Keto Chow Raspberry Cheesecake Breakfast Scones
Ingredients
- 2 servings Raspberry Cheesecake Keto Chow or substitute Strawberry Keto Chow
- 1/2 cup coconut flour
- 1/4-1/2 cup granulated erythritol (Swerve)
- 1 Tbsp baking powder
- 1/4 cup cold unsalted butter
- 2 ounces cold cream cheese
- 2 large eggs
- 4 ounces sour cream
Instructions
- In a food processor, add Keto Chow, coconut flour, erythritol (I used 1/4 cup of sweetener because I don’t like things super sweet; if you do, add 1/2 cup!!), and baking powder and pulse to combine.
- Add in cubed butter, and cream cheese and pulse again until mixture is crumbly.
- Beat together eggs and sour cream with a fork or whisk and add to flour mixture. Pulse until it all comes together, but not too long.
- The dough will be sticky. Pull out half and add to wax or parchment paper and make into a round shape.
- Put another paper on top and press until 1 inch thick. Use cutter and make the scones and add to sheet pan with parchment paper.
- Repeat with the remaining dough.
- Bake on 350 degrees for 20 minutes.
- These are even better with a little sugar free raspberry preserves.
I made the raspberry cheesecake scones a few days ago and loved them so much I made them with the orange cream flavor this morning and they were equally amazing.
I do wish you would print nutritional values with these recipes.
The Recipes that I (Chris) create, I’ll generally add that but I use grams to measure. Amanda and Taffiny have stated that due to variability in ingredients that you might randomly find they will not give macros, that’s up to you to do with the ingredients you get.
Can you tell me exactly what you mean by 2 scoops?
2 servings.
Do you mean two envelopes/pouches?
a scoop is a serving is a sample packet
I gave this recipe a try using the savory chicken soup mix (and omitting the sweetener) and it turned out fantastic! This will definitely be going into my normal rotation!
Is it possible to use almond flour instead and how much?
In asking our team, no one has tried swapping flours for this recipe. In other recipes we have been told it was not recommended, but definitely not impossible…we just do not have a recommendation. You may want to try asking in our Keto Chow Support Group on Facebook. Lots of people in there that have cooked up and adjusted our recipes. https://www.facebook.com/groups/ketochowsupport
I loved this! I used strawberry keto chow and since I only had 1 ounce of sour cream I added 1 oz of ricotta and it turned out great. I didn’t even need jelly on the top. They were fluffy and I only used the 1/4 cup of sweetener and it was perfect. Even better with a squirt of whipped cream on top.
