One step closer to Keto Chow 2.0

Let’s see how the progress towards Keto Chow 2.0 is going:

  • Found a place to make it.

  • Had a custom vitamin/mineral pre-mix manufactured.

  • Found a protein powder I can get by the truckload.

  • Found suitable flavors.

  • Figured out how to get Chocolate Peanut Butter manufactured.

  • Got pricing for contract manufacturing.

  • Created artwork for sample packages.

  • Ordered Sample packaging.

  • Received vitamin/mineral pre-mix.

  • Delivered Pre-mix to contract manufacturer.

  • Created artwork for week bulk bags.

  • Got pricing for printed bulk bags.

  • Ordered bags for week packages.

  • Waited a couple weeks for manufacturing.

  • Received the finished Keto Chow 2.0

Today I delivered the vitamin pre-mix to the contract manufacturer. People asked why I bought a F-350, precisely for this: we were able to load a 1500lb pallet full of stuff into the back and drive it down. Easy-peasy.

I also picked up the (hopefully) formulation of coloring (had to make banana yellow and strawberry pink!). Very few steps remain for me to do before full-scale production begins. Best-case scenario: we could have it mid-December.

The Vitamins and Minerals for Keto Chow 2.0 has arrived – also the “sample” packaging is complete

We’re another major step closer to having Keto Chow 2.0 launched. the 2200 lb. (1000 kg) shipment of custom vitamin and mineral pre-mix we will be using has arrived. We had planned on using the 500kg shipment we got a while ago to launch KC2.0 but we’ve used up nearly half of that making KC1.9. Now we can make a bunch!

In other news, I ordered the packaging for the sample/individual meals, check it out:

Pricing isn’t finalized yet but the plan is that 3 of the new samples will cost less than a 3-meal “day” pack currently costs. You may notice that one of the flavors is missing: Chocolate Peanut Butter. We will be making chocolate peanut butter (whoah there, keep your shirt on!) – but the facility that will be packaging all of the samples and most of the week packs has an employee who is allergic to peanuts. The short of it is: we’re having a different facility make the Chocolate Peanut Butter BUT they aren’t able to make stick-packs as large as we need =( Until we figure out a solution, we’ll have week packs of peanut butter, but no samples. Honestly it’s not a huge loss for samples, it’s the best flavor available: you’re going to like it! It is, however, a downer for portability: no individual chocolate peanut butter meals.

Finalized nutrition and ingredients for Keto Chow 2.0 (which might be here before the New Year)

Previously I reported finalizing the ingredients for Keto Chow 2.0… and then I decided to add potassium. Well, now it’s not only finalized for reals this time, I have the nutrition information available. Head on over to https://old.ketochow.xyz/nutrition/ and you can get a glimpse into the future!

The impetus for doing this now was needing the labels for the Keto Chow 2.0 packaging. I’m hoping I’ll have that over at the printer early next week.

Today I learned: A bunch of FDA labeling requirements stuff

Well, that was a fun rabbit hole! I have been working on the labeling for the individual meal (aka “Sample”) packages of Keto Chow and also started making up the label for the larger week packages. As part of that, I needed to come up with a nutrition information panel for both. I figure if I’m going to make packaging, I might as well make it the right way according to FDA guidelines from the outset. So I started kicking around the FDA site and discovered there’s a revision of the labeling rolling out. Technically, Keto Chow wouldn’t need to use the new standard until July 2018 but there’s no problem being early.

Anyhow, I got to learn about the values to use for calculating DRV and RDI, panel display and size requirements, and more! I also learned that the vitamin and mineral recommendations have changed as well, most are minor changes. Fortunately for me: when I spec’d my vitamin/mineral pre-mix, I was using data even more current that the FDA requirements (optimal values vs. minimum) and Keto Chow 2.0 is getting over 100% on all of them according to the new standard… except Potassium. The Recommended intake used to be 3500mg/day and now it’s 4700. It easily met the old requirement but not the new one. So I’m looking into adding some additional Potassium. I don’t want the change to affect the taste at all so I’m going to test out a couple different sources. The easiest is Potassium Chloride (“Low sodium salt”) or just more Potassium Citrate, I’m also going to give Potassium Gluconate a try. Looks like my earlier assertion was a bit pre-mature =)

Ingredients for Keto Chow 2.0 finalized

Just a quick update on Keto Chow 2.0: Last week we gave a check for half payment on the first batch of Keto Chow 2.0. Today I got the film template for the single serving size. I also got the final ingredient list. Of note: there’s an enzyme blend for all those lactose intolerant peoples, also the only sweetener that will be used is sucralose; no AceK, no stevia.

Here’s the full ingredient list as it will appear on the packaging:

Keto Chow 1.9 now shipping

TL;DR 1.9 has a better vitamin/mineral source, I’ve been on it 4 months, MCT optional.

If you’ve been following Keto Chow for a while, you may remember the major improvement that came with 1.5. The switch to 1.9 isn’t a big deal like that =), you may not even notice anything has changed. The taste and texture are nearly identical. You may pick up a bit of “vitamin” aftertaste – I can taste it, though none of the other people I had test the new formulation could. I guess I’m just weird. To make sure it was completely safe for long term use I’ve been doing 1.9 for the better part of 4 months while I’ve been working on getting it in production.

Most of the “Week” bulk packages have been switched over to 1.9 over the past week:

  • Rich Chocolate
  • Gourmet Vanilla
  • Chocolate Fudge
  • Chocolate Peanut Butter
  • Cookies & Cream

The Chocolate Peanut Butter and Snickerdoodle “Day” packages are 1.9 too. It’s been rather stressful for my awesome wife to coordinate the changeover and using up the remaining 1.5 ingredients in a sane manner.

The big change in 1.9 is that I’m using the vitamin/mineral pre-mix that is going to be used in Keto Chow 2.0. Because Keto Chow 2.0 is going to be manufactured on an industrial scale, grinding up Kirkland vitamins isn’t really an option anymore. I needed a replacement that I can order in 1000kg increments. While I was at it I also had them incorporate all of the other ingredients that I was getting in small amounts (Calcium Phosphate, Vitamin K, Choline L-Bitartrate, Calcium/Magnesium Citrate, Vitamin D3) and took the opportunity to increase the amount of Magnesium. A higher than normal magnesium requirement runs in my family and I’d rather not have to take a magnesium supplement in addition to Keto Chow – so everyone reaps the rewards. Other vitamins and minerals have also been adjusted up above minimum levels to optimal levels along with optimal forms for bioavailability. For comparison, here’s the nutrition information for 1.5 compared to 1.9 for Rich Chocolate:

It should also be noted that the figures for 1.9 are assuming that the batch is only at the specified level. Each batch of pre-mix I get comes with a Certificate Of Analysis (COA) that gives the actual amounts in that specific batch. They tend to have a higher amount, especially for the vitamins that oxidize quicker to build in some longevity. After the “best used by” date you might be getting a little bit less of certain vitamins but not much less. This may be of interest to people in light of a recent reddit post on the subject of micronutrients.

An additional change I’m doing with 1.9 is making MCT optional in the preparation instructions (it’s still awesome for Keto though, so I recommend it if your bowels tolerate it). Because creating a custom vitamin pre-mix and ordering several hundred kilograms is outside a normal DIY recipe, I’m going to leave the recipe for 1.5 alone and fork the recipe for 1.9 over to a new location. Feel free to continue making your own 1.5 – it’s not going away.

Cool New Stuff

First off: If you haven’t noticed – we’re rocking a new site address for the blog and main page: ketochow.xyz

We are also using a new shopping cart system that you can get to at store.ketochow.xyz Both platforms should be noticeably faster and more stable (and require less administrative oversight). I’ve put in redirects for most of the old pages, with a few notable exceptions to allow people to access old order history and to manage subscriptions (since I don’t have support for subscription in the new system yet). As a bit of an incentive to use the new store anyway, I’d like to point out that shipping is cheaper on the new site (and it’s where Chocolate Peanut Butter is 20% off right now!)

Second: We have a new location. Granted, for now it’s mostly just an empty warehouse with a bunch of shelves but as soon as Keto Chow 2.0 Co-Packing is in full swing it will be where your Keto Chow is shipped from. There’s a sign on the door (which faces south and the sun is REALLY bright in your eyes) and a lighted sign on the street

Random Photos and Fun (plus an update on KC2.0)

We went camping over the weekend. As usual, we ate a lot of bacon, sausage, and eggs (with hash browns for the kids, who aren’t doing keto). We were at Willard Bay, a freshwater reservoir that was built adjacent to the Great Salt Lake by erecting a dike – essentially a dam around the entire area. The water is relatively warm and it’s not very busy. The main thing is: it’s close to us and since we were taking a camp trailer PLUS wave runners (super awesome 1996 Polaris ones I got for cheap on Craig’s list – hey, they work) I didn’t want to go very far. I had Keto Chow for lunch at the water (which was far more tasty than the sandwiches the kids were eating), as did my wife (see photo above).

Last night my wife pointed out a box one of my kids has drawn on. Apparently, he thinks we need to introduce a new flavor. I especially like the logo and the QR code.

Finally an update on Keto Chow 2.0: Yesterday I went to visit the co-packing place to pick up a new batch of flavor tests. Overall they’re excellent. Vanilla, Strawberry, and Chocolate are awesome (strawberry needs some more pink color which is unrelated to taste but whatever). The Cookie and Cream flavor was buttery tasting with not enough “oreo” aspect, maybe needs some chocolate? It’s still good though, more like a butter cookie. The Chocolate Peanut Butter is interesting.

The Chocolate Peanut Butter is interesting. The facility has an employee that’s allergic to peanuts. This means that using actual peanut flour at that location isn’t an option. The first solution is to have a different facility do the packaging of the Chocolate Peanut Butter, we’re looking at that. The second solution is to use a peanut butter flavor that doesn’t contain any of the problematic proteins. We tried some of that and there was a slight hint of peanut taste but nothing like what we currently get with the chocolate peanut butter flavor using real peanut flour. With this being my #1 favorite flavor you can be assured that I will not compromise on anything less than “this is yummy enough to drink for a month straight, I want MOAR!”. He also gave me a mocha (I think coffee anything smells like burnt toast so I got a guy testing it for me). The Snickerdoodle flavor wasn’t ready yet, I’m thinking about adding a Salted Carmel and maybe a Banana flavor – dunno. In all, it’s a definitive step in the right direction!

1.5 update, Sample All the Things change, and UPC Barcodes

First off – All of the active flavors in all the sizes are switched over to Keto Chow 1.5 with acacia gum (which is good since everybody seems to really like it). There are still a few Butter Cream Toffee samples that are the old formulation but that’s because it’s been discontinued and I can’t make it in the new formulation.

I woke up this morning and had an idea for the “Sample all the things” bundle that has one of each of the 8 currently active flavors. We’re pre-packaging them into an actual bundle (in a quart sized zip-loc bag if you’re curious). This will make a bunch of stuff easier, especially filling orders since most of the samples we sell are part of that bundle. It even got its own label! I also changed the product to be a “simple product” so it’ll no longer break out the names of each flavor, it’ll just show up as the one line item in the cart.

I bought 250 UPC codes a few days ago and added them to the labels, if you want to see them check out this page – it has both the week and day full labels. I tested the day ones by scanning them into MyFitnessPal – I’ll probably do the same with the week ones shortly.
