Keto Chow Chili

Ingredients
- 6 slices bacon
- 1 1/2 lb. 80/20 ground beef
- 1 1/2 lb. ground pork (can be substituted with additional ground beef)
- 1 medium sweet onion diced
- 2 medium green bell peppers diced
- 2 tsp. minced garlic
- 3 cups organic beef stock
- 2 Tbsp. chili powder
- 4 tsp. ground cumin
- 2 tsp. salt
- 1 tsp. ground pepper
- 1/2 tsp. cayenne pepper
- 30 drops liquid monk fruit or stevia optional
- 2 servings Creamy Tomato Basil Keto Chow (or 2 scoops)
Instructions
- Heat up a large cast iron pot or Dutch oven on medium heat.
- Dice bacon and add to pot with coconut oil. Cook until fat is rendered but don't overcook; the bacon should still be soft.
- Add ground beef and ground pork and cook most of the way through. Break meat into small pieces.
- When meat is mostly cooked, add the pepper, onion and garlic. Allow to simmer until soft.
- Add all spices, Keto Chow, and beef stock. Stir to combine. Add monk fruit or stevia, if using.
- Turn heat to low and cover the pot. Allow to simmer for 1 hour. For a thicker chili, simmer with lid off for at least 30 minutes.

I do not like basil. Can I get this w out Basil?
There’s a Spicy Taco flavor and a Beef Soup Base flavor of Keto Chow as well as the Tomato Basil but I’ve never tried them in this recipe.
The directions indicated Coconut Oil… the ingredients list has none.
you’re using just enough coconut (or other) oil to coat the pan and prevent sticking. I typically use bacon fat instead.
I’ve made this this recipe twice now, its really tasty! Easy to modify too!
Made it with the Spicy Taco. It was good, but extra spicy! I didn’t put in the bacon, but added 3 tablespoons of keto ketchup to thicken it up. Will probably use the Tomato Basil next time.
I was a little leary about ordering a whole bag of the Creamy Tomato Soup but went ahead anyway. I tried it just on its own in the past, and although I liked it, I didn’t LOVE it. I will not have a problem using it up!! Just tried this soup and would give it more than 5 stars if I could! It is absolutely delicious and very filling! I also used bacon fat instead of coconut oil. I want to try to freeze it in individual portions, then make a double batch next time.

Hey Joe made your Chili now waiting, will simmer all day in the Crock Pot, So I had no Beef Broth so I added Chicken Broth, then added the Tomato Basil, and Beef Mix from Keto Chow and yummy on the Taste test. Also added more bacon, and seasonings like a touch of Red Pepper, Little Oregano, Parsley and Red Onion. Smells great and took pictures. Thanks and we will enjoy tonight for dinner. Of course I added more bacon like 12 slices and chop them up into bite size, cook them with Country Sausage, and then cook off my ground beef. Tomato Basil contest is on.
