Keto Almond Joy Bars
Ingredients
Fudge Layer
- 1 cup Chocolate Keto Chow
- 2 1/2 Tbsp. cocoa powder
- 1/2 cup almond butter
- 1 cup water
Coconut Layer
- 2 cups small coconut shreds unsweetened
- 1/4 cup almond flour
- 1/2 cup confectioner's Swerve
- 2 servings Vanilla Keto Chow (or 2 scoops)
- 1/2 cup water
- 1/4 cup coconut oil
- 1/4 cup slivered almonds
Instructions
- In a medium mixing bowl, combine Chocolate Keto Chow, cocoa powder, almond butter, and water. Mix until smooth.
- Press 1/2 of the fudge mixture into a greased 6x6 pan.
- Melt coconut oil and combine in mixing bowl with coconut, Vanilla Keto Chow, sweetener, almond flour, and water. Mix until smooth.
- Press coconut layer evenly on top of fudge layer.
- Top with slivered almonds.
- Cover coconut layer with remaining fudge mixture and top with the rest of the almonds.
- Chill for at least 2 hours. Cut into 12 bars and serve.

Good, but 2 flaws. One is that you need to specify Confectioners Swerve. I used granular, and it was gritty. Also, I added 1/4 tsp almond extract to the coconut layer.
