About Chris

Chris Bair is a technology and computer geek. He became involved in the nutritionally complete "future foods" movement in January 2014, originally with a conventional recipe and later switching to a high fat, low carb "ketogenic" variant on October 2014. In January 2015 he created the recipe for Keto Chow and released it without restriction for anyone to use, at the same time he began mixing the recipe up for people that wanted a finished product and has seen steady growth in the business every month since.

Keto Chow and Heavy Metal Exposure (Proposition 65 warning)

For any unaware, California has a fun citizen’s initiative commonly referred to as “Proposition 65” or “Prop 65” – it’s the reason many consumer products have a warning that “this product contains chemical known to cause cancer in California” (or similar) which is generally followed by everyone thinking “good thing I’m not in California!” I’ll not get into the validity of the “No Significant Risk Levels” and “Maximum Allowable Dose Levels” established as part of Prop 65, they are what they are, and if a company sells something to a resident of California, a California resident (usually a lawyer) has the ability to sue if there is not a warning and the product contains levels of heavy metals or other contaminants higher than the levels established. I can say that the heavy metal levels in Proposition 65 are low enough that coffee shops have had to post warnings and Disneyland has warnings in their picnic area.

Keto Chow was served a notice that “Safe Products for Californians” intends to sue Keto Chow for not having warnings that Keto Chow contains heavy metals, specifically lead. The tactic being that many of the levels defined by Proposition 65 are so absurdly low that quite literally EVERYTHING has enough lead to qualify for needing a warning. Also, since Keto Chow contains protein, and the ‘cool’ thing to do these days is use plant protein which tends to be from China and contains a lot of heavy metals, logically Keto Chow will contain heavy metals (like Soylent™ does). The thing is: we don’t use plant protein, instead we only use protein created by sustainable mobile bioreactors (ruminants); in fact, very few of the ingredients come from plants and the animals don’t absorb heavy metals.

Due to the lawsuit, we paid for an independent lab to test for heavy metals in Keto Chow, the complaint was only for “Lead and Lead Compounds” but we went ahead and had Arsenic, Cadmium, Lead, and Mercury tested. The test has a minimum measurable level of 0.01 mg/kg of material, and each meal of Keto Chow is around 44-50g of powder. Here are the measured levels of heavy metals in Keto Chow, the serving size, and what your exposure is compared to the allowed levels with one caveat: the cadmium level is only established for inhalation, if you ingest it orally there is not established level.

Lead is interesting, Proposition 65 establishes a “No Significant Risk Levels” for causing cancer set at 0.015 mg or 15 micrograms per day. Lead also has a “Maximum Allowable Dose Levels” (MADL) for causing reproductive harm of 0.0005 mg or 0.5 micrograms per day. The MADL is set by looking at the level that no observable effect occurs and dividing that by 1000. In other words, if a toxin causes an effect at 10 units, the MADL would be defined at 0.01 units; meaning that the dose where lead will cause reproductive harm is 0.5 mg or 500 micrograms per day. I guess it’s surprising that many of the flavors of Keto Chow do NOT contain enough lead to require a warning label. Notably, the ones with the highest levels are those that contain spices or other plant-derived flavorings.

Chocolate and Mocha both contain cocoa powder, a plant product, and both have the highest levels of heavy metals on the list; though the levels are still far below the very low bar set by Proposition 65 to necessitate a warning for cancer. The threshold for needing a “reproductive harm” warning is 0.00050 mg – as a precaution against future litigation we just went ahead and put the warning up for everything.

Moving Warehouses!

In September 2016, we moved Keto Chow out of the front 3 rooms of our house and into a 4000 square foot warehouse. At the time we thought “no way will we fill this space!” – here we are, 2.5 years later and getting ready to move to a 17090.92 square foot warehouse (that’s according to the measurements I took and using the definition of rentable space in the lease agreement, the actual lease agreement defines the space as 17535 square feet – after a lot of back and forth I think they don’t care about the square footage, they care about the lease rate per month, I let it go… mostly). There’s about 3x more space for storage at the new location on the floor without any pallet racking than there is at our current spot WITH racking. Once we have the racks installed at the new location we’ll be able to seriously amp up the number of orders we can process.

It’s also going to be nice to have a larger office. Right now Miriam’s “office” is a desk in the corner of the retail storefront, my “office” is a 6×7 storage room with artificial grass as carpet (the previous tenant was a batting company), Holly and Steve share a desk by the front door, it’s kinda nuts. We’ll actually have more finished office space with air conditioning than the entire current warehouse. That air conditioning will be nice when we do our Utah Keto Meat-Ups during the summer – the only problem will be that the meetup space is on the second floor and the landlord isn’t required to install an elevator because “Elevators are not required in facilities under three stories or with fewer than 3000 square feet per floor” so we have a contingency plan in place for helping people get up the stairs.

Anyhow, we’re targeting starting the move around July 1, 2019. The new location will have cool signs and stuff to make it easy to find but we won’t be on Redwood Road anymore so we’ll miss out on the incidental traffic that we get from “I was driving past and saw your sign that says ‘keto’ – what do you do here?” The new address is:

This stuff is amaaaazing. I’ve tried so many different keto shakes and brands trying to find a flavor I like and I just really dislike all of them. My problem is the artificial sweeteners that are used, I just really dislike the flavor of them and they seem to over power every shake I’ve had but not Keto Chow! The only flavors I didn’t love was the Chocolate (hubs loved the chocolate though) and Mocha. It just had some of that same after taste that I found amongst other brands of shakes that I personally dislike, nothing against Keto Chow, that’s just my taste buds. So far my favorite is Snickerdoodle, it was like drinking cookie dough. They really remind me of milkshakes!
I use HWC and water, filling the shaker up a majority of the way to keep it thinner (personal preference).
Going to try out a couple more flavors that are screaming at me and the soup flavors which I’m very much looking forward to after these samples.
I use these as lunch replacements at work. I don’t eat breakfast, drink the shake between 12:30-1 which fills me up and keeps me full until around six p.m. so it definitely is filling.
I’ve read that some people have a problem with it chunking up, I didn’t have this issue. My only mixing problem was the powder wanting to stick to the sides and in the crevices of the textured part of the shaker. I’d just have my hubs shake it for me if I couldn’t get it off the edge or just run a spoon along the sides, shake again and put in the fridge. It’s all mixed up great.

All in all, great flavor options, great taste, very filling and a great consistency.

I’ve never had eggnog. Will I like it?

It’s a thick, sweet, creamy and milky flavor- often with notes nutmeg and cinnamon.

Does it taste like eggnog?

It tastes reminiscent of non-alcoholic eggnog. It’s not 1:1 will your favorite name-brand eggnog, but there’s a good similarity. If you’re not an eggnog connoisseur, you’ll love it. If you are an eggnog connoisseur, you’ll still like it. I would recommend trying a sip as-is, and maybe adding 1/4 tsp of ground cinnamon.

Rum? Whiskey?

YES. Traditionally, eggnog is to be mixed with dark liquor. For Keto Chow Eggnog, I would recommend something on the heavier side such as Kraken or Captain Morgan Black.

Ordered the sample bundle – it arrived yesterday. After ordering, I spent 6 hours doing my research (backwards, I know ?), watching several videos from the Keto conference in Utah and several from the dude who made Keto Chow. I turned around and ordered 4 bags of chow without ever having tasted it because I’m already sold on this product. I read 56 pages of reviews on flavors and selected four that I thought I’d like. Being a full time nursing student, mom, and employee, I needed something I could grab and go. I got my sample bundle in the mail yesterday and enjoyed my first shake today.

I wanted to try these for my breakfast routine. I have a hard time eating and figured trying the samples would give me a good view on a bunch of different flavors. I am so glad I did it this way.

All of the flavors were awesome. But, some really were leaps and bounds better for me. I absolutely loved the strawberry, vanilla and banana. The other flavors were good but not my favorite. I loved strawberry so much I bought the big bag of it.

I will say it def does what it says it does. I was full until lu ch and I didnt feel weighed down at all. They were wicked easy to make. I would make it at night and refrigerate overnight. I used 2oz of hwc and the rest water. As a heads up it is thick so I just added a little more water until I found the perfect consistency.

You def will not be disappointed in trying ketochow. Especially the sample bundle so your not committing to just one flavor off the bat. I had thought I would have died for the chocolate but nope strawberry for me it is.

Just got my shipment of ketochow today…
I made the chocolate peanut butter with 2 tablespoons of good quality butter. Damn son. I had high expectations before I tried it….and it *exceeded* my expectations. It tastes like a reeses peanut butter cup milkshake. I have NEVER legitimately enjoyed a protein shake before. How do they get it so smooth? I’m baffled. And enchanted. I’m probably going to buy a new flavor every week to try out. I also got snickerdoodle and chicken soup in this order. The snickerdoodle is just as delightful as the chocolate pb and it smells heavenly. I’m definitely going to make the snickerdoodle cheesecake bars from the website.

I wanted something for a quick on the go meals when I didn’t have time to cook. The Facebook ad sucked me in. I was worried about not getting enough fiber, and I liked that Ketochow had a good amount of fiber and also electrolytes.
My expectation was that these would be like any other meal replacement shakes. Palatable and decent, but definitely not as good as food. I was absolutely wrong and Ketochow blew my expectations out of the water. The flavor? Decadent. The texture? Luxurious. I can’t believe this is healthy. Kept me full for hours. Calmed my sweet tooth. I went through the five samples in five days, and then I found myself craving more, so I placed my second order.
Definitely helps me make good food decisions when I’m in a hurry. I loved all the flavors in the sample pack, but especially the chocolate and the strawberry.

Happy Memorial Day

I meant to add this to the “Flavor of the week” post earlier today but totally forgot at 6:30 in the morning. Wanted to wish everyone a happy Memorial Day. That’s my grandpa: LeRoy Bair, he served as a radio operator on a B-17 flying fortress in World War 2. Their plane was shot down (23rd of 25 missions!) and he was in a German POW camp for 11 months.

Did you know we have a military and first responder discount? I realized today that we haven’t ever publicly announced it, up until a few weeks ago it was available manually by request; a few weeks ago we added an automatic method to get the discount.

Keto Chow isn’t open or shipping today, not that it would matter if we were: as a federal holiday, all of the carriers are also closed. Monday holidays are always a lot of extra work on Tuesday!

Bought a sample pack because of the add. First impression was it was waaay too salty. But a simple Google search assured me that the saltiness was just my body adjusting to the Keto lifestyle. I started refrigerating overnight and then freezing it for four hours and figured if nothing else I’d just finish the samples and try a different brand.

By day 4 I was hooked. The saltiness taste was gone and I was enjoying a delicious shake for lunch everyday. I’m almost full liquid now and the best part is that I have to remind myself to drink them because I am NEVER hungry! And the weight is just dropping off. This is the “magic” I’ve been waiting for all of my yo-yo dieting life!

While it is not cheap, it’s not any more expensive than buying a week’s worth of groceries that you don’t really want to eat (I’m looking at you, cauliflower pretending to be a carb substitute). I love knowing that I’m getting my nutritional needs met without having to think about it. If you’re on the fence about trying it, just do it! I didn’t need to ask for my money back (in fact, I can’t give it to them fast enough! ?) but the people behind this company seem to be so awesome that I am sure if you wanted to call in that money back guarantee they would get it right to you. Why are you still here reading this?! Go buy it already!

I have struggled with hunger and not getting my macros right on keto. I don’t like tracking and would prefer to just listen to my body. This shake meal replacement works very well for my husband and I. I don’t feel hungry and I feel like I’m doing this keto thing right! Ever since I started drinking them once a day, I’ve steadily lost at least a pound a day!

Having issues with Keto Chow Clumping? We have some solutions for you!

In version 2.1.1 of Keto Chow, we changed the protein powder to one that tastes a little better but does not have lecithin in it. Lecithin slows down how quickly the protein absorbs water making it more forgiving to mix. In version 2.5.0 we are/will be going back to a lecithninated/instantized protein powder. If you have v2.1.1 or 2.1.2 and are having problems with clumping, here are some tips to help you mix easier.

  1. The most effective way to handle the problem is to go straight for using butter as the fat source.

    Because you are using warm water and melted butter, all of the issues with clumping simply go away. On top of that, you get all of the additional benefits of butter:

    • Butter costs less than Heavy Cream or Avocado Oil. Using pricing from my local grocery store I get $1.229 per 1000 calories for HWC, $0.981 for AO, and $0.796 per 1000 calories for butter. That same 1000 calories of butter have 0.08g of total carbs compared to 8.35g for the HWC.
    • Butter does not contain any controversial carrageenan or other emulsifiers you find in Heavy Whipping Cream. Personally, I don’t care about them but some people get quite “excited” about them.
    • Butter has a better impact on my blood markers.
    • Butter is easier to store, it freezes exceptionally well and is compact.
    • Butter is easier to transport. The salted variant is quite stable without refrigeration for a good amount of time, it won’t spill (unless you get it too warm =), it’s not in a glass bottle that will shatter. Should also be noted that TSA currently doesn’t care about butter, unlike a bottle of oil.
    • Butter tastes amazing. Personally, I prefer the salted butter because of the additional sodium and salty taste, especially in the chocolate flavors of Keto Chow (Chocolate, Mint, Toffee, Peanut butter, etc…
  2. Avocado Oil tends to be more difficult to mix than Heavy Cream, if you want to use Avocado Oil you’ll likely want/need to use either a blender or an immersion blender
  3. When you go to mix Keto Chow, if you’re using a blender bottle, you need to have the water nearby so you can immediately mix it. You need to add the water and begin vigorous mixing within 2-3 seconds of adding the powder to the bottle. This is covered in rather exhaustive detail on the “How to Prepare Keto Chow” page and the accompanying video.
