product appears to be authentic and pure, it also is readily available for anyone else that is crazy enough to repeat this experiment. For the butter, I will be using standard plain Kirkland Salted Butter. I won’t be using “grass-fed” Kerigold or other fancy butter because the metabolic difference is negligible and I’m not buying into the narrative that beef and butter are only OK if they are “grass-fed” – if you want to have a discussion about the merits of “grass-fed” vs. conventional, please contact Dr. Peter Ballerstedt.

My daily diet during the experiment will consist entirely of:

  • 3 servings of Keto Chow – I’ll be using the plain Chocolate Flavor for all 84 meals during the experiment
  • 1 can per day of Kirkland Wild Alaskan Pink Salmon – this will add additional protein and give 1080mg of omega 3, plus something to chew =)
  • Water and Keto Chow Electrolyte Drops will be consumed ad libitum
  • 155ml of EVOO or 175g of Butter, during their respective phases of the experiment

Dave’s Endpoints of Interest

I’ll just go ahead and quote Dave for this:

As with the original design of this experiment I have outlined two categories of interest: lipid levels and inflammation markers. However, I’ll now be adding an additional test via Boston Heart that I’ve been waiting for — the Oxidized Phospholipids on apoB test (OxPL).

Something I’ve long speculated on is whether OxLDL would track tightly with OxPL. OxLDL is a pass/fail test — either the LDL particle has detectable levels of oxidation or it doesn’t. But the OxPL should show the degree of oxidation in those particles detected as an average for the total sampled. Thus, I think it will be an excellent test for risk and give us much more valuable information (but I do have some caveats, discussed below).

  • Will EVOO interventions have lower relative total and LDL cholesterol levels (TC & LDL-C)?
  • Will EVOO interventions have a greater oxidized LDL to total LDL particle count ratio (OxLDL/LDL-P)?
  • Will EVOO interventions have a greater oxidized phospholipid to oxidized LDL particle ratio (OxPL/OxLDL)

Discussion

Quoting Dave again:

As mentioned above, there are many factors that can influence cholesterol levels, particularly LDL. There is one effect that is rarely discussed in the literature but is of particular interest to me — how much we see particular types of dietary fat result in higher or lower oxidation per LDL particle.

In other words, are we seeing lower levels of LDL cholesterol because LDL particles are getting oxidized and cleared by scavenger receptors at a higher rate? There are many limitations to the experiment in how well it can provide evidence to this answer, but it might open the door.

We can’t easily know the true rate of clearance for OxLDL in vivo, or how much this is impacted by the degree of oxidation per particle. However, oxidized LDL particles are commonly understood to be cleared at a higher rate than unmodified LDL. So it will be meaningful data if we find a higher OxPL to OxLDL ratio in one intervention over the other.

Regardless, there will be quite a bit more data from all the other blood markers to provide comparisons that go well beyond lipids.

Results

The results are still coming in, but I have entered the first 2 tests (control and EVOO) from LabCorp and the first 3 tests (control, EVOO, and Butter) from Boston Heart into my running spreadsheet that contains ALL my blood test results from all the experiments I have done (you have to scroll pretty far over to the right, these new results are on AE).

I have only tried 2 flavors from my bundle. Mocha and Strawberry. I had the strawberry the morning after I mixed it. And it was not that great. Just started on Keto Chow after my sister told me about it. She had done a 40-day challenge of 3 shakes a day and said it was the easiest thing she’d ever done! Already experiencing the keto lifestyle over the past year, I decided to give it a try. I want to lose 50 pounds. I’m a 52 year old male, 6’ tall and weigh 240. When I started researching Keto Chow I came across the 100-day challenge where the founder lost 50 lbs in 100 days (and improved his blood panels!). I thought, this is for me! What’s 100 days out of my life to reach a goal I’ve had for so long but never managed to reach. Just shakes is a challenge because there is so much psychological chatter that goes on when not eating “real food” (meaning food you have to chew). However, I’m working through it and finding some success. For one week I did two shakes a day with a sensible dinner to prime myself (hadn’t eaten keto for a good six months). Three days ago I started the shakes only. My goal is 100 days, however I’ll evaluate as I go along, and if at any point I want to go back to two shakes and a healthy, keto meal, I’ll do that. But for now, I’m finding the three shakes a day satisfying. The flavors are all incredible and varied so you’re not feeling like you’re drinking the same thing over and over. The transition back into ketosis seems less abrupt this time, and I attribute that to the electrolytes in the shake powder. I’m using grass fed butter as my fat source, and that makes the shakes satiating and extremely satisfying. The only concern I have is the low fiber count in the shakes. Three shakes provides roughly 25 grams of fiber which is the daily requirement for women, however men’s daily requirement is between 35-40 grams. So I’m playing with the idea of adding ground chia seeds (which provide 0 net carbs and 5 grams of fiber per tablespoon) to my shakes to up the fiber. I’ll keep checking my ketones as I do this to make sure it allows me to stay in ketosis. I’m hoping that by the third week of December (when my 100 day challenge is up) I can proudly say I weigh 190 lbs!

Yummy flavors, and makes you feel great!

For the past several months I have been replacing my breakfast and lunch with salted caramel and chocolate peanut butter. Wowza! These flavors are sweet! Having a crazy sweet tooth, these were perfect for me and they really help me get through the day. I’m a high school teacher with a toddler at home and am non-stop running around, especially during lunch time! Drinking these shakes totally help with that busy schedule, has awesome vitamin and minerals, and for 10 hours (that’s how long I work everyday ?) I’m not hungry AT ALL. since I started keto chow in July, I’m down 20lb ? and love fitting in my prepregnancy clothes again. Here’s how I make it: pour 14oz of warm(not hot!) Water in the blender bottle, then add grass fed butter (heavy cream is gross), wait for butter to melt, and finally and the powder and shake it up! I add ice afterwards to cool it down. There is so much flavor that I’ve found it still tastes great even after adding a total of 20oz of water haha. Enjoy the product!

Comparison of electrolyte supplements and the importance of electrolytes on Keto

Electrolytes are super important when doing anything that lowers your insulin. That could be simply not eating a lot of sugar and refined carbohydrates, doing intermittent fasting, doing extended fasting, OR switching to a well-formulated ketogenic diet and lifestyle. By far, one of the most important electrolytes is sodium, which is funny because it’s one of the easiest to get (SALT!) and yet it’s one of the more controversial electrolytes due to decades of ignorance and misinformation. If you want the full story on salt, I’d recommend checking out the work of Dr. James DiNicolantonio – he does a far better job of explaining the science behind salt and its importance than I ever could.

The short version of why salt is so important to those lowering insulin is this: as insulin goes down, that signals to the kidneys they no longer need to un-naturally hold on to so much sodium. If your supply of sodium is low, your kidneys will start to dump potassium instead, and if potassium and sodium are low then magnesium will go “out the window” and into your toilet. From a diet and nutrition standpoint, sodium is “cheap” and plentiful. Potassium is “expensive” and harder to get. Magnesium is extremely “expensive,’ difficult to find, and even harder to find in a form that can be absorbed readily by humans. Magnesium deficiency is widespread and difficult to treat.

So: keep your salt intake adequate to preserve potassium, and especially magnesium.

Our bodies are really good at maintaining blood levels of electrolytes in a tightly controlled range, to the extent that testing the efficacy of topical (applied via skin) magnesium supplements is practically impossible (you would need to cut out a chunk of skin after application and test it for minerals BEFORE it enters the bloodstream). If and when electrolyte levels in the blood begin to drop, “reserve” electrolytes will be pulled from muscles, bones, and other tissues to maintain the blood levels of the electrolytes. This will first manifest as a headache or fatigue (the dreaded “Keto Flu!). If magnesium is low, it will often show up as muscle cramps and eventually as weakening of bones.

If you have high levels of electrolytes, your body gets to do a few things. First, it’ll store the electrolytes away for later use when levels are low. After all the storage space is full, it’ll tell your kidneys they don’t need to re-absorb as much. This is a key thing I learned from Dr. DiNicolantonio: your kidneys have to pull out all of the electrolytes, along with the toxins and water that’s being filtered out. Then, based on insulin and other signals, the electrolytes and other needed nutrients are pushed back into the blood as needed. If there isn’t a need to get back some of those minerals, it’s LESS WORK for the kidneys.

Again: an overabundance of electrolytes will generally represent LESS WORK for the kidneys. Sort of “oh, you already have enough of that stuff, OK I’ll take a break then!”

Can you overdo it on electrolytes? Yes, but the result is typically far better than a deficiency. Your sweat might be a little saltier, your urine may be a little more expensive; and in extreme cases of high electrolyte intake, you may have an extra bowel movement to clear out unabsorbed electrolytes (especially too much magnesium).

Saltier sweat vs. the prospect of headaches, fatigue, and cramps – I typically go for more electrolytes. The question becomes: how do you GET those electrolytes?

For sodium, the easiest, cheapest, and most savory (see what I did there?) is simply salt. For that, I cannot recommend Redmond Real Salt enough. It’s fantastic and it’s what we use for salt in our Keto Chow shakes (despite the issues with a bit of grittiness). Salt your food, salt your water, add extra salt to your Keto Chow shakes! If you’re doing an extended fast, you can also use the Keto Chow Fasting Drops which we created at the request of Megan Ramos from The Fasting Method.

Potassium is harder to get. You can use some “Lite Salt” (Potassium Chloride). You can eat some avocados or other foods high in potassium, or at least that historically have been high in potassium.

Magnesium is hardest of all and suffers from the same problem as potassium, but to a greater degree: the process of growing food and then shipping it away to be consumed breaks the nutrient cycle, causing modern foods to have far lower levels of magnesium, potassium, and other minerals than they typically would have had historically – that article only talks about vegetables and fruits but the meat that grows from eating plants grown in depleted soils suffers the same effects. Getting magnesium is further frustrated by the FORMS of magnesium typically found in magnesium supplements: Magnesium Oxide – it looks great on a supplement label with high amounts of magnesium… that YOU can’t use. Humans aren’t very good at absorbing magnesium that’s bound to oxygen, the efficiency is typically in the single percentages. Magnesium Citrate is absorbed easily by is also used as a potent laxative. Magnesium Chloride, Malate, and Glycinate are better with the latter two being magnesium bound to an amino acid and the former being magnesium bound into a chloride. Any magnesium supplement that doesn’t use a QUALITY magnesium you can absorb is worse than worthless – it’s a false sense of hope that you’re getting magnesium, that you simply will not.

OK, let’s compare some Electrolyte Supplements!

Prompted by an exchange on Facebook, I decided to put together a spreadsheet that would compare various electrolyte supplements, with breakdowns on exactly what you are getting for your money. How much 1000mg of potassium costs in a specific supplement. How much 1000mg of quality, bioavailable, Magnesium costs. How many total milligrams of electrolytes are you getting in each dose and what each milligram of minerals costs. You’ll find that different electrolyte supplements target wildly different doses, with some at 670mg of electrolytes in a half teaspoon, and others at 4400mg in a tablespoon! Breaking it all down is the only way to compare rock salt to rock salt.

In the comparison sheet, you’ll find that the least expensive supplements by cost per 1000mg of TOTAL electrolytes is sorted to the top. My plan is to continue to add additional electrolyte supplements to the list as I find them, and as people direct them to me, similar to the comparison of keto “meal replacement” options you’ll find elsewhere on this site.

You’ll notice that the Keto Chow Daily Minerals tend to be one of the least expensive (and usually IS the least expensive) options available for all 4 sorting methods (except sodium, it’s hard to beat Real Salt at that!). When we collaborated with Dr. Ken Berry to create the Daily Minerals, the primary purposes were to:

  2. Reduce the number of supplements people needed (frankly, I think Dr. Berry wanted fewer bottles of stuff at his house, so he had a custom supplement made just for him!).
  3. Use the best versions of the minerals possible with all pre-dissolved in their ionic state, ready for easy absorption.
  4. Not have anything added: no colors, no sweeteners, no flavors. If you want to add your own lemon juice or coffee, go for it. Want it straight because you are fasting or want to cook with it? also great.
  5. Include trace minerals, some only a few parts per million, to help with other as-yet-undocumented benefits.
  6. Price it as low as possible, while still being able to pay people to ship orders and keep the lights on.

How do the other Keto Chow Electrolyte supplements fit into the formula then?

If you’re like most people and not using the Keto Chow shakes for ALL of your 3 meals a day, we recommend using the Daily Electrolytes to establish a “baseline” of daily electrolyte intake. You’ll be “done for the day” for several with just that one dose, but you will still need more of other minerals – especially sodium and potassium. For those additional electrolytes: you can get them from the food you eat or drink. Or, if you need additional supplementation, from supplements including the Keto Chow Electrolytes. We have 3 different supplements available that you can use whenever you feel like you need more specific electrolytes:

  • Keto Chow Electrolyte Drops – designed to give a solid, balanced blend of sodium, potassium, and magnesium in high-quality forms you can actually absorb. Most people that just want to supplement electrolytes like this the best. No colors, sweeteners, or flavors. Works really well on steak or burgers, incidentally (no worries about heat degradation!).
  • Keto Chow Magnesium Drops – introduced to help Miriam stop getting headaches and muscle cramps at night, also helps her sleep better. Guess what, it’ll probably do the same for you! Uses a high-quality magnesium chloride concentrate and has a small amount of sodium and potassium, along with other trace minerals.
  • Keto Chow Fasting Drops – very high in sodium, with a workable amount of magnesium and potassium. The potassium in the Electrolyte Drops was too high for Megan Ramos of The Fasting Method, who asked us to make one that was more suited for their patients with kidney issues. Whatever Megan wants, Megan gets. The Fasting Drops are especially suited for dosing up sodium during an extended fast where insulin gets REALLY low and sodium requirements go up substantially. Still no flavors, sweeteners, or anything else to derail you while fasting, still has the same trace elements.

If you do happen to be using Keto Chow shakes 3 times a day (which isn’t required nor recommended to most people, it is POSSIBLE, however) then you will NOT need the Daily Minerals, period. You may still need some of the other electrolyte supplements as you feel necessary.

I love these sample packs! It saves me from getting sick of the same shake over and over, and every single flavour is just fantastic. The chocolate peanut butter flavour tastes like Reese’s peanut butter cups in liquid form!!! So tasty and filling!
I actually don’t really like mixing my shakes with butter – it tends to stay a little grainy when I do that, but using heavy cream I get a perfect consistency.

Best shakes around

These shakes are so good! They are a great meal replacement. I have been using melted butter and make them the night before, letting them chill in the fridge overnight. The shakes are thick and smooth. I have not experienced any butter clumps or clumps of powder.

The flavors are amazing – I ordered one large bag and a few other flavor samples to try once I was close to finishing the starter bundle. I even found myself enjoying flavors I didn’t think I would. Not one flavor has been a let down. Definitely give these a shot!

I ordered 48 individual packs and multiple different flavors.. and it has not disappointed so far! My absolute favorite flavor, by far, is the Lemon Meringue!!!!! I cannot say enough about how delicious this flavor is! I could order just this one flavor and be completely fine drinking it everyday! The other flavors are good also, the Orange Creamsicle and Rootbeer are next favorites. I drink one shake per day, i use HWC as my fat source, I keep it overnight in the fridge and by morning, it has a thick shake like consistency! It takes me from morning until early afternoon to drink it all, it is very filling and satisfying… i am never hungry and usually only have the one shake all day, I may eat 2 or 3 ounces of cheese and/or chicken but I am never hungry after drinking Keto Chow! It was definitely worth the purchase!

Haven’t tried one I haven’t liked yet! I was skeptical of the raspberry cheesecake and it was so good! I’m scared to try the root beer but I’m hoping it will also pleasantly surprise me. I do 4 oz. of heavy whipping cream or half and half, 8 oz. of a low carb milk, and 8 oz. of water. Super creamy and delicious, not gritty or powdery tasting like most protein shakes. Make the night before and let chill in the fridge over night! Just wish they sold big sample packs. I don’t want the same flavor every day for a month.

The perfect solution for lunch on the road!

My biggest challenge with trying to maintain any sort of diet has always been lunch. I’m on the road a good portion of the week and if I don’t plan well, lunchtime is a disaster for me that usually ends in fast food and frustration. Keto Chow meal replacement shakes have been an amazing solution! Just a few minutes to make it the night before, and in the morning I put it in a Hydro flask to keep it cool until lunchtime. It’s the first meal replacement shake that has left me feeling satisfied from lunchtime all the way up until dinner! Absolutely love it. My first taste was Snickerdoodle and I’m hooked! I’ve tried 16 different flavors and, so far, there is only 1 of the flavors I will not re-order. The Natural Strawberry was not good. I love the regular Strawberry, though! The Taco Soup was questionable, but I wouldn’t say I would never re-order it. Thanks for making these great shakes. I wouldn’t be able to get back into keto without them!

Chocolate is Amazing

This is my 4th flavor, but I opted to get the Chocolate Bulk Pack because it happened to be on sale. I’d already tried the Mocha and Chocolate Mint, so I figured this one would be good. I make it with heavy cream and water. I find myself craving it, it tastes that good. Looking forward to other flavors! As for the bulk pack, other than initially having to dig for the scoop, I’ve had no problems with the bag. It seals easily, which is really all I need for it to do!

It’s chocolate.. what’s not to love?!

Yay! A smooth creamy chocolatey milkshake, of COURSE I love it! I used mostly butter with a smidge of heavy cream just because, and let it sit overnight to my utter surprise and delight the next day.. JUST like hershey’s chocolate milk but better, thicker, and all grown up. This is backup worthy and a comfort in the world where everything’s haywire, I’m happy as a kid with a straw and the bottom of the glass coming too fast!

I’ve ordered multiple packets of Keto chow on a few occasions now, and honest to God, this stuff is AMAZING!!! Helps me stay on track

I have a pretty strong sweet tooth that I try to satisfy with a good amount of fat but it usually ends up taking me off plan. The Keto Chow sweet sample bundle was just sweet enough to satisfy my cravings and filling enough to allow me to go hours without the desire to eat. I have found that a combination of 2 tbsp of melted butter coupled with 1/4 cup of HWC will yield 4-5 hours of blissful satisfaction.
