About Chris

Chris Bair is a technology and computer geek. He became involved in the nutritionally complete "future foods" movement in January 2014, originally with a conventional recipe and later switching to a high fat, low carb "ketogenic" variant on October 2014. In January 2015 he created the recipe for Keto Chow and released it without restriction for anyone to use, at the same time he began mixing the recipe up for people that wanted a finished product and has seen steady growth in the business every month since.

N=Me – (week 1 results) 2 weeks of Keto Chow, half heavy cream and half avocado oil

My previous experiment where all of my calories for 4 weeks came via Keto Chow brought out some interesting data in my 3rd week. That week I changed my fat source from heavy cream over to avocado oil, this resulted in some remarkable blood tests. A question arises as to whether my elevated triglycerides, lowered LDL, lowered HDL, and more oddities are a result of the reduced carbohydrates (under 2g net a day average), or the composition of the fats I was eating: Saturated vs. Monounsaturated, vs. Polyunsaturated. I’m planning on doing a more in-depth experiment in early 2018 but this shorter experiment will serve to further solidify a hypothesis and steer the latter test.

I just got back my week 1 blood tests and have those posted on my Experiment Results page. I expect I’ll get the final blood tests on Wednesday of next week.

For the most part, it’s been nice to be back on exclusively Keto Chow. The only real downside is that this experiment falls right in the middle of the run-up to Christmas with the accompanying parties and dinners. That sucks in that I’ve passed on some really awesome Keto food that I normally would have eaten, but what better time of year to skip all that? =)

Nothing says “Happy Holidays” quite like bringing a blender bottle to a big dinner and not eating anything else =).

Easy Keto Egg Nog (year round!)

I’m a sucker for Egg Nog. I used to eat it on my breakfast cereal =) Aside from the wanton sugar, the biggest issue was you could only get it for a short time. That’s dumb. This recipe makes super easy Egg Nog any time of year. 3.5 net carbs per 8 oz cup, full nutrition here.

Ingredients

  • 1 quart liquid eggs
  • 1 quart heavy cream
  • 2 quart unsweetened almond milk
  • nutmeg
  • yellow food coloring (if the eggs aren't colored)
  • liquid Splenda, Stevia or equivalent to taste

Instructions

  • Pour the eggs, heavy cream, and almond milk into a gallon pitcher.
  • If your liquid eggs were clear, add some yellow coloring.
  • Add a bunch of nutmeg, then some sweetener. Stir it up. Taste some. If it needs more nutmeg or sweetener, add it.

I’ve tried Soylent (powder and liquid), Schmilk, Jimmy Joy, Feasy, and Keto Fuel. Keto Chow is easily my favorite meal replacement regardless of diet. The flavors are amazing, the texture is perfectly smooth, and the packaging is convenient and really professional looking. If I had any complaint, it would be that some flavors are a bit too sweet for me, but YMMV.

My doctor has been trying to get me to go ketogenic for health reasons for over a year but it seemed too complicated. Keto Chow makes it possible to go keto very easily. Sample *ALL* the things has Chocolate Peanut Butter again

We just received a bunch of samples, among them we finally now have Chocolate Peanut butter back in stock (it’s been out since September 7, which is sad). That means that the “Sample all the things” bundle really is ALL the things again! For any that are worried: I did raise the price back up to account for it having 8 samples again. If you got a sample bundle between September 7 and now, you didn’t accidentally pay for a sample you didn’t get. That would suck.

Sample availability update, after thanksgiving mayhem

TL;DR: More samples should be available on Thursday.

We’ve had an interesting few days! Our Black Friday sale went quite well, much better than last year, and Saturday and Sunday the orders kept coming in… then Monday happened.

One of our Keto Chow users (and the guy that started me down the rabbit hole that is using avocado oil) posted to the /r/keto subreddit some pictures of himself and his girlfriend and their transformation doing Keto. He also did a shout-out to Keto Chow which he says has been instrumental in helping him do keto effectively.

The thread went a little nuts, traffic to our site went a little nuts, orders for Keto Chow went a lot nuts. I posted on the thread:

In case there was any doubt that /u/JohnnyRockets911 is NOT shilling for Keto Chow: there’s no way I would have told him to post this on the day we were doing free shipping plus a sale on the sample bundles =)

Problem with all this is, now I can’t tell what’s the result of Cyber Monday, what’s the result of the Reddit thread, and what’s a combination of the two! Yes, it’s a good problem to have =) By 2:00 pm, the 8 foot bed of our pickup was completely full and orders were still coming in faster than we could ship them. So we called it a day and will ship the rest that came in today.

Now, as for samples: The “Sample all the Things” bundle sold out last night, it was based on the number of Chocolate samples we had remaining. The bad news is that it can take weeks or even months to get more. The Good news is: I ordered more a few months ago and we are supposed to be getting them on Wednesday afternoon. As soon as we actually for realsies have them on a truck I’ll mark the samples and the sample bundles as back in stock so they can start shipping out on Thursday.

N=me experiment, final results – Dave’s making me do it again =)

OK, I got the blood test results for my final week back – you can see all 5 results on this spreadsheet. I haven’t done a thorough write-up on the results of the experiment yet because I have indeed convinced Dave Feldman to give me his thoughts. The short version is: my week 3 results (pure avocado oil, spiked my triglycerides, tanked glucose, etc…) got Dave pretty excited. Something about hypothesis validation or other =) He asked me if I was willing to go back and try it again. For Dave? Absolutely.

So, I took a week off experimenting and I’m going to start it right back up again: this time I’m going to do a week of Keto Chow only with 1/2 of the fat from avocado oil and half from heavy cream – the idea is to see if I hit a half-way point relative to the lunacy of my 3rd week results. Then I’ll get a blood test, do it for another week, and another blood test.

Meanwhile, Dave has promised to analyze my results. It may be a week or more as he’s busy with family and I don’t want to call down the wrath of his wife upon me =)
