Chocolate Mint No Bake Bars
Ingredients
- 1 cup unsalted peanuts
- 1/2 cup Chocolate Mint Keto Chow
- 3 Tbsp cocoa
- 3 Tbsp erythritol
- 1/4 cup coconut oil
- 3/4 cup unsweetened coconut flaked
Instructions
- In a food processor, pulse together peanuts, Keto Chow, cocoa, and erythritol for 30 seconds.
- Add coconut oil and pulse for another 30 seconds, then add flaked coconut and pulse a few times to combine.
- Add mixture to an 8x8 pan lined with foil. Put in the freezer for 20 minutes.
- Remove from pan and remove foil and cut with a very sharp knife.
- Store in the fridge or freezer. These will melt if stored at room temperature.
- You can blitz yours more with the coconut to incorporate the ingredients more, and the coconut will not show as much and will look more like these.

What is a “serving”? Is it one piece? How much in grams?
It is 1/12 of the recipe. Approximately 45 grams, but yours may differ as ingredients can vary.
When I made my recipe, it was very dry and did not come together like I thought. Melted in microwave for 30 seconds to soften. then packed it more before I put it in the freezer. Waiting for it to harden. Not sure if it worked.
