Strawberry Keto Coconut Cream Roll Cake

What could be better than a light strawberry sponge cake rolled around whipped cream, fresh strawberries and toasted coconut? It takes a little bit more time and attention than the average cake but it’s a show stopper that will make any occasion extra special. The cake stays surprisingly tender, moist, and really tastes like a traditional sponge cake.

Equipment

Ingredients

  • 1 pint strawberries rinsed and drained
  • 1 cup unsweetened shredded coconut toasted
  • 2 cups heavy whipping cream

Instructions

Preparation

  • Line the jelly roll pan with parchment paper and lightly oil the parchment paper
  • To toast the coconut spread it out on an ungreased pan and bake in the oven at 325 until it begins to turn golden and smells fragrant. About 10 minutes. Set aside to cool.

Cake

  • Beat the egg yolks with the sweetener until the color is light yellow and ribbons form when the beaters go through. Add the food coloring and mix in if using now.
  • In a separate bowl with very clean beaters whip the egg whites until they begin to foam, sprinkle in the sweetener and continue to beat until stiff peaks form.
  • Fold 1/3 of the egg whites into the egg yolk mixture to lighten it. Then gently fold in the remaining egg whites until they are almost completely combined. Being careful to retain as much air in the egg whites as possible.
  • Mix together the Keto Chow, coconut flour, gelatin, and baking powder and sprinkle them over the egg mixture. Gently fold the dry ingredients into the eggs.
  • Using an offset spatula, spread the batter onto the prepared jelly roll pan and even it out as much as possible its ok if it looks a little bumpy.
  • Bake in the preheated oven for 10-12 minutes until the cake is set, slightly golden around the edges but still tender and soft to the touch.
  • Meanwhile sift a layer of powdered sweetener on a clean, dry kitchen towel.
  • When it’s cool enough to touch carefully turn the cake over onto the towel and remove the pan.
  • Gently peel the parchment paper away from the cake and using the towel roll the cake up the long way, with the cake rolled inside.
  • Leave the cake rolled up in the towel to cool completely while you make the filling.

Filling

  • Slice the strawberries into thin slices
  • Whip the cream to stiff peaks.
  • Unroll the cake and spread it with the whipped cream leaving about 1/2 inch of plain cake around the edges.
  • Lay the strawberry slices over the whipped cream, and sprinkle with the toasted coconut. Gently reroll the cake. Using the towel to help hold it. Make sure not to roll the towel inside again.

  • Place the cake on a platter and garnish with more whipped cream, strawberries, coconut, and powdered sweetener if desired.

  • Preheat oven to 350℉ and line a standard muffin tin.
  • To make the cupcakes, combine the almond milk, vinegar, and vanilla extract. Set aside.
  • In a separate bowl, mix together the Keto Chow, almond flour, coconut flour, cocoa powder, and baking soda.
  • Cream butter with an electric mixer until light and fluffy. Beat in the erythritol; then beat in the eggs, one at a time.
  • Beat in half the flour mixture. Slowly mix in the almond milk mixture a little at a time so it doesn’t splash out of the bowl, then beat in the remaining flour mixture.
  • Mix in the red food coloring. Add enough to make the batter bright red. The amount needed will depend on what type of coloring you use.
  • Divide the batter evenly among the prepared muffin cups.
  • Bake for about 25-30 minutes, or until slightly firm to the touch and lightly browned around the edges.
  • Allow the cupcakes to cool completely before frosting.

Frosting

  • To make the frosting, blend the Keto Chow and heavy cream in a large mixing bowl until smooth.
  • Beat in the cream cheese and then the powdered erythritol.
  • Beat in the softened butter a few pieces at a time until the mixture is light, fluffy and smooth.
  • Frost the cupcakes and decorate with raspberries.

  • In a food processor, add Keto Chow, coconut flour, erythritol (I used 1/4 cup of sweetener because I don’t like things super sweet; if you do, add 1/2 cup!!), and baking powder and pulse to combine.
  • Add in cubed butter, and cream cheese and pulse again until mixture is crumbly.

  • Beat together eggs and sour cream with a fork or whisk and add to flour mixture. Pulse until it all comes together, but not too long.

  • The dough will be sticky. Pull out half and add to wax or parchment paper and make into a round shape.

  • Put another paper on top and press until 1 inch thick. Use cutter and make the scones and add to sheet pan with parchment paper.

Notes

We prefer to use Nature's Hollow jams, though the sugar-free Smuckers and the Great Value brand from Wal-Mart are a fairly passable alternative in a pinch.

Raspberry Topping

  • 1 package sugar-free Raspberry Jell-o
  • 1 cup hot water
  • 1/3 cup frozen raspberries
  • 1/2 cup cold water

Whipped Topping

Instructions

  • Preheat oven to 350℉ and grease a 9-10" springform pan with coconut oil.*
  • Combine melted butter, almond flour, sugar, and vanilla in a small mixing bowl. The crust mixture should stick together in a ball. If your crust is too crumbly, add more butter.
  • Press the mixture evenly into the bottom of the pan.
  • Bake for 10-15 minutes or until lightly golden brown. Remove from oven and cool for at least 10 minutes.
  • To make the cheesecake mixture, beat the softened cream cheese until fluffy. Add vanilla, eggs and sweetener; beat until smooth.
  • Add Keto Chow and beat until smooth.
  • Mix heavy cream and almond or coconut milk together and pour slowly into the batter while beating. Continue to pour the milk and cream mixture until batter becomes the right consistency. It should run but still be thick. Add more milk if needed.
  • Pour cheesecake batter into pan and smooth it so that it's even.
  • Bake for 25 minutes, then reduce temperature to 200℉* and bake for an additional hour, or until fully cooked. The center should jiggle slightly when gently shaken. It will set completely as it cools.
  • Let sit until cool enough to touch pan before covering with plastic wrap and moving to fridge.
  • While cheesecake is cooling, heat 1 cup of water and frozen strawberries on stove; mash strawberries with a spoon. Add the Jell-o package to the boiling water and remove from heat. Stir and add 1/2 cup of cool water. Let cool in fridge for about an hour, or until Jell-o is thick but not completely set. Pour thickened Jell-o on top of cheesecake and continue to cool in refrigerator.
  • Once your cheesecake is completely set, combine cream, sweetener, and vanilla using a mixer or a blender until thick and stiff. Place in piping bag and pipe around the edges. If you don't have a piping bag, spoon whipped cream over top and smooth with a spatula.
  • Cut into 12 slices and serve—but try not to eat the entire pan!

Notes

NOTES: 
*Halve the recipe if using a 6" springform. When baking, it should only need 45 more minutes (instead of an hour) after you turn the oven down to 200 degrees.
