About Chris

Chris Bair is a technology and computer geek. He became involved in the nutritionally complete "future foods" movement in January 2014, originally with a conventional recipe and later switching to a high fat, low carb "ketogenic" variant on October 2014. In January 2015 he created the recipe for Keto Chow and released it without restriction for anyone to use, at the same time he began mixing the recipe up for people that wanted a finished product and has seen steady growth in the business every month since.

Recovering, Editing, Experimenting, Answering… ?

We finished up the Keto Salt Lake show on Saturday. That was a lot of work but insanely awesome, I have a bunch of pictures I need to post when I get the time. Lately, I’ve been swamped with a few things:

  • Editing the recordings of the Keto Salt Lake presentations.
  • Answering the (thousands) of questions on the Facebook advertisement with the new video.
  • Doing experiments with different ways of mixing Keto Chow.

At Keto Salt Lake we had two different cameras running that were recording the presentations in UHD4K (3840×2160@29.97p), I also had an audio recorder plugged directly into the microphone feed so I could get a clean recording of the presentations. In all, approximately 34 hours of video (17 on each camera) were recorded. It ended up being 1.07 TeraBytes of data! I had to put it on my spinning hard drive because the SSD is only 953GB, it’s like living in the past! =)

I have the editing for Friday completely finished and I’m rolling right along with getting at least 2 presentations done and uploaded to YouTube each day. All of them go into the 2019 Low Carb Salt Lake Recordings playlist so they are easy to find and watch.

The commercial has been an astounding success. It’s been pretty frantic around here shipping out orders and answering questions. I see every question from someone as an opportunity: it means they want to know more and put forth the effort to ask. Even if they have the same question that I’ve answered a few dozen times, that means they want to know (and I can use my answer templates for a bunch of them =). The coolest thing is: for every “keto is dumb, you suck, die in a fire” or “sucralose will make your hair turn blue and isn’t as good as eating twigs and bark” comment, we get several dozen comments from people that think the ad is funny, are interested in trying it, and are excited that there’s something that can help them on their keto journey. We are also getting a lot of our customers that answer people’s questions for us. Seriously: that’s super cool! One person asked how many bots we have on there making it look like people like the product. I replied that you only have to do stuff like that when you’re trying to trick people because the product sucks. We don’t “astroturf” (no need) and the product is awesome.

I also had a conversation with a certain person that’s noted for their work treating Alzheimer’s patients with keto, coconut oil, MCT oil, and exogenous ketones. I asked if they see a marked improvement with people supplementing coconut oil – she said they do indeed see a substantial improvement in most cases. I decided to try applying the technique for mixing Keto Chow with butter and use it to mix regular Costco coconut oil (which was quite solid in my cupboard). I used 50g coconut oil (melted) and mixed it up with Keto Chow and warm water. Let it chill in the fridge and there is no separation (see the image at the top of this post, the bottle on the left with the grey lid was refrigerated overnight). It does have a pronounced coconut flavor that I think goes well with regular chocolate.

I also tried mixing up a full meal of Keto Chow with unsalted butter with a LOT less water than typical – the finished volume was 14oz (about 380ml). It was quite thick but still very pleasant – makes it possible to fit in a far smaller container if necessary. That’s the bottle on the right side with the blue lid.

First of all, the flavors are terrific when mixed with heavy cream. Using, butter, I’ve found that the fruit flavors (I’ve tried banana and strawberry) don’t taste good at all, but other flavors are terrific. I use Keto Chow to balance my macros and fill my daily calorie needs. Some days, I have only Keto Chow (1575 calories – 3 scoops + 1200 oz heavy cream) but most of the time, I’ll have 600 to 1000 calories of meat and eggs and the rest of my usual 1800 calories will be Keto Chow. I like the flexibility KetoChow gives me for my Keto diet needs. I have a hard time eating 1800 calories of just protein and fat foods. Keto Chow makes all the difference!

Here’s another review, it should be noted that I publish all of the reviews that come in – bad or good – as they are, typos intact. The only ones I remove are spam posts from people wanting you to buy pills to “enhance performance” and such.

I have liked them all
I haven’t tried every flavor yet but every flavor I have tried has been very good. I think raspberry cheesecake, snickerdoodle and chocolate mint are my favorites so far.

?‍♀️? The Keto Chow Commercial premiere ? ? ? ?

We’ve been dying to show everyone and the day is finally here! (or at least it will be in 13 days) Be one of the first people to see our new commercial! Join us on Monday, April 29, 2019 at 6 PM Mountain, 8 PM Eastern.

I’ve never had eggnog. Will I like it?

It’s a thick, sweet, creamy and milky flavor- often with notes nutmeg and cinnamon.

Does it taste like eggnog?

It tastes reminiscent of non-alcoholic eggnog. It’s not 1:1 will your favorite name-brand eggnog, but there’s a good similarity. If you’re not an eggnog connoisseur, you’ll love it. If you are an eggnog connoisseur, you’ll still like it. I would recommend trying a sip as-is, and maybe adding 1/4 tsp of ground cinnamon.

Rum? Whiskey?

YES. Traditionally, eggnog is to be mixed with dark liquor. For Keto Chow Eggnog, I would recommend something on the heavier side such as Kraken or Captain Morgan Black.

100 Days of Keto (Chow) Day 101

So, I’m officially done. Had my first meal after my 100-day experiment where I was eating ONLY Keto Chow for all of my meals every day. What was my first meal? Chocolate Mint Keto Chow with half a stick of butter. It’s delicious =)

Now comes the not-so-fun-but-important part: compiling all my data for the experiment. I did pull a bunch of graphs and reports out of Cron-O-Meter, Heads-up Health, Keto Mojo, LEVL, and I put on my Zozo Suit again this morning to get measurements. Let’s see what it said!

Here are all of the measurements I took plotted on a graph, you can see the raw values on the “Zozo Suit” Tab of this spreadsheet.

How about some of my other markers? This morning I weighed myself and was a little disappointed to find that I was 0.1 lbs short of hitting 200 lbs (again). I started this experiment at 244.016 lbs on January 2 and ended today (April 12) at 200.107 – meaning my total weight loss for the 100 days was 43.909 lbs or 19.91 kg. I averaged a 0.439 lb weight loss per day over the 100 days (it was 0.49 up until day 80).

So, where does all of this leave me now? I’m with Beverly: “I do plan to continue using butter as my preferred fat source in my shakes unless there is a reason to stop based upon the blood lab test results” For me, butter checks a lot of the boxes:

  • cheaper
  • easier to store
  • easier to transport
  • lots of fantastic saturated fats
  • short chain fats
  • tastes amazing
  • salted butter has more sodium

100 Days of Keto (Chow) Day 100

This entry is part 107 of 107 in the series 100 Days of Keto Chow

And…. done, or at least I will be tomorrow morning at this time. 100 days of eating only Keto Chow for all of my calories. 298 meals (I skipped 2 meals early-on), several gallons of Heavy Cream, bottles of Avocado Oil, 24 sticks of butter. What’s my first meal going to be tomorrow after getting my blood test? Keto Chow. Yep: Day 101 will start with Keto Chow because it’s just so easy to make and take to work, lunch will be chicken wings =) Here is the original post where I laid out my plan: Starting 2019 with a plan.

The scale this morning reported that I’m down 43.6lbs since the commencement of this experiment, I’m optimistic that might hit 44 by tomorrow which will get me to one of my goals. That’d be a fantastic capstone to the experiment.

I’ll get my final blood test tomorrow and will have those results back by at least Thursday of next week. Until then, I do have the results from the most recent test which is the first week of doing butter for both Beverly and for me. It’s very interesting to have n=2 with two very different people (tall dude, short lady). The full results are on the online spreadsheet. Here are the comparison graphs showing how we both have reacted to the different fat types:

We most definitely do not react the same… and yet the trends are doing the same things. MCT oil seems to make both of our triglycerides go up, my increase is more pronounced. Avocado Oil lowers both of our LDL-P and (to a lesser extent) our total cholesterol. I really don’t like the reaction of my HDL to avocado oil though. A 26 is alarmingly low. It’s coming up on butter, we’ll see how the next test goes.
