Beverly’s Week 2

This entry is part 3 of 16 in the series 100 Days of Keto Chow - Beverly's Experience

My husband and I laugh at each other whenever we noisily slurp up the last few drops of a Keto Chow shake.  We always want more even though our stomachs are satisfied.  When I watched Chris’ Day 10 video, I totally could relate when he said he wants each flavor of Keto Chow to leave the consumer wanting more.  I always, always want more.  Yum!

Wanting more is something that makes this 100-day challenge (or any “diet”) difficult.  Even though I have eaten enough, I sometimes really want to eat more.  Food sounds good!  I encountered an awkward situation earlier this week when a group of co-workers went out to lunch for one individual’s last day of employment.  This co-worker is a friend so I wanted to go.  Just as I saw when dining out last week, other people are more uncomfortable with the fact that I am not eating than I am – but I did not like having attention drawn to me.

Today, I added a bit of chia seed gel to my lunch (Pumpkin Spice Caramel).  I used to do this frequently but had kind of forgotten about it.  While dusting last week, I came across the package of chia seeds and set some in the refrigerator to soak.  I really like the added texture and flavor!

I made a mistake Monday night when I grabbed the wrong bottle of night-time cough syrup off a dark shelf in the middle of the night.  I didn’t realize it until the following night when I looked again and saw I had grabbed the regular cough syrup rather than the sugar-free version that is located right next to it in the cabinet.  The result of this can be seen on my net carbs chart above.  :(  Be very careful to read labels when purchasing any type of medication, including cough drops.  Calories and nutrition information are rarely included on the packaging so you have to look for any form of sugar listed in the ingredients.

Fortunately, this mistake did not knock me out of ketosis (stayed above 0.5!).  I typically check my ketone level in the evenings before I drink my 2nd shake.  The resulting numbers (see above) directly reflect how many hours it has been since I had my 1st shake.  If it has only been about two hours, the number is lower; if it has been four or more hours, the number is higher.  I’m going to make an attempt to be more consistent about my timing so that the results have more relevance.  And as you can see, I have forgotten to test my ketone level twice.  So now I have sticky note reminders in the refrigerator, on a cabinet door, and on the microwave.  :)  Hopefully I will not forget again.

For Chris’ DietBet challenge, I think I am going to qualify as one of the “winners” since the goal was to lose 4% in 4 weeks and I have lost about 5%.  Now I just have to keep that weight off!

Since my taste buds were given lots of powdered artificial sweeteners on a daily basis for nearly 40 years (since junior high school), I got used to them and I liked them!  I have not faltered in my decision to instead use liquid sucralose but I honestly am not enjoying my coffee or iced tea as much as before (huge bummer).  Hopefully I get used to the flavor of it!  In the meantime, it is good to see my net carbs and calories staying low (excluding, of course, the cough syrup incident).

100 Days of Keto (Chow) Day 15

This entry is part 21 of 107 in the series 100 Days of Keto Chow

We did our Facebook LIVE last night, you can check out the recording here. The 100 day challenge is still going fine – This morning I grabbed two Chocolate Mint out of the fridge for breakfast and for lunch, should be yummy! Yesterday we launched our new logo and I’ve been busy putting that in place everywhere I can remember. If you see the old logo somewhere that isn’t on an old package photo, let me know!

We’re supposed to be getting the reformulated Fasting Drops and the Electrolyte Drops today, though it may be tomorrow before we get those. Still, I get to change the pages around and all that so that people are aware of the changes. Aside from that I just finished making a backup image of my laptop hard drive and getting ready to reinstall everything from scratch either later today or tomorrow.

100 Days of Keto (Chow) Day 14

This entry is part 20 of 107 in the series 100 Days of Keto Chow

2 weeks down, a bunch more to go. Things are still going well on my “only eating Keto Chow” challenge. No boredom, no desire to “cheat” – I had Chocolate Mint, Raspberry Cheesecake, and Root Beer Float for my meals yesterday, it had been a REALLY long time since I had the root beer, it was really yummy. Yesterday I tested my blood ketones using my Keto-Mojo and it showed 4.0 mmol/dL – that’s really getting up there! In the past, I’ve seen as high as 5.8 but I doubt I’ll get that high using heavy cream because it has more net carbs compared to doing oil.

Speaking of which, let’s talk about net carbs and tracking. Way back in the day I was using MyFitnessPal – they have some interesting social stuff and a really large database of user-submitted data. They also have a really large database of user-submitted data, and it seems like the majority of the user-submitted data is, well, trash. When there are 5 entries for “Salted Butter” – each with completely different data, especially the number of carbs, it gets a little old. So, several years ago I switched over to Cron-O-Meter. Unlike MFP, Cron-o-Meter uses a curated database so every entry is verified as accurate. It also has a “Keto” setting and will calculate your net carbs (with or without sugar alcohols). Really cool stuff. I have a full article about how to track your net carbs and set up Cron-o-meter, you should check it out. Here’s my Cron-o-meter entry for yesterday:

100 Days of Keto (Chow) Day 13

This entry is part 19 of 107 in the series 100 Days of Keto Chow

New week, Mondays are always fun ?! My scale says I’m down 11.2 lbs since starting 13 days ago, probably because I mostly did a water fast yesterday.

Yesterday we had some of our neighbors over for dinner. The lady does keto, her husband… he eats what she cooks =) Anyhow, we made beef with broccoli and a Ham fried rice cauliflower that Carrie Brown happened to have made the recipe for last week, perfect timing! Everybody seemed to love the food, I drank my Keto Chow ? – I did plan ahead a bit and made the Spicy Taco Soup flavor, when I went to drink it from the Hydroflask it was still crazy hot so I poured it into a mug, it was still hot so I added a bit of cheese. Still Keto Chow! It was the first (and only) thing I ate yesterday so I figured it was a good idea.

Before I went to bed last night I mixed up a bunch of Keto Chow for this coming week. I got a bag of Chocolate Mint and one of Root Beer last week (two of my new favorites) so I used those along with some Raspberry Cheesecake and plain Chocolate. Looking forward to having my Chocolate Mint hot for breakfast today!

100 Days of Keto (Chow) Day 11

This entry is part 17 of 107 in the series 100 Days of Keto Chow

Did a new “official” weigh-in for DietBet today, it’s actually for exactly what my 4% is supposed to be to “win” DietBet. You always weigh more with clothes and stuff on – I went back and weighed myself again after taking a shower and it was 2.7 lbs lower =)

I got the results from the city weight loss challenge last night, according to them I’m in 13th place with a 3.84% loss. I expected a lot of people to lose REALLY a lot the first week, mostly of water weight and the #1 person is down 7.67% or 14.9 lbs. We’ll see how well persistent loss works out =)

100 Days of Keto (Chow) Day 10

This entry is part 16 of 107 in the series 100 Days of Keto Chow

1/10 of the way done, see that was easy, right?

Yesterday we did the taste tests. It was actually a lot of fun and REALLY interesting to watch. We were on one side of a two-way mirror in a darkened room, watching people taste different keto meal replacements for nearly 6 hours. Some people would react visibly, others showed no signs of what they were thinking at all. One of the biggest confounders was that one of the products uses a lot of ground nuts and such for the fat and those settle so quickly that the participants had to stir up and swirl each cup before testing – and some didn’t so they just tasted the watery part. From what we saw, Keto Chow is definitely going to come out as the winner but we won’t have the statistical analysis for a few weeks.

Today I’m drinking one of the new test flavors: Spicy Taco Soup. I think it’s a nice change and I also think we have all of the 3 that we’re going to do finalized. We tested the Beef Stew flavor and the Clam Chowder flavor again today, they were good but I think people will want to add beef, veggies and such to the beef and will want to add clams, cauliflower, bacon, and such to the clam chowder. Then we thought “hey, what if we don’t have any added flavor – then people can use it as a base for whatever they want” BOOM. We tried that, just the full mix including the beef protein and beef bone broth and it tasted actually pretty good, without an overpowering flavor you’d need to overcome with the stuff you add. So now I get to start working on the 3 we decided on:

  • Beef Soup Base (the unflavored one)
  • Spicy Taco Soup
  • Creamy Tomato Basil

Let’s see how quickly I can get it all done =P

100 Days of Keto (Chow) Day 09

This entry is part 15 of 107 in the series 100 Days of Keto Chow

I’m still going well on the “just eating Keto Chow” – Oh Hello Bakery brought by some of their stuff yesterday, they feel bad “tempting” me with it – meh; I’m a big boy, I can handle it! This morning I mixed up a couple test batches of the Spicy Taco flavored stuff I’m experimenting with, we’ll see which flavor concentration tastes the best. Yesterday’s test of the Creamy Tomato Basil went really well, the consensus was the one with more flavoring was better – the only problem is it uses 33% more flavoring which will increase the price accordingly. I did get detailed nutritional information on the ingredients I’m playing around with and each meal of the Tomato Basil should have 0.96g of net carbs – that’s actually far better than I had anticipated, adding heavy cream adds another 2-4g, using butter or bacon fat should add virtually no additional carbs.

Today we’re going to be doing our blind taste test, REALLY looking forward to it! It took quite a long time last night to mix up all of the stuff. 4 different products in 2-liter pitchers, one in the bottles they come in.

Beverly’s Week 1

This entry is part 2 of 16 in the series 100 Days of Keto Chow - Beverly's Experience

Week 1 of my 100% Keto Chow challenge is now complete.  It has not been easy!  I really miss snacking the most.  A handful of almonds or a string cheese stick here or there sure sounds good to me.  When I feel the urge for a snack, consuming some table salt usually does the trick for a while.

But grocery shopping is a breeze!  All I needed to buy this week was heavy cream and avocado oil.  No thinking or meal planning required.  Soooo easy!

We have been busy with a flooring project in our living room after some ceramic tiles buckled a few weeks ago.  My amazing and hard-working husband did all of the difficult work but I did try to help a little bit.  Have you ever had a dust storm occur inside your home?  Let’s just say it is not fun but it has kept me occupied.  And we now have a beautiful wood floor in that room.

We went out to lunch with some family members on Sunday at a favorite local barbecue joint.  I drank a Diet Coke and totally enjoyed the opportunity to talk to a somewhat captive audience.  I think it can be more uncomfortable for the people around me than it is for me when they are eating and I am not!

The first couple of days this week, my calories were well over 1300 so the next time I made shakes, I used less heavy cream.  I almost always make three shakes at a time in my blender.  The first prep day, I used 8 oz per batch (810 calories).  The second prep day, I used 6.66 oz per batch (675 calories).  This lowered my calories enough so that adding heavy cream to my coffee no longer pushed my calorie count too high for the day.

Something else I did differently on the second prep day is I poured the blender contents holding three shakes into four bottles and added more water to each one so I would perhaps feel like I was getting to eat (drink) more food each day by eating four times instead of three.  I have mixed feelings on if that was successful or not.  I like my shakes thick rather than thin so maybe sometime I will pour the equivalent of three shakes into four bottles but not add more water to each one.  A challenge like this involves some experiments and small adjustments along the way.

My husband prefers avocado oil in his shakes plus he has different macros than mine.  So I end up taking notes every time I make shakes, and I often re-check my math before I start the prepping process, which is never a bad idea.  After our recent dust storm, I advised my husband that I would be adding some extra dust to his shakes for good measure.  ;)

While he is drinking mostly shakes himself, he does still have some small keto meals and snacks but usually when I am not around.  He admits that he really misses eating out with me but he supports my efforts and my focus on this project.

When I started out the week, we had only the Chocolate and Salted Caramel flavors in our pantry so it was exciting when an order containing the flavors Pumpkin Spice Caramel and Cookies and Cream arrived on Friday along with two more bags of Chocolate.  My husband and I both like the Chocolate flavor the best but we both also enjoy having something different once in a while!

My net carbs were a little high (in the 20s) all of this week because I was using Sweet’N Low sweetener packets in my coffee and tea (in case you don’t know, all those sweetener packets contain fillers and slight carbohydrates).  I have been aware of this for years but I was completely in denial about how many packets I was actually using each day!  Yesterday, I made the switch to liquid sucralose.  There will certainly be an adjustment phase as I get accustomed to the flavor difference and figure out how many drops I need to use but I am already pleased to see a lower net carbs total at the end of the day.

Have I lost weight this week?  Yes and no.  I dropped 5 pounds the first day, which was obviously water weight.  I went from 140 on January 1 to 135 on January 2.  The scales on January 8 again said 135.  Maybe the Ankerl calculator was right when it indicated 1300 is the maintenance point for me.  I am going to try for closer to 1200 calories per day in Week 2.

If you ever have questions or want to chat with other Keto Chow users, check out the Keto Chow sub on Reddit or the Facebook support group.

100 Days of Keto (Chow) Day 08

This entry is part 14 of 107 in the series 100 Days of Keto Chow

Went to the city offices for my first weigh in today. Got on the scale, it said I was down 9.0 lbs from last week, NICE! (that correlates to the 7.6 lb loss I’m showing on my own scale) The guy doing the weigh-in said: “wait, that’s not right…” Apparently, the lady who wrote down my weight last week messed up and wrote down the wrong weight. The guy was wondering how on earth I had GAINED 30 lbs in a week. I attribute it to the severed limb I had reattached (not actually) on Friday. Anyway, he fixed it.

We did our weekly Facebook LIVE yesterday, we weren’t even late! You should watch it. I’ll wait.

Just before I left work yesterday I was able to mix up a batch of the test Beef-based Savory Keto Chow so I could do some more flavor testing. This morning I have two different variants of the Tomato Basil Soup mixed up. I’m testing the flavoring concentration to see if we need more or less of the flavoring and/or the powdered tomato concentrate. Mixing it up this morning went really well. I cannot recommend ENOUGH how well it works to mix up hot Keto Chow in a HydroFlask, especially compared to how difficult it is in a Blender Bottle. I should probably do a video about that…
