Keto Chow 2.0 Base Powder – some info

I figured I should put together a post with some details and info about 2.0 Base Powder. First, let’s talk about what the Base Powder is:

  • The Base Powder is all of the “esoteric” ingredients in Keto Chow, everything except for protein, flavor, and sweetener. Often these ingredients can be difficult or impossible to locate, especially outside the United States.
  • You take 14g of the Base Powder and add your choice of protein to make Keto Chow.

Ok, so why would you use the Base Powder instead of getting the full mix?

  • The #1 ingredient in Keto Chow is the protein powder. It takes up more volume and weighs more than any other ingredient. Eliminate the protein and suddenly you can fit 5x as many “weeks” in the same shipping package. For international shipping, this is a huge deal. You’d find some protein locally and not have to pay shipping for that.
  • If you don’t like one of the components of the sweetener, protein, or flavor in the full mix; the Base Powder allows you to use whichever protein powder with whatever sweetener you like. Want unflavored protein? Less sweetener? No Sweetener? Just Stevia? Something besides whey protein? The Base Powder is a likely solution for you.
  • Going back to the previous point, I get a lot of varied requests for customized Keto Chow – almost all of them can be covered with the Base Powder. It’s super flexible and allows me to keep my product line simple.

Now, with Keto Chow 1.9 I had two different sizes of Base Powder:

  • 21 meals in the same size bag we use for the 3 meal “day” package, the “Week” size.
  • 122 meals in a far larger bag, the “for 10lbs” size. It’s enough to mix with 10lbs of Dymatize Elite to make 5.82051 weeks of Keto Chow – this is the size we use when doing the mixing of Keto Chow 1.9

With Keto Chow 2.0 being made on an industrial scale, having the larger size wasn’t a good idea – it would add one more product I would need to order and keep in stock and they cost a lot, a single damaged package was insanely expensive to replace, eliminating the larger size was a no-brainer. The problem with that is I didn’t want to eliminate the discount people were getting by going with the larger package. The larger package was effectively $42.95 per 21 meals, so I priced the Keto Chow 2.0 Base Powder’s 21 meals at $42.00. Yes, the bigger bag is gone but the new small bag is less expensive.

Now, the Base Powder isn’t for everyone – if you use it you should be prepared to do a fair amount of math to determine how much protein powder you should use since most protein powders vary on their nutrient profiles. If in doubt, use Cron-o-meter. The Base Powder is in the Cron-o-meter database already, then you’d just add your protein powder to a “recipe” (along with how much heavy cream you’re using) and you’re good to go. The regular full mix is easier to use, especially for new users, but if you have the desire to customize a bit, you can check out the Base Powder

A note about the 2.0 vs. 1.9 Base Powder, and I’m surprised nobody asked about this yet: The Base Powder for 1.9 and 2.0 are nearly identical, I’m even using the same UPC barcode! So, if you have some 1.9 Base Powder, don’t get worked up that you don’t have the “latest” version. Now the question arises: why did I keep 2.0 Base Powder nearly identical? With 1.9 I was adding off-the-shelf protein powder that usually comes with additional thickening agents, flavor, and other ingredients. With the full mix of 2.0, I’m using my own flavorings, protein, and sucralose so I needed some additional “stuff” (potassium and xanthan gum to be specific). For people using the Base Powder with their own protein powder, the experience is going to be identical to 1.9 so I kept the formulation the same. If I used the real base powder from 2.0, it would mix up too thick with most protein powders.

Keto Chow 2.0 Update: The Protein HAS ARRIVED! (also we aren’t shipping Monday the 10th)

The Whey Protein Isolate we’ll be using for Keto Chow 2.0 arrived at the warehouse this morning and was unloaded. Currently, it’s being tested (gotta make sure it doesn’t have salmonella, e-coli or any other fun stuff) and production will likely start on Monday and will continue for a while. We’re expecting to take delivery of the first truckload on Monday, April 17th. Then I get to take some pictures to put on the website, get to check how many of the various packages fit into USPS flat rate boxes so we can make sure shipping is set up right. I’m not sure which flavors will be in the first group. We might get all of them or maybe we’ll only get a few with the rest arriving in the coming week(s). If everything goes OK on Monday I should have 2.0 available for purchase sometime that evening and the first shipments will go out on Tuesday morning (the 18th) – with many arriving on Thursday, April 19.

So in summary: give us a dozen days and you can have some 2.0!

This coming Monday, April 10th we’re not going to be shipping – something about giving people a day off… So to make up for it, we’re shipping tomorrow (Saturday, April 8). You can still place orders this weekend and Monday, it just won’t ship until Tuesday the 11th.

Keto Chow 2.0 update – protein should be shipping tomorrow

OK, here’s the short version: manufacturing should start April 5th. I might have limited supplies of 2.0 by April 14.

On Friday I went to visit the manufacturing facility we’re using for Keto Chow 2.0 to pick some (unrelated) stuff up. While there, I learned that the Whey Protein Isolate distributor didn’t want to ship the Isolate until either (a) the Concentrate was already returned, or (b) the Isolate was paid for up-front and they would take their sweet time issuing a credit for the Concentrate. How much was the isolate? Roughly half the total cost and I had paid half already back in November. So, now I’ve paid for the whole thing! (seriously, let’s get this GOING!!!!).

I just talked to the manufacturing facility – they said the protein should ship tomorrow and take 5+ business days to arrive. Once it does, they have to pull a sample for testing (gotta make sure it doesn’t have any e-Coli, salmonella or other bad stuff) and then the fun begins. They’re planning on clearing the schedule so they can make it as quickly as possible. With any luck, we’ll be getting some as early as Friday, April 14 – if not then Monday, April 17th. They’re going to be making Chocolate first (crap, that means I need to drive the pallet of Peanut Flour down to the place that’s packaging the Chocolate Peanut Butter pretty soon). Not sure if they’ll be running week and sample sizes concurrently on different machines or what. We may be having a rather exciting next few weeks.

In related news, I have the second round of Keto Chow 2.0 already on order. I’d rather have way too much for a month or two then run out!

All flavors back in stock, update on Keto Chow 2.0 availability timeline, KC2.0 certified “Keto Friendly”

To start: Rich Chocolate and Chocolate Peanut Butter are back in stock. Yesterday we got our shipment of Rich Chocolate protein powder: 4 full pallets and a partial 5th one. 4000 lbs worth – that should last a little while at least =). The shipment came as “No Touch Freight” so we had to haul our pallet jack up into the trailer and move the pallets to the end. One of the businesses nearby has a forklift and was nice enough to unload the truck for us. Then it was a matter of taking a bunch of the chocolate to mix – which is what we did most of the afternoon and evening yesterday. It’s a relief to have everything in stock again and hopefully, this shipment will last us until after Keto Chow 2.0 comes out.

On that topic, everything is set up and ready for production of Keto Chow 2.0… except for the Whey Protein Isolate. We’re still trying to arrange swapping the concentrate that was bought for the first batch of isolate. I had expected it would all be resolved early last week but we’re still waiting. As soon as that comes in, production should start immediately. In the mean time, we’re going to have the Keto Chow “Base Powder” going into production sometime this week. It’s the same product as what we currently have, just with a different label. To that end, once we have the new Base Powder we will be discontinuing the “for 10lbs.” larger bag.

I have the revised and finalized labeling for Keto Chow 2.0 done and up on the KC2.0 Nutrition Page. You’ll notice that there’s now a green (KF) logo meaning it’s Keto Friendly. Keto Chow 2.0 one of the first products participating in the Certified Ketogenic project done by the KetoVangelist podcast crew – the “0001” means it’s actually the very first in the Keto Friendly category. Technically Keto Chow 1.9 is also Keto Friendly but I didn’t bother applying for it to be included… because 2.0 is supposed to be out already (dagnabbit!). The first round of Keto Chow 2.0 will have the old nutrition information with a “label correction” sticker that talks about the change to whey protein isolate and directs you online for updated information. All of the changes are positive but it does mess around with how big a serving is. Depending on the flavor, it varies from 46g up to 49g. Most people will just use the scoop to measure out a serving but for people like me that like precision or are doing 6 meals at a time, weighing it in a bowl is the best way to get exacting amounts.

Yesterday I added the Week and Sample/Individual Keto Chow 2.0 to the shopping cart. You can’t purchase either yet, I don’t like to have back orders or pre-orders (and credit card companies REALLY don’t like them). Trust me, when we’re getting close enough to be able to order – I’ll let you know through multiple channels =). The pricing for KC2.0 is finalized – all of the flavors except Peanut Butter are the same price, which should make things easier.

So when is Keto Chow 2.0 going to be available? If you look back to what I posted in October and November it’s been out since early December. For now, I’m saying that if everything goes perfectly (protein ships today or tomorrow, flavors are all in-stock, fine mesh xanthan gum arrives) we may have KC2.0 ready to ship out before the beginning of April 2017. If the protein is delayed, or something else goes wonky there will be a corresponding delay.

“Low Carb Show” Podcast Interview, Keto Chow 2.0 update

Mark from the Low-Carb Show, contacted me a few weeks ago to see if I would like to do an interview for his podcast and the recording has just been posted. His wife sent him down the rabbit hole of Ketogenic Meal Replacement drinks and he found Keto Chow, ordered some, and enjoyed it enough to get me on his podcast to talk about Keto Chow, the progress of Keto Chow 2.0, Domain Squatters, Mac&Cheese, and a bunch of other stuff! I reference a post about Arches National Park in the podcast, I’ll save you the hassle of finding it: “Vacationing for a week (mostly) on DIY soylent” (you can see more of my Dad’s stuff here) – this is from about a month before I started doing Keto and was still doing “People Chow” which was primarily corn masa.

I keep telling my teenagers I’m “Internet Famous” – they still just roll their eyes.

It’s about time for an update on Keto Chow 2.0, wouldn’t you agree? This week we finally tackled the funny aftertaste problem for realsies. The Whey Protein Isolate we started experimenting with significantly reduced the bad flavor (so it was essentially non-existent)… for a few hours. If you tasted the mix anywhere from 30 minutes to 3-4 hours after mixing it would taste fine. For many people, this would be sufficient, but I like to mix up 3-4 days worth at a time so I can just grab them out of the fridge. I’ve said it before: I’m not going to sell a product I wouldn’t use (and enjoy using!), I’m pretty much my worst customer =). The time delay aspect was particularly vexing and pointed to some sort of ingredient interaction causing the issue. I got samples of each ingredient, mixed them up in water, both alone and in certain combinations. Straight potassium citrate isn’t particularly nice tasting.

Anyhow, the Isolate all by itself did not have any weird flavor, nothing really did… until I tasted the Enzyme Blend + Whey Protein combination. I discovered the flavor anomaly! The enzyme blend alone was fine, the breakdown of the lactose in the whey by the enzymes was most decidedly the problem and it got worse over 2 days. On Thursday we had new samples made that omitted the enzyme blend. I’m super happy to report that all of the flavors now taste exactly the way they’re supposed to, and with the “200 mesh” xanthan gum you can mix it without a blender and get good results – everything is coming up Milhouse! At least in KC 2.0.0 there isn’t going to be an enzyme blend. For most this won’t be an issue, but if you’re lactose intolerant you will want to consider using Lactaid or another enzyme blend. There are 0.58g of lactose in each serving of Keto Chow 2.0 thanks to the Whey Protein Isolate being super low in carbs. Adding 1/2 cup of heavy cream brings the lactose up to 3.31g.

This coming week we’ll make some bigger sample batches so I can start doing more extensive short-to-medium term tests as we gear up for full-on production; which I now expect to be starting (maybe) March 6 or later, not sure which flavors we’ll be doing first. The plan is that they’ll be mixing up all of the ingredients except the color and flavor in their giant mixer to make a base powder, then they can do smaller batches for the individual flavors. Anyhow, I’m super excited about the prospects of getting this going!

Keto Chow 2.0 Status Update (good news!)

TL;DR: major progress, gotta wait on the old protein to go back and get new stuff, production might start as early as next week (or not).

Yesterday I had the day off so we did some work on Keto Chow 2.0. We received some test samples of the different flavors using a different whey protein. The short version of the story is: we were going to be using a whey protein concentrate (80% protein) but there was a rather severe metallic aftertaste when we used the actual protein that was purchased in bulk. We decided to try a different brand from the same distributor (so we could apply credit for the returned concentrate) and instead of concentrate, we got whey protein isolate that’s 90% protein. The isolate is going to be more expensive (for me to buy, price will be the same) but it tastes good, has more protein, and actually has fewer carbs (win!). Specifically, the isolate has 1/3 the carbs with 2g per 100g instead of 6g, and 90g of protein compared to 79g. The bad news is the nutrition on the labels isn’t going to match what’s actually in there (the good news is it’s better than what’s on the label!) – for this first batch I don’t have the resources to have them redone so there will be a sticker directing you to the website for updated information. We’re working on returning the concentrate and getting the isolate delivered, I’m guessing that will take a week. When production starts I’ll update the Keto Chow 2.0 nutrition page with the new information.

We also ran into some issues with the viscosity of the mix. It would mix up pretty thin and watery in a blender bottle but use an actual blender or immersion blender and it thickens right up! I’m still waiting on a reply from my 2:00 am email about my theory but I think the issue is the co-packer used a granulated xanthan gum instead of the fine powder we have been using. This caused the xanthan gum to not fully integrate and there was a slight “tapioca” texture. My guess is we just need to switch xanthan gum form factor and it’ll be good for blender or blender bottle.

The flavors all tested extremely well with 2 people telling me to get the problems resolved NOW so they can order a bag of the Salted Caramel flavor! I even had my children do a tasting session, because that’s how we do market research… or something =)

Update on Keto Chow 2.0 – another delay, but there’s hope!

To recap for those who don’t live and breathe this stuff:

  • I’m in the final stages of having Keto Chow produced at a contract manufacturer.
  • Keto Chow 2.0 differs from Keto Chow 1.9 on the protein/flavor/sweetener – I’m not able to get Dymatize Elite in 500KG batches so by necessity we have to get our own stuff to replace it. The most obvious difference will be the flavoring in KC2.0 will be our own stuff.

Anyhow, we ran into a problem with the manufacturing. I had the co-packer make me some new test batches and the flavors came back really weird. Initially, I thought it was the potassium chloride we added but after extensive testing, it turned out to be a problem in the protein powder. The initial tests they did were with a random equivalent protein powder and the new samples were straight from the bulk powder they purchased for our batches. We’ve gone back and tried some different flavoring and some bitter masking agents but to no avail.

I’m not going to sell a product I don’t love. It has to have a “wow, that was really good, I want more!” going for it or it’s not going to be released.

So, as of today, we’re going to use a different protein powder from a different manufacturer. It’s likely this will add some to the cost, I’m hoping it’s less than $1-2 and we’re still aiming to have KC2.0 cost less than KC1.9. This means that Keto Chow 2.0 is going to be delayed. If we can find a direct drop-in replacement for the protein powder it may be as little as a week before we get things going.

We’re coming up on almost a year since I decided to start this endeavor – I hope we can be shipping 2.0 well before Fed 15th.


Update!

This morning we headed down to the manufacturer to work on the problem. We brought along a Keto Chow 1.9 rich chocolate in powder form, a bag of Dymatize Rich Chocolate for comparison, and a blender bottle of mixed Chocolate Peanut Butter. He had complained that it didn’t taste very good and he didn’t feel confident evaluating the mixes so when he had the Chocolate Peanut Butter (with the heavy cream) he was astonished in the extreme “Oh wow, that’s actually really good” – yep that’s the goal! We did a bunch of various tests combining different stuff together but the most telling test was when we tasted the plain whey protein in water… and the bad taste was there! After that, he said he was going to go back to the distributor and get a refund and/or exchange it for a different protein. He said the protein guys may send out a food scientist to work on the problem but ideally, we may have a solution (maybe) quickly.

Questions about alcohol on keto and using different oils/protein

Got an email today, I took long enough to answer it I thought I might as well put my answer in a blog post.

The first question was about whether they need to give up alcohol

Well, there are a lot of reports on /r/keto about being on keto lowering tolerance for alcohol (just search for “keto cheap date” and you’ll see what I mean). “Liquid bread” drinks like beer have WAY too many carbs but distilled spirits don’t – and the aforementioned lower tolerance makes it less expensive too.

The second question was about if I had considered algal oil in powder form – it’s what Rosa Labs uses for Soylent 1.6

Rosa Lab’s motivation is a bit different than mine: they want to use vegan sources for everything. While that’s possible with keto, it runs counter to much of the philosophy. MCT oil and cream are better (tasting) and have definitive advantages for ketosis. Additionally doing powdered oils with keto is difficult to do because most powdered oils use starch (maltodextrin) and you’d end up with several times more carbs that the max amount. The only exception to that is the Quest powdered MCT/Coconut oil but it’s prohibitively expensive. I did some poking around and found that to get powdered coconut oil in palettes it ends up being almost exactly the same price as the end user simply buying it from Quest off Amazon.

The third question was about switching to soy protein

Rosa Labs was using rice protein in their powdered mix but it gives an icky silty gritty mouthfeel. Doing Soy protein is the best option if you don’t want to use whey protein. Again, I’m not interested in vegan (I eat a lot of bacon) – I want the best tasting and highest nutrition that’s economical, with emphasis on taste and texture. To that end I’m using whey protein. Doesn’t have the grit of rice or the (incorrect but whatever) public relations issues that soy has with the phytoestrogen scare.

So the short answer to the 3rd question is simply: Keto Chow already has superior nutrition, flavor and mouthfeel; it’s better than the new stuff Rosa Labs is using.
